½ (12 ounce) package uncooked lasagna noodles
1 (12 ounce) package firm tofu, crumbled
2 eggs
¼ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon ground nutmeg
2 tablespoons milk
1 cup spaghetti sauce
1 tablespoon dried parsley
2 cups shredded mozzarella cheese, divided
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add lasagna and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium bowl combine tofu, eggs, salt, pepper, nutmeg, milk, spaghetti sauce, parsley and 1 cup of mozzarella cheese. Spread a layer in the bottom of a 9x13 inch baking dish.
  • Layer lasagna noodles with the sauce mixture, ending with sauce. Sprinkle with remaining mozzarella and Parmesan cheese.
  • Bake in preheated oven for 25 to 35 minutes.

9 lasagna noodles
1 medium onion, chopped
3 garlic cloves, minced
1 tablespoon olive oil
2 cups sliced fresh mushrooms
1 package (14 ounces) firm tofu
1 carton (15 ounces) part-skim ricotta cheese
1/2 cup minced fresh parsley
1 teaspoon salt, divided
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1-3/4 cups marinara or meatless spaghetti sauce
1 cup shredded part-skim mozzarella cheese
1/3 cup shredded Parmesan cheese

Steps:

  • Cook noodles according to package directions. Meanwhile, Preheat oven to 350°. In a large nonstick skillet, saute onion and garlic in oil for 1 minute. Add mushrooms; saute until tender. Set aside., Drain tofu, reserving 2 tablespoons liquid. Place tofu and reserved liquid in a food processor; cover and process until blended. Add ricotta cheese; cover and process for 1-2 minutes or until smooth. Transfer to a large bowl; stir in the parsley, 1/2 teaspoon salt and mushroom mixture. Combine spinach and remaining salt; set aside., Drain noodles. Spread half of the marinara sauce into a 13x9-in. baking dish coated with cooking spray. Layer with three noodles, half of the tofu mixture and half of the spinach mixture. Repeat layers of noodles, tofu and spinach. Top with remaining noodles and marinara sauce. Sprinkle with cheeses. , Bake, uncovered, until heated through and cheese is melted, 30-35 minutes. Let stand for 10 minutes before cutting.

1 (12 ounce) package fresh mushrooms, sliced
1 onion, chopped
1 (28 ounce) can tomato sauce
1 (28 ounce) can diced tomatoes
1 tablespoon Italian seasoning
1 (8 ounce) package whole wheat lasagna noodles, dry
1 (16 ounce) package frozen chopped spinach, thawed and drained
1 (16 ounce) package soft tofu
1 (16 ounce) package firm tofu
¼ cup unsweetened almond milk
¼ cup lemon juice, or to taste
½ teaspoon garlic powder

Steps:

  • Heat a skillet over medium-high heat. Saute mushrooms and onion until soft. Add tomato sauce, diced tomatoes, and Italian seasoning. Let simmer until sauce is thickened and flavors blend, at least 1 hour.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes. Drain.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Squeeze as much water out of the spinach as possible.
  • Place soft tofu, firm tofu, almond milk, lemon juice, and garlic powder in a blender or food processor. Blend into a ricotta-like consistency. Transfer to a large bowl and stir in spinach.
  • Cover the bottom of a 9x13-inch baking pan with a thin layer of sauce, topped with a layer of lasagna noodles and 1/2 the tofu mixture. Repeat with remaining sauce, noodles, and tofu, ending with a layer of noodles and some sauce on top. Cover with aluminum foil.
  • Bake in the preheated oven until top of lasagna is hot and bubbly, 40 to 50 minutes.

EASY TOFU LASAGNA

This recipe came from a desire to use less meat and heathier alternatives in our family's food. My family loves it! We've even served it to others who are dead-set against eating anything with tofu in it and they praised it (before knowing about the tofu) and were pleasantly surprised. I hope this works as well for you as it did for me! Excellent as leftovers (better in my opinion). (P.S. I usually use the Low Fat versions of these foods, but never the fat free - it loses too much taste that way).

1 (16 ounce) box lasagna noodles, cooked &,drained
1 (12 ounce) package firm tofu, drained &,rinsed

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl crumble in the drained and rinsed Hard Tofu.
  • Add 12 oz of the Shredded Mozzarella, Ricotta Cheese, and spices (also, try portabello mushrooms, cooked diced chicken, spinach, broccoli, etc for added flavor).
  • Fold together everything in the bowl with a large spoon- Set aside.
  • In a 9" x 13" pan, spoon a layer of spaghetti sauce (using a flavored sauce- like mushroom- would save you from adding mushrooms separately).
  • Then add a layer of lasagne noodles (Because the noodles are usually not long enough for this pan, I usually rip one noodle in half to use vertically and then 3 horizontally, like an elongated"E").
  • Spoon on a layer of filling, then a layer of sauce, then a layer of noodles (this time a backwards"E").
  • Continue layering like this until you run out of ingredients (even throwing some extra filling or sauce on top is fine).
  • Top with remaining 4 oz mozzarella and some parsley.
  • Cook for 45 min to 1 hr, or until hot and bubbly.
  • Cut in squares.

1 1/2 cups water
2 bay leaves
1 tablespoon dried oregano leaves, crushed

32 ounces cottage cheese or 32 ounces ricotta cheese

Steps:

  • Preheat oven to 350°F.
  • Bring spaghetti sauce and water to a boil; add next 5 seasonings if desired, and reduce heat to a simmer (sauce should still be a little runny when lasagna is assembled; the uncooked noodles will soak up the extra moisture).
  • While sauce is simmering, combine tofu, mozzarella, cottage cheese and parsely in a large mixing bowl and stir.
  • Assemble the lasagna as follows: (1) spray the bottom of two 13"x9"x2" casserole pans with PAM and spoon in just enough sauce to cover the bottom (2) Place a layer of noodles on top of the sauce (3) spread 1/4 of the cheese mixture evenly over the noodles in each pan (4) sprinkle 1/4 of the spinach over the cheese (5) pour 1/4 of the sauce evenly over the top.
  • Repeat layers ending with sauce, and top with parmesan cheese.
  • Cover tightly with aluminum foil, and bake at 350F for 1 hour.

4 pounds cherry tomatoes, quartered
1 teaspoon coarse salt
1 cup thinly sliced fresh basil
10 ounces brown-rice lasagna noodles
Vegetable-oil cooking spray
6 garlic cloves, minced
1 pound baby spinach, coarsely chopped
2 tablespoons coarsely chopped fresh flat-leaf parsley
2 tablespoons pine nuts, toasted
8 ounces extra-firm tofu, drained, pressed between paper towels about 1 minute, and cut into 1-inch cubes
8 ounces nonfat small-curd cottage cheese
1/4 teaspoon freshly ground pepper
1 ounce Parmesan cheese, finely grated

Steps:

  • Preheat oven to 350 degrees. Make the sauce: Put tomatoes, 3 tablespoons water, and 1/2 teaspoon salt into a large pot. Bring to a boil; reduce heat, and simmer, stirring occasionally, until tomatoes break down and sauce thickens, about 1 hour. Remove from heat. Stir in basil. Let cool.
  • Bring a large pot of water to a boil. Add pasta; cook until barely tender, about 10 minutes. Drain; rinse. Lay pasta on a clean kitchen towel; loosely cover with plastic wrap, and set aside.
  • Heat a large saute pan over medium heat. Coat with cooking spray. Add garlic; cook, stirring occasionally, until softened, about 3 minutes. Add spinach and remaining 1/2 teaspoon salt; cook until wilted, about 2 minutes. Drain; squeeze out any excess liquid. Transfer to a bowl. Stir in parsley. Let cool completely. Meanwhile, pulse pine nuts in a food processor until finely ground. Add tofu, cottage cheese, and pepper; puree.
  • Coat an 8-inch square baking dish with cooking spray. Cover bottom with a layer of pasta. Top with 1 1/4 cups sauce, 1 1/4 cups spinach mixture, and 3/4 cup tofu mixture, spreading each layer evenly. Repeat. Top with a layer of pasta; spread with remaining sauce. Sprinkle with Parmesan. Bake until heated through and Parmesan turns golden brown, 35 to 40 minutes. Let cool 10 minutes.

1/4 cup water
1/4 cup green pepper, diced
1/2 cup onion, diced
1 cup fresh mushrooms, chopped
3 garlic cloves, crushed
2 bay leaves
1 teaspoon basil
1 teaspoon oregano
1 (16 ounce) can tomato sauce
1 (8 ounce) can tomato paste
3/4 cup water
1 lb medium firm tofu
2 bunches fresh spinach (or 10-oz. package frozen spinach)
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon sage

Steps:

  • To prepare sauce, in large saucepan, combine 1/4 cup water, green pepper, onion and garlic.
  • Heat over medium-low heat and simmer until soft, stirring frequently.
  • Add mushrooms and cook for 2 minutes.
  • Stir in bay leaves, basil, oregano, tomato sauce, tomato paste and water.
  • Simmer for 15 minutes to combine flavours, then remove bay leaves.
  • To prepare filling, rinse fresh spinach in cold water.
  • Cut off thick stems.
  • Place in large stockpot.
  • Heat covered over high heat, stirring frequently until spinach is soft.
  • Drain spinach and squeeze out excess liquid and set aside.
  • Drain tofu slightly (don't squeeze out excess water). Place in blender container or food processor. Blend until smooth, stopping to scrape sides of container frequently. Spoon blended tofu into mixing bowl. Add spinach, oregano, basil and oregano and mix well.
  • To assemble, spread 1 cup sauce over bottom of 9x13-inch pan.
  • Top with 1/3 of the uncooked noodles, then 1 more cup of sauce.
  • Spoon the tofu mixture by dollops over top of sauce.
  • Add a second layer of noodles, followed by 1 cup sauce, and then spooning in the remaining tofu mixture.
  • Add a third layer of noodles, pressing down firmly all over the lasagna. Spoon the remaining sauce over noodles, making sure that the noodles are completely covered with sauce. If preparing to freeze for eating later: wrap, label and freeze.
  • To serve: If frozen ahead, thaw completely. Preheat oven to 350°F Bake covered for 40 minutes. Uncover lasagna and continue baking 15 more minutes. Let stand 10 minutes before serving. Cut into squares to serve.

1/2 lb ground turkey or 1/2 lb turkey sausage, crumbled
1 (28 ounce) jar spaghetti sauce (your favorite)
1/4 cup red wine (optional)
2 garlic cloves, minced
1 small onion, chopped fine
1 medium zucchini, shredded
3 cups spinach, chopped
8 ounces mushrooms, chopped
1 package firm garlic and onion tofu, drained, sliced very thin
8 ounces part-skim ricotta cheese
1 egg
6 ounces mozzarella cheese

Steps:

  • Brown ground beef or sausage.
  • Add jarred sauce and wine to the meat.
  • Simmer for 5 minutes.
  • In separate skillet, saute garlic, onions and rest of veggies in olive oil until soft but not browned.
  • Remove from heat.
  • Let cool.
  • In bowl mix together ricotta cheese and beaten egg.
  • Stir in veggie mixture.
  • Add enough sauce on bottom of 8x10 pan to just cover.
  • Add a layer of tofu slices followed by a layer of veggie mixture and a layer of sauce.
  • Repeat until you are out of tofu slices.
  • Sprinkle top with mozzarella cheese.
  • Bake covered at 350�°F for 30-40 minutes.

3/4 cup extra-virgin olive oil
6 strips lemon zest (1 by 4 inches), plus 1/3 cup fresh lemon juice (from 1 or 2 lemons)
3 garlic cloves, crushed
Coarse salt and freshly ground pepper
1/2 cup pine nuts, toasted
1 small garlic clove
2 cups fresh basil
1/2 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
1 package (14 ounces) extra-firm tofu, sliced lengthwise 1 inch thick
5 or 6 zucchini and yellow summer squashes (about 2 1/2 pounds), trimmed and sliced lengthwise about 1/4 inch thick
Extra-virgin olive oil, for brushing
Coarse salt and freshly ground pepper
2 medium tomatoes, sliced 1/4 inch thick
18 large basil leaves

Steps:

  • Make the marinade: Heat oil, lemon zest, and garlic in a small saucepan until bubbling around the edges. Remove from heat, and let cool completely. Stir in lemon juice. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Make the pesto: Puree pine nuts and garlic in a food processor until a paste forms. Add basil, and pulse to combine. With machine running, pour in oil through feed tube until pureed. Season with salt and pepper.
  • Heat grill to medium. Assemble the "lasagna": Arrange tofu on a double layer of paper towels. Cover with another double layer of paper towels, then cover with a baking sheet. (Weigh it down with 2 cans or something else equally heavy.) Let stand for 20 minutes.
  • Meanwhile, brush zucchini and squash slices with oil, and season with 2 teaspoons salt and 1/4 teaspoon pepper. Grill, flipping occasionally, until softened and slightly charred, about 8 minutes. Remove from grill. Whisk marinade, and drizzle half of it generously over zucchini and squash slices.
  • Repeat with tofu and remaining marinade, flipping occasionally, until nicely charred, about 3 minutes. Let cool slightly. Slice tofu horizontally into 1/8-inch-thick sheets (they will be layered, so don't worry if they fall apart).
  • Lay 3 slices each of zucchini and squash on a platter to form a 6 1/2-by-8-inch rectangle. Spread 3 tablespoons pesto over tops. Cover with a layer of tofu, and season with salt and pepper. Top with a layer of tomatoes, and season with salt and pepper. Top with 6 large basil leaves. Repeat layering twice (zucchini and squash, pesto, tofu, tomatoes, basil). Serve cold or at room temperature.

HERBED TOFU LASAGNA WITH ZUCCHINI

In this recipe, herbs and seasonings are added to tofu and mixed until creamy, and is used in place of ricotta cheese. It is important that you use the best marinara sauce you can find, and then drizzle each serving with the extra virgin olive oil. From VT April 2006.

1/2 cup fresh basil, chopped
1/3 cup fresh Italian parsley, chopped
1/3 cup pine nuts
2 garlic cloves, peeled
2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon red pepper flakes
1/4 teaspoon sugar
1 tablespoon olive oil
4 medium zucchini, cut into 1/2 inch slices (about 3 cups)
5 cups marinara sauce (the best you can find)
16 no-boil lasagna noodles
extra virgin olive oil (for drizzling on each serving)

Steps:

  • Preheat oven to 350°F; coat a 13x9-inch baking dish with cooking spray.
  • Toast pine nuts: Place them in a dry skillet over medium heat. Cook, stirring constantly until golden (about 3 minutes).
  • In food processor, combine tofu, basil, parsley, toasted pine nuts, garlic, lemon juice, salt, red pepper flakes, and sugar. Blend until smooth and similar in texture to ricotta cheese.
  • In large non-stick skillet, heat oil and sauté the zucchini on medium-high heat just until they're tender (about 3 -5 minutes).
  • Spread 3 tablespoons of the marinara sauce on the bottom of the prepared baking dish. Cover with a layer of noodles, overlapping them slightly.
  • Layer as follows:.
  • 1/2 of the tofu mixture.
  • 1/2 of the zucchini mixture.
  • Layer of noodles.
  • Remaining tofu.

This is a yummy vegetarian, lo-carb, lo-cal dish! It is really great for freezing in individual portions to take to work for lunch. I got the original recipe from CeeCee526 on Recipezaar but I've made a number of changes -- so I'm posting it as my own. Hope you Enjoy!!

14 ounces extra firm tofu (press out liquid & slice very thinly)
1/2 cup textured vegetable protein (texturized vegetable protein)
1/2 cup vegetable broth (from boullion)
1 teaspoon fennel
1 jar pasta sauce (I use Prego mushroom)
2 tablespoons olive oil
10 ounces frozen chopped spinach, thawed
8 ounces mushrooms, sliced
1/4 teaspoon Molly McButter (approx 2 shakes) (optional)
1/4 teaspoon garlic granules
1/2 teaspoon dried parsley flakes
8 ounces fat-free cottage cheese
1/4 cup egg substitute
8 ounces mozzarella cheese, grated
dried chipotle powder (McCormick Brand) (optional)
salt & pepper

Steps:

  • Press tofu under heavy weight for approx.
  • 1 hour to remove the liquid-- will make thinly slicing much easier.
  • Reconstitute TVP w/ hot vege broth-- let stand for 3-5 minutes then saute in olive oil in sauce pan to lightly brown.
  • Add jar sauce to TVP and add fennel (for a hint of sausage flavoring).
  • In seperate pan, saute spinach& mushrooms in oil-- add garlic, parsley, Molly McButter& salt/pepper.
  • In a food processor, puree cottage cheese w/ egg substitute.
  • Add sauted vegetables& process just to combine.
  • Slice tofu thinly for use as"lasagna noodles".
  • Start w/ a layer of sauce on the bottom of a 9x13 pan.

1/2 package (12 ounce) lasagna noodles, uncooked
1 package (12 ounce) firm tofu, crumbled
1 recipe - 2 eggs
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
2 tablespoons milk
1 cup spaghetti sauce
1 tablespoon dried parsley
2 cups (divided) mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add lasagna and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium bowl combine tofu, eggs, salt, pepper, nutmeg, milk, spaghetti sauce, parsley and 1 cup of mozzarella cheese. Spread a layer in the bottom of a 9x13 inch baking dish.
  • Layer lasagna noodles with the sauce mixture, ending with sauce. Sprinkle with remaining mozzarella and Parmesan cheese.
  • Bake in preheated oven for 25 to 35 minutes.

2 1/2 tablespoons olive oil
2 onions, thinly sliced
6 garlic cloves, minced
2 tablespoons fresh basil, chopped
1 teaspoon sea salt
1/2 teaspoon fresh black pepper
3 medium carrots, peeled and shredded
2 zucchini, shredded
1 head broccoli, stems removed and florets finely chopped
2 cups ricotta cheese, Tofu
12 lasagna noodles
3 cups tomato sauce
to make tofu ricotta cheese
1 lb extra firm tofu
2 teaspoons lemon juice
1 garlic clove
1/4 teaspoon salt
ground black pepper
10 fresh basil leaves, chopped finely
2 teaspoons olive oil
1/4 cup nutritional yeast

Steps:

  • Preheat oven to 350 degrees.
  • Heat 1 tablespoon of the oil in a large, heavy frying pan over medium high heat. Add the onion, garlic, basil, salt and pepper. Saute until the onions are tender, about 10 minutes. Add the carrots, zucchini, and broccoli and saute until the carrots are crisp-tender, about 10 minutes. Let cool completely. Mix the vegetable mixture into the tofu ricotta cheese.
  • Cook the noodles in a large pot of boiling salted water, stirring often until tender, about 10 minutes. Drain and rinse the noodles, then toss with 1 tablespoon of the remaining oil to prevent noodles from sticking together.
  • Coat a 13x9x2 inch baking dish with the remaining 1 1/2 teaspoon of oil. Spread 1 cup of the tomato sauce on the bottom of the dish. Using a spatula, spread about 1/2 cup of the vegetable mixture over each lasagna sheet, leaving about 1/2 inch of each end uncovered.
  • Roll up each sheet tightly and place it seam side down in the baking dish. Pour the remaining 2 cups of sauce over the rolls.
  • Cover the dish with foil. Bake until the sauce bubbles, about 55 minutes. Remove the foil and continue baking for 15 minutes.
  • To make Ricotta.
  • In a large bowl, mush the tofu up with your hands until it is crumbly.
  • add lemon juice, garlic, salt, pepper, basil mush with hands again until reach consistency of ricotta cheese, 2 - 5 minutes.

9 pieces whole-wheat lasagna, uncooked
16 oz pkg ground turkey
2 14 oz pkgs lite firm tofu
1 10 oz package fresh spinach
50 oz (2 jars) pasta sauce of your choice or equivalent amount homemade (I like Paul Newman's Sockerooni and Whole Foods 365 Roasted Vegetable)
6 oz cheese- parmesan, asiago, manchego, or romano
6 tbsp olive oil, divided
Equipment:
9x13 pyrex baking dish
medium-large pot to cook lasagna
medium glass, ceramic or metal bowl
medium-large skillet
small-medium wok or saucepan with lid
fresh basil
salt, black pepper, and oregano to taste

Steps:

  • Preheat oven to 400 degrees. Spread a thin layer of pasta sauce on the bottom of a 9x13 pyrex baking dish. Cook lasagna pasta according to directions on box. When cooked, drain, rinse with cold water, and lay on paper towels or dishtowels. While pasta is cooking, heat 2 tbsp olive oil in a skillet. Cook ground turkey in skillet until brown, then add pasta sauce. In medium sized bowl, mash tofu with hands or potato masher until crumbly. Steam spinach in wok or saucepan in half a cup of water until wilted. Drain. Wrap spinach in paper towels, run under cold water and wring out excess moisture. Add spinach to tofu. Add 4 tbsp olive oil, 1 cup grated cheese, 1/4 cup shredded basil, and salt and pepper to taste. Put aside. Place first layer (1/3) of lasagna in baking dish. Cover with layer of tofu mixture, layer of meat sauce, and layer of shredded cheese. Cover with second layer lasagna, tofu mixture, meat sauce, and cheese. Add third layer of each, finishing with a generous amount of grated cheese and sprinkled oregano. Bake for 45 minutes, let cool ten minutes. Serve immediately.

Lasagna noodles, cooked according to package directions
2 cups red sauce
1 12.3 oz block of extra-firm tofu
1 cup ricotta, part-skim works great
1/2-1 teaspoon garlic powder
1 teaspoon Italian seasoning
2-3 grinds black pepper
1/4-1/2 teaspoon Kosher salt
1 egg
2 Tablespoons milk, can be any fat content
2 cups mozzarella, part-skim works great
1 zucchini
3 carrots
1 red pepper
2 shallots
1/4 lbs mushrooms
1/8-1/4 cup olive oil
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees. Slice the zucchini, carrots, red pepper, shallots, and mushrooms into bite sized pieces and place them in a bowl. Use enough olive oil to lightly coat the vegetables with the oil and sprinkle the salt while stirring. Roast these in the oven until they crisp and are starting to caramelize, about 20-30 minutes. Set aside to let cool. While the veggies are cooking, in a medium bowl, use a spoon to break up the tofu and then add the ricotta. Stir vigorously until well blended. Add the Italian seasoning and 1/2 teaspoon of the garlic powder. Taste the mixture and add the rest of the garlic if you feel it needs it. Also determine if it needs more salt (this depends on how salty the ricotta is). Add the pepper. Taste again, this is the last time you will be able to taste it until it is done, so make sure you like the flavoring combination. Add the egg and milk and stir until all is well blended. Spoon 1/2 cup of the red sauce into the pan and spread it into an even layer. Cover the sauce with a layer of noodles. Spread half of the tofu-ricotta mixture on the layer of noodles, then top with another layer of noodles. Spread half of the vegetables and 3/4 cup of sauce on the noodles and top with half of the cheese. Repeat with noodles, the rest of the tofu-ricotta, the rest of the noodles, the rest of the sauce and vegetables, and then the rest of the cheese. Bake, covered with foil, for 25-30 minutes or until it is bubbling on the sides. Remove the foil and bake until the top is browned, about 20 minutes. Allow to cool for 5 minutes so that it is no longer lasagna-lava.

1 (8 ounce) package lasagna noodles
1/4 cup butter
1/2 lb fresh mushrooms, thinly sliced
3 garlic cloves, finely chopped
1/2 teaspoon salt
1/8 teaspoon pepper
3 cups spaghetti sauce
1/2 cup wheat germ
1 cup tofu, mashed
1/4 cup parmesan cheese, grated
1/2 lb mozzarella cheese, grated
1/4 cup fresh parsley, chopped

Steps:

  • Cook and drain lasagne noodles; set aside.
  • Melt butter in large skillet. Add mushrooms, garlic salt and pepper. Cook until mushrooms are tender.
  • Stir in sauce and wheat germ; heat through.
  • Combine tofu and Parmesan cheese in a bowl.
  • Combine mozzarella and parsley in another bowl.
  • In a 9x12-inch pan, layer half of each of the ingredients: noodles, tofu mixture, sauce and mozzarella mixture. Repeat. Bake at 350°F for 45 minutes or until hot and bubbly.
  • Let stand for 15 minutes before cutting.
