1 lb tofu
2 tablespoons soy sauce
2 tablespoons orange juice concentrate
1 tablespoon brown sugar
1/4 cup vegetable broth
2 tablespoons peanut butter
1/2 teaspoon brown sugar
1/4 teaspoon ground ginger
sliced scallion

Steps:

  • Cut tofu into eight ½ inch thick triangles.
  • Marinate for one hour in soy sauce, orange juice concentrate and brown sugar.
  • Grill or broil until browned.
  • Puree veggie broth, peanut buutter, brown sugar and ginger.
  • Sprinkle tofu with sliced scallions and serve with the peanut sauce.

This recipe is very easy to double, though you don't need quite double the marinade: About 1 1/2 times the marinade is perfect for four packages of tofu.

2 (14 ounce) packages extra-firm tofu, drained
½ cup sherry vinegar
½ cup low-sodium soy sauce
⅓ cup olive oil
1 teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon cayenne pepper
½ teaspoon dried marjoram or thyme
¼ teaspoon black pepper

Steps:

  • Wrap tofu in a clean dish towel and weight it with something heavy such as a large can; leave it to drain for 30 minutes.
  • Meanwhile, mix together remaining ingredients in a bowl.
  • Cut each piece of tofu crosswise into 6 thick slices and put it all in a baking dish. Pour marinade over tofu, turning to coat, and chill, covered, turning occasionally, at least 30 minutes or up to 48 hours. Longer is better, but shorter is totally fine.
  • Preheat a gas grill on high heat (450 degrees F to 650 degrees F) 10 minutes, then reduce heat to medium (325 degrees F to 375 degrees F)--or do whatever the equivalent is if you're using charcoal. Oil grate.
  • Transfer tofu from marinade (letting excess drip off and reserving marinade) to grill with a spatula. Cover grill and cook tofu, turning once, until well browned but before grill marks get black, 10 to 15 minutes total. Transfer tofu to a platter and cover with foil to keep warm.
  • Bring reserved marinade to a boil in a saucepan and boil until it reduces to about 1 cup, about 2 minutes. Pour over tofu and serve hot, warm, or at room temperature.

Adapted from the Afi Chef website. Posting for ZWT 4. This lacks the fruit that is common in a lot of Bobotie recipes and is the reason I was attracted to it in the first place. It has a nice light curry flavour and a hint of sweetness.

500 g beef, minced
2 eggs
2 slices white bread, stale with crusts removed
water
1 onion, thinly sliced
2 tablespoons cooking oil
2 tablespoons hot water
2 tablespoons sugar
2 tablespoons lemon juice
2 teaspoons curry powder
1/2 teaspoon ground cloves
1 teaspoon garlic, crushed
1 teaspoon turmeric
1/2 teaspoon salt
1 egg, lightly beaten
1/2 cup milk

Steps:

  • Pre heat oven to 160°C.
  • Soak bread in water for around 10 minutes, remove and squeeze excess water and tear into small pieces.
  • Add 2 eggs to a large bowl and whisk. Add mince and mix to combine. Set aside.
  • In a large frying pan, heat oil and fry onion until golden in colour.
  • Add onion mixture to mince along with crumbled bread, hot water, sugar, lemon juice, curry powder, cloves, garlic, turmeric and salt. Mix to combine all ingredients.
  • Spoon mixture into a greased, oven proof dish and cook in oven uncovered for 40 minutes, remove from oven.
  • Combine topping ingredients and pour over bobotie. Place back in oven and cook for another 10 minutes. Or until topping is set.

Got this low fat, tasty main vegetarian recipe from a grocery store in Los Angeles. Presentation is beautiful, and it tastes as good as it looks. Try to marinate the tofu for as long as you can. Prep time includes minimal marinade time.

2 packages firm tofu
2 texas star red grapefruits
3 navel oranges
4 teaspoons olive oil
3/4 teaspoon cayenne pepper
1/4 teaspoon salt, divided
1/2 red bell pepper, seeded and minced (about 1/2 cup)
1/4 red onion, minced (about 1/4 cup)
2 tablespoons fresh cilantro, minced and packed
1 bag florentine Baby Spinach, washed and dried when ready to cook
1/2 avocado, ripe but firm,diced just before cooking

Steps:

  • Drain the tofu packages and remove the tofu.
  • Slice the blocks horizontally so they are half their original height.
  • Cut the rectangles diagonally into 2 triangles each.
  • Set them on paper towels to drain while you prepare the marinade.
  • Halve one grapefruit and one orange and squeeze 1/2 cup of juice from each.
  • Stir in 1 Tbs of olive oil.
  • Dob the tops of the tofu with more paper towels.
  • Arrange the tofu in a single layer in a large dish.
  • Season with the cayenne pepper and 1/8 tsp salt.
  • Mix the marinade well and pour it over the tofu.
  • Cover with plastic wrap and allow to marinate over night or for at least several hours, turning once.
  • Make the salsa now if you have time.
  • Peel the remaining grapefruit and oranges.
  • Use a paring knife to remove the outer membrane.
  • Work over a bowl to catch the juices, and cut between the membranes to release the segments.
  • Repeat with the oranges.
  • Halve each fruit segment.
  • Add the diced bell pepper, red onion, and cilantro.
  • Season with remaining 1/8 tsp of salt.
  • Cover and refrigerate.
  • When you're ready to cook the tofu, heat a grill pan over high heat and add 1 tsp olive oil (or use a non-stick frying pan).
  • Add the tofu and marinade and cook about 3 minutes on each side, turning gently with tongs or a spatula.
  • Remove the tofu and add the spinach to the pan.
  • Stir it around briefly so it just wilts, about 1-2 minutes.
  • Arrange spinach in the center of 4 plates.
  • Lay 2 triangles of tofu on top.
  • Spoon grapefruit salsa around the tofu and garnish with fresh avocado chunks.

TERIYAKI GRILLED TOFU

I love tofu, but my family only likes a few of the tofu recipes I make. This is one they really enjoy, though. When the tofu is cooking, I try not to leave the grill as the tofu sometimes can go from lightly charred to being overcooked and dark in a few minutes. I have included the time for marinating the tofu in the preparation time.

16 ounces extra firm tofu
1/2 cup teriyaki sauce
2 tablespoons honey
1 teaspoon sesame oil
2 garlic cloves, minced
1 -2 teaspoon gingerroot, peeled and grated, to taste
salt and pepper, to taste
2 -3 green onions, thinly sliced
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • Coat grill rack throughly with nonstick cooking spray. Preheat grill to medium (300° to 350 ° F). Cut tofu into slices 1/2-inch thick. Place slices in a single layer in a shallow glass dish.
  • In a small bowl combine teriyaki sauce, honey, oil, garlic, ginger, and salt and pepper to taste. Pour teriyaki mixture over tofu and cover with plastic wrap. Refrigerate at least 30 minutes.
  • After removing the tofu from the marinade, place the leftover marinade into a sauce pan. Cook over high heat until boiling. Boil marinade until reduced and slightly thick. Turn down heat to very low and start grilling the tofu.
  • Grill tofu 5-6 minutes per side, turning gently, until lightly charred and heated through, being careful not to let tofu overcook. Remove from grill. Drizzle reduced marinade over grilled tofu. Sprinkle with green onions and (if desired) red pepper flakes. Serve at once.

250 g raw prawns, roughly chopped
4 spring onions, finely sliced
1 tablespoon grated ginger
2 tablespoons sliced water chestnuts, drained and chopped
3 teaspoons cornflour
2 teaspoons sesame oil
1 teaspoon soy sauce
1/2 teaspoon caster sugar
salt and pepper, to taste
30 wonton wrappers
sesame oil, extra, for glazing

Steps:

  • Mix the prawn meat, sprig onions, ginger and water chestnuts in a bowl. Put the corn-flour, sesame oil, soy sauce, sugar, salt and pepper in another bowl; blend to a smooth paste, then stir into the prawn mixture.
  • Work with one dough round at a time and keep the rest covered. Hold a dough circle in the palm of your hand (this will keep the pastry warm) and put a rounded teaspoon of filling in the centre. Bring up two sides to meet and press the edges to seal. Press the gow gee firmly down on the bench to make a flat base and twist both sides down to form a crescent. Brush very lightly with sesame oil. Place on an oiled baking tray.
  • Line the base of a bamboo or metal steamer with a circle of baking paper. Arrange the gow gees on the paper, spacing them well apart. (They may need to be cooked in batches.) Cover the steamer and cook over a pan of simmering water for about 8 minutes or until the dough is slightly puffy and translucent. Serve immediately with sesame oil mixed with soy sauce, if desired.
