Easy, quick panini sandwich with that restaurant taste, but made using just a grill pan. Feel free to use any meats or cheeses you have on hand. Works great with anything!

1 teaspoon mayonnaise, or to taste
2 (1 inch thick) slices Italian bread
3 slices deli ham
2 slices provolone cheese
1 slice roasted red bell pepper

Steps:

  • Spread mayonnaise on one side of each bread slice. Layer ham, provolone cheese, and roasted red bell pepper on the bread; top sandwich with the other bread slice, mayonnaise side down.
  • Heat grill pan over medium heat; place sandwich in the pan and top with another heavy pan. Add 2 heavy cans on top; press down on cans to compress the sandwich. Reduce heat to medium; cook for 3 to 4 minutes. Flip sandwich, replace the pan and cans; cook until cheese is melted, 3 to 4 minutes more.

I didn't know what to call this, I made it up for lunch today as I was bored. The thing it reminded me of most was a toasted sandwich. it is easily adapted to wheat/gluten free. pure comfort food

Number Of Ingredients 6

1 English muffin (gluten free can be used)
1 slice dairylea cheese
200 g baked beans
1 tablespoon grated parmesan cheese (about)
1/4 cup mature cheddar cheese, grated
1 -2 slice thick ham

Steps:

  • Cut muffin in half, toast and butter if you feel necessary (I didn't).
  • Heat the baked beans gently.
  • Place the muffin halves in a oven-proof dish it will cover the base of.
  • Place a Dairylea slice on the muffin, then the ham.
  • Top with baked beans.
  • Sprinkle with parmesan then cheddar.
  • Heat for about 10 minutes or until cheese is melted.
  • NOTE: I added breadcrumbs but felt that they took too long to brown, it does add a bit of crunch though if you want to add to the topping.

Puff Pastry Toasted Sandwiches in Your Sandwich Maker! image

My Zaar friend Kooka suggested making a toasted sandwich without the toast ! I got curious, played around with her idea and et Voila! she told me to post the recipe. Ok, healthy.. not really... yummy... sure is! Puff pastry here in the Netherlands is a pest to use in regular large pies becuase it comes in a box of 10 small individual squares. think jig-saw pieces then you want to make a large pie, and it usually takes me less time to make and roll my own... but my small ready made squares are PERFECT for this recipe.. if you are lucky enough to be able to buy ready made puff pastry in one big piece you will need to cut it up to fit. COMFORT FOOD... the fillings are as endless as peoples' personal taste.. but things that cook quick, yes? I used three Knackworstjes but the Zaar database doesn't recognise those so Smokies (mini knackworstjes) are the closest description I can get. 1 sheet puff pastry (ready made)
50 g grated cheese (1.5 oz)
25 g butter (3/4 oz)
5 smokies
spring onion (finely chopped)
chives (finely chopped)
1 egg (beaten)
tomatoes
ham
mashed potatoes
onion (minced)
salami

Steps:

  • Melt the butter and spread on the toasted sandwich maker inside top and bottom cooking plates.
  • Cut thawed pastry to the same size that the bread would usually be and place one piece on the bottom of the sandwich maker top with grated cheese and extra fillings of your choice. Top with another piece of pastry.
  • Repeat with the other side of the toasted sandwich maker to fill up the other side.
  • Close the sandwich maker to seal the pastry together and enclose the filling.
  • Cook until pastry is golden brown and cooked (about 10 minutes).
  • Trim off any uncooked pastry (I had a little bit but it was only a thin sliver).
