The inspiration for this was my mothers sweadish meatball recipe. A church picnic asked me to do burgers and the same old cheese burger just didn't seem like much fun to me.

11 ounces ground veal
11 ounces ground pork
11 ounces ground lamb
3 eggs, beaten
1/2 cup breadcrumbs
1 medium onion, diced fine
8 ounces mushrooms, diced
3 tablespoons parsley, fresh chopped
3 teaspoons salt
3 teaspoons pepper
3 teaspoons paprika, toasted
8 ounces gouda cheese
8 tablespoons olive oil, extra virgin

Steps:

  • Add 2 tbs olive oil to saute pan and sweat diced onion and mushrooms over med-low heat until onions are soft and opaque. Toast paprika in dry saute pan.
  • While onions are sweating mix ground meats together until well blended.
  • Add spices, blend well. Add onions and mushrooms and eggs blending well.
  • Slowly add bread crumbs mixing well between additions till meat is able to hold patty shape without falling apart. More or less bread crumbs may be used.
  • Preheat remaining olive oil in skillet over medium heat.
  • Form meat into 1/4 lbs patties and cook approx 3 minutes a side. Cooking time depends on your personal tastes for rare, med, or well done.
  • When burgers are done to your liking put them on side board to rest. While they are resting lay slice of gouda cheese on top and cover with pot lid to keep warm and help cheese melt.
  • Serve on lightly toasted buns with your favorite toppings.

Made with seasoned ground chicken and a zippy ground turkey mixture, these burgers are wrapped in turkey bacon before grilling. Now that's a high protein dinner!

2 tablespoons soft bread crumbs
2 teaspoons refrigerated or frozen egg product, thawed
1/4 teaspoon barbecue seasoning or barbecue spice
8 ounces uncooked ground chicken
1 pound uncooked ground turkey breast
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
6 slices turkey bacon
1/3 cup shredded reduced-fat cheddar cheese (optional)
6 whole wheat English muffins, split and toasted
2 tablespoons bias-sliced green onion

Steps:

  • In a medium bowl, combine bread crumbs, egg product, and barbecue seasoning. Add chicken; mix well. Shape chicken mixture into six 1/4-inch-thick patties.
  • In a medium bowl, combine turkey, garlic powder, and pepper. Shape mixture into six 1/2-inch-thick patties. Place chicken patties on top of turkey patties. Shape the edges of the turkey patties up the sides of the chicken patties, pinching the patties together to seal. Wrap a bacon slice around each patty and secure with a wooden toothpick.
  • For a charcoal grill, grill patties on the lightly greased rack of an uncovered grill directly over medium coals for 14 to 18 minutes or until an instant-read thermometer inserted into the side of each patty registers 165 degrees F, turning once halfway through grilling. If desired, sprinkle cheese on patties for the last minute of grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place patties on a lightly greased grill rack over heat. Cover and grill as above.)
  • Remove toothpicks. Place patties on top of muffin bottoms. Top with green onion and muffin tops.
