Steps:

  • Spread 12 slices white and/or pumpernickel bread with mayonnaise. Top half of the bread with sliced tomato and cucumber or avocado. Season with salt and pepper and cover with the remaining bread. Trim off the crusts and slice the sandwiches in half. Pack in an airtight container or wrap in plastic wrap.

2 tablespoons ricotta
2 slices whole-grain bread, toasted
3 slices tomato
3 slices peach
2 slices red onion
Sea salt
Extra-virgin olive oil
Fresh basil

TOMATO AND PEACH SOUP



Tomato and Peach Soup image

Number Of Ingredients 12

2 tablespoons grapeseed oil
1/3 cup diced celery
1/3 cup diced shallots
1/ 4 cup apple juice
1/4 cup tomato juice
8 vine-ripe tomatoes, roughly chopped
1 (15-ounce) can peaches, drained or fresh peaches, peeled and chopped
1 teaspoon salt
1/4 cup vanilla yogurt
2 tablespoons honey
2 tablespoons butter, room temperature
6 leaves each mint and basil leaves, thinly sliced, for garnish

Steps:

  • In saucepot, over medium-high heat, add the grapeseed oil, celery and shallots, and saute until the shallots are translucent. Reduce the heat to medium, then add the apple juice and tomato juice. Bring to a boil, then lower the heat to a simmer. Add the tomatoes and cook for 25 to 30 minutes. Remove the pot from the stove and add the peaches. Puree the mixture with an immersion blender, or cool for 5 minutes and add it to a food processor. Return the pot to the stove over low heat, then add the salt, yogurt and honey and cook for 10 minutes. Remove from heat and whisk in the butter. Portion the soup into bowls and garnish with basil and mint.
  • Serving options: Sour cream or creme fraiche make a great garnish for this soup.

MINTED PEACH AND TOMATO SALAD



Minted Peach and Tomato Salad image

This salad was inspired by the goodness of these two fruits, both at their peak in late summer.

3 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 large peaches, (about 1 1/2 pound)
3 large red tomatoes, (about 2 pounds)
3 large yellow tomatoes, (about 2 pounds)
1 1/2 cups cherry tomatoes, (about 10 ounces)
2 small inner celery stalks, peeled to remove strings and cut into 1/4-inch pieces
1/4 cups fresh mint leaves, plus sprigs for garnish

Steps:

  • Whisk together olive oil, vinegar, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a small bowl; set vinaigrette aside.
  • Halve and pit peaches. Cut halves into quarters. Remove core from stem end of large tomatoes; slice into 1/2-inch rounds.
  • Arrange peaches, tomatoes, cherry tomatoes, and celery on a serving plate. Sprinkle with remaining 1/4 teaspoon salt and pepper. Coarsely chop mint leaves; add to vinaigrette. Pour over salad, and garnish with mint sprigs.
