Number Of Ingredients 18

FILLING
2 lb lean ground beef
1 medium onion, chopped
2 clove garlic, minced
2 Tbsp cooking oil
2 can(s) green beans, drained
1 can(s) carrots, drained
1 can(s) corn, drained
2 jar(s) beef gravy
2 tsp horseradish
salt and pepper to taste
TOPPING
8 medium potatoes, peeled and cubed
8 oz pkg cream cheese, room temperature
1/2 stick butter
1/3 c evaporated milk, can use more if needed
2 egg whites
salt to taste

Steps:

  • 1. In a large skillet, brown beef, onion and garlic in 2 tablespoons oil. Drain. Return to skillet and mix in green beans, carrots, corn and horseradish. You can add any veggie of choice, great for adding leftover veggies as well. Add gravy, one jar at a time until thoroughly mixed through. I usually use one and nearly all of the second jar. Pour into a greased 11 in x 7 in baking pan.
  • 2. Cook the potatoes in boiling salted water until tender, drain. Mash with butter, cream cheese and enough evaporated milk to make potatoes smooth. Salt to taste.
  • 3. Beat egg whites until stiff peaks form. Fold gently into mash potatoes. Spoon over beef mixture.
  • 4. Bake, uncovered, at 425 degrees for 15 minutes. Reduce oven to 350 degrees and bake 20 minutes longer or until meat mixture is bubbly. Hope you enjoy.
