Basting Sauce
1/2 cup (1 stick) butter, diced
1/3 cup chopped shallots
1/4 cup olive oil
3 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh thyme
1 tablespoon grated lemon peel
Vegetables
2 large ears fresh corn, husked, each cut crosswise into 4 pieces
1 small eggplant (about 1 pound), cut crosswise into 1/2-inch-thick rounds
1 large red onion, cut into 3/4-inch-thick wedges
1 large red bell pepper, seeded, cut lengthwise into 6 strips
1 large yellow or green bell pepper, seeded, cut lengthwise into 6 strips
1 large zucchini, trimmed, quartered lengthwise
8 asparagus spears, trimmed
1 large carrot, peeled, cut on deep diagonal into 1/4-inch-thick slices

Steps:

  • Combine all ingredients in heavy medium saucepan. Whisk over medium heat until butter melts and sauce is well blended. Season to taste with salt and pepper. (Can be made 3 hours ahead. Cool. Whisk over low heat to rewarm before using.)
  • Arrange corn pieces, eggplant rounds and onion wedges in single layer on large baking sheet. arrange bell pepper strips, zucchini spears, asparagus spears and carrot slices in single layer on another large baking sheet. Transfer 1/2 cup sauce to small saucepan and reserve for dipping. Brush both sides of vegetables lightly with some of remaining basting sauce.
  • Prepare barbecue (medium-high heat). Grill Corn, eggplant and onion until tender and lightly charred, brushing occasionally with basting sauce and turning with tongs, about 6 minutes. Transfer vegetables to small platter as vegetables finish grilling. Tent with foil to keep warm.
  • Grill bell peppers, zucchini, asparagus and carrot until tender and lightly charred, brushing occasionally with basting sauce and turning with tongs, about 6 minutes. Transfer vegetables to same platter, arranging alongside other vegetables. Season all vegetables with salt and pepper. Garnish with fresh herb sprigs and lemon.
  • Place pan with reserved 1/2 cup sauce over low heat or at edge of barbecue and whisk sauce until warmed through. Transfer to small bowl. Serve vegetables, passing warm dipping sauce separately.

10 1/2 cups water
1/2 cup coarse kosher salt
3 tablespoons honey
2 tablespoons fresh lemon juice
Peel from 1 lemon, cut into long strips with vegetable peeler
1 bay leaf
3 large fresh thyme sprigs plus 1 teaspoon fresh thyme leaves
1 4 1/2-pound chicken (giblets reserved for another use)
2 cups (or more) low-salt chicken broth, divided
1 tablespoon butter, room temperature
1 tablespoon all purpose flour
2 tablespoons whole grain mustard
Green Salad with Olives

Steps:

  • Bring 10 1/2 cups water, coarse salt, honey, lemon juice, lemon peel, bay leaf, and thyme sprigs to boil in large pot. Cool slightly, then refrigerate brine until cold. Place chicken in very large resealable plastic bag; add brine and seal. Refrigerate chicken 6 hours.
  • Drain chicken from brine; rinse and pat dry. Place chicken on plate. Let stand uncovered in refrigerator at least 2 hours and up to 24 hours.
  • Preheat oven to 375°F. Place chicken on rack in roasting pan. Roast chicken 20 minutes; add 1 cup broth to roasting pan. Roast chicken 20 minutes longer; add 1 cup broth to roasting pan. Roast chicken until thermometer inserted into thickest part of thigh registers 170°F, about 45 minutes. Let chicken rest 10 minutes.
  • Meanwhile, pour juices from roasting pan into 2-cup measuring cup. Add more broth if needed to equal 2 cups. Simmer butter in medium saucepan over medium heat until beginning to brown, about 2 minutes. Add flour; stir 1 minute. Whisk in broth mixture; bring to boil. Stir in mustard and 1 teaspoon thyme leaves. Season sauce with salt and pepper.
  • Slice chicken. Divide chicken among plates. Drizzle with sauce and serve Green Salad with Olives alongside.

These pork chops are one reason to welcome fall! Easy to prepare, yet fabulously delicious, they are a great option on a weeknight. You'll start these on the stove and then finish in the oven.

8-10 cremini mushrooms, thinly sliced
1 medium shallot, thinly sliced into rounds
3 Tbsp butter
4 boneless pork chops
1 Tbsp fresh thyme leaves
3/4 c chicken broth
1 c half and half or cream
2 Tbsp grainy mustard
1 Tbsp worchestershire
salt and pepper to taste

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Melt 2 T butter in an oven-proof skillet over medium heat. Add mushrooms and saute until soft and lightly browned, about 6 minutes. Remove from pan and set aside.
  • 3. Melt remaining butter in the same skillet over low heat. Add shallot and saute gently until soft, about 8-10 minutes. Remove from pan and set aside.
  • 4. Season pork chops with salt and pepper. Heat the same skillet over medium-high heat and sear pork chops on one side, about 2 minutes. Turn and sear the other side, roughly the same time. Remove from heat and set aside.
  • 5. Return the same skillet to medium heat. Deglaze the pan with chicken broth, scraping bits from the bottom. Whisk in cream, thyme leaves, mustard and worschestershire. Simmer until well incorporated and slightly thickened, about 5 minutes. Stir in mushrooms and shallots. Return pork chops and juices to the pan. Spoon the sauce over the chops and turn off the burner.
  • 6. Place the skillet in the preheated oven and finish for 20-35 minutes, depending on the thickness of the pork.

1 tablespoon olive oil
8 skinless chicken thighs (bone in, about 2.5 pounds)
1/2 teaspoon sea salt, divided
1/2 teaspoon fresh ground black pepper, divided
1 tablespoon butter
1/2 cup onion, chopped
2 teaspoons fresh thyme, chopped
1 cup no-salt-added chicken stock, divided
4 teaspoons cornstarch
1 teaspoon Dijon mustard
1 tablespoon olive oil
1/4 teaspoon sea salt
1/4 teaspoon fresh ground pepper
1 lb fingerling potato, halved lengthwise
10 ounces trimmed green beans
2 garlic cloves, thinly sliced

Steps:

  • Preheat oven 425 degrees F.
  • Heat a large nonstick skillet over medium-high heat. Add oil to pan. Sprinkle chicken with 1/4 tsp salt and 1/4 tsp pepper. Add chicken to pan; cook 4 minutes on each side or until slightly browned. Remove chicken from pan; place in a 11x7-inch glass or ceramic baking dish. Bake at 425 degrees F. for 16 minutes or until a thermometer registers 165 degrees. Remove chicken from dish; reserve drippings.
  • Return skillet to medium-high heat. Add butter. Add onion and thyme; saute 5 minutes or until tender. Combine 3 tablespoons stock and cornstarch in a small bowl, whisk until smooth. Add mixture, remaining stock, and reserved drippings to pan, scraping pan to loosen browned bits. Bring to a boil and cook for 2 minutes or until slightly thickened. 1 boneless pork loin roast (2 to 3 pounds)
1 cup chicken stock
1/2 cup honey
1/4 cup unsweetened pineapple juice
1/4 cup canola oil
1 teaspoon dried thyme
1/2 teaspoon spicy brown mustard
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper
Coarse sea salt

Steps:

  • Place roast in a large resealable plastic bag. In a small bowl, whisk stock, honey, pineapple juice, oil, thyme and mustard until blended; add to pork. Seal bag and turn to coat; refrigerate 1-2 hours., Preheat oven to 375°. Transfer roast to a greased 13x9-in. baking dish; pour remaining marinade over top. Sprinkle roast with 1/2 teaspoon each salt and pepper., Bake 60-70 minutes or until a thermometer reads 145°. Remove roast from baking dish; tent with foil. 800 g rabbit
2 tablespoons olive oil
1 cup all-purpose flour
1 cup dry white wine
1 garlic clove
1/2 bay leaf
1 teaspoon thyme
1 tablespoon Dijon mustard
2 cups chicken stock
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Cut rabbit meat into portion parts, as if you will do it with chicken. Mix flour, salt and pepper and roll rabbit parts into flour.
  • Take a frying pan (best Teflon one) put some olive oil and fry rabbit until brownish on all sides.
  • Add garlic and fry not more than 1 minute. Add wine, thyme, bay leaf. Stir with wooden ladle removing burned parts (if there are any).
  • Cook on easy fire 45 minutes. Add some chicken stock if necessary. Add mustard, stir and cook about 5 minutes.
  • The sauce must be dense, but not too much. Serve with mashed potato.

1-2 lbs salmon fillet (scaled)
3 tablespoons butter
1 tablespoon olive oil
1 large shallot
leaves from 3 sprigs of thyme (about 1 tablespoon)
3-4 teaspoons of country dijon mustard
juice and zest from 1/2 lemon
salt & pepper

Steps:

  • Heat butter and olive oil in a medium saucepan. Add finely chopped shallot and thyme. Cook on medium heat 3-4 minutes. Add mustard, lemon juice, zest, and stir until blended. Season with salt and pepper to taste. Let cool to room temperature. Cut salmon into portion-sized strips. Marinate in bag with sauce about 20 minutes (sauce will be thick). Lay fish skin down on a foil lined baking dish. Top with excess sauce. Broil 5-6 minutes, flip fish skin-side-up and broil another 5-6 minutes, or until skin is crispy. Peel off skin and serve.
