Teatime? Try this thyme tea (actually a tisane). The herb gets steeped with coriander and fennel seeds -- a nice break from the usual herbal tea assortments.

3 cups water
8 to 10 thin, tender thyme sprigs
1/2 teaspoon whole coriander seeds, lightly crushed
1/2 teaspoon whole fennel seeds, lightly crushed

Steps:

  • Bring water to a boil. Steep thyme and the coriander and fennel seeds for 10 minutes. Strain through a fine sieve. Serve warm or chilled. Strained tea can be refrigerated up to 1 day.

1/2 teaspoon dried thyme (1 teaspoon fresh)
honey (optional)
lemon (optional)

Steps:

  • Place thyme in tea cup and pour over boiling water to cover. Cover cup and allow to steep for 10 minutes.
  • Strain and serve, with honey and/or lemon, if you so desire. Enjoy!

2 quarts water
8 individual green tea bags
12 fresh lemon thyme sprigs or 8 fresh thyme sprigs plus 1/2 teaspoon grated lemon zest
1/4 cup honey
3 tablespoons lemon juice
Sugar, optional

Steps:

  • In a large saucepan, bring water to a boil; remove from heat. Add tea bags and lemon thyme sprigs; steep, covered, 3 minutes. Discard tea bags; steep, covered, 3 minutes longer. Strain tea. Add honey and lemon juice; stir until honey is dissolved. Stir in sugar if desired. Serve immediately.
