2 apples
1 tbsp lemon juice
2 1/4 C all-purpose flour
2 tsp baking powder
1 1/2 tsp ground cinnamon
heaping 1/4 C light brown sugar
4 tbsp butter, plus extra for greasing
1/2 C milk
1/2 C apple juice
1 egg. beaten
TOFFEE TOPPING
2 tbsp light cream
3 tbsp light brown sugar
1 tbsp butter

Steps:

  • 1. preheat oven to 400* & grease 12-cup muffin pan 2. core & coarsely grate one apple. slice remaining apple into 1/4 in thick wedges & toss in lemon juice. 3. sift together the flour, baking powder, & cinnamon, then stir in sugar and grated apple. 4. melt butter and mix with milk, apple juice & beaten egg. stir the liquid mix into the dry ingredients, mixing lightly until just combined. 5. Spoon batter into each muffin cup 3/4 full, then add the sliced apple on top 6. bake in oven for 20-25 mins, or until risen, firm & golden brown. 7. TOFFEE TOPPING - place all ingredients in a small pan & heat, stirring, until the sugar dissolves. Increase heat & boil rapidly for 2 mins or until slightly thickened & syrupy. Cool slightly, then drizzle over the cakes and let set.

These are yummy both hot and cold. Perfect for this time of year. You could always make your own applesauce and fudge to use in these for the true 100% home baked taste

275 g plain flour
100 g caster sugar
1 tablespoon baking powder
75 g margarine
2 medium eggs
125 ml full-fat milk
280 g bramley applesauce
100 g butter fudge, chopped

Steps:

  • Preheat the oven to 200°C/180°C Fan/Gas 6. Line a 12-hole muffin tin with paper muffin cases. In a large mixing bowl sift in the flour, sugar and baking powder.
  • Beat the spread and eggs together, then add the milk and apple sauce and beat again. Stir this mixture into the flour along with the fudge, until just incorporated. Don't over-stir - it's fine if the mixture is a little lumpy.
  • Put into the muffin cases and bake for 20 to 25 minutes. Cool on a wire rack and serve.
  • I use the Extra Special All Butter Fudge from Asdas, but I'm sure any butter fudge would be fine.
