Easy Blackened Chicken is a quick flavorful chicken recipe! Chicken breasts seared with blackening seasonings like paprika, cumin, thyme, and white pepper.

2 chicken breasts (, skinless, boneless, and cut in half longwise)
1/2 teaspoon paprika
1/8 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cumin
1/4 teaspoon dried thyme
1/8 teaspoon ground white pepper
1/8 teaspoon onion powder

Steps:

  • Preheat oven to 350 degrees. Lightly grease a baking sheet.
  • Heat a cast iron skillet over high heat for 5 minutes until it is smoking hot.
  • Mix together the paprika, salt, cayenne, cumin, thyme, white pepper, and onion powder.
  • Oil the chicken breasts with cooking spray on both sides, then coat the chicken breasts evenly with the spice mixture.
  • Place the chicken in the hot pan, and cook for 1 minute.
  • Turn, and cook 1 minute on other side, then place the breasts on the prepared baking sheet.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, about 5 minutes.

(Warning: you may want to open a window and shut off the smoke detector when preparing this dish). I received this recipe from a coworker, but I tripled the recipe to kick it up. I serve this with Alfredo and bow tie pasta. This is great dish for company and I guarantee if they love spice they will ask for it again.

4 boneless skinless chicken breasts
2 tablespoons olive oil
2 tablespoons cayenne pepper
2 tablespoons cinnamon
2 tablespoons cajun seasoning
1 tablespoon paprika
1 tablespoon salt

Steps:

  • Cut chicken into bite sized pieces.
  • Heat olive oil in a skillet.
  • Combine cayenne pepper, cinnamon, Cajun seasoning, paprika an salt in a bowl.
  • Rub spice mixture into chicken.
  • Place chicken in skillet and cook until cooked thoroughly.
  • Serve with Alfredo (recipe #4205) and your choice of noodles.
  • Variation: If you are using this recipe for something besides pasta, pound chicken breasts to 3/4 inch and cook as directed.
  • Variation: If you want to downgrade to One Alarm Blacken Chicken: use 1 teaspoon cayenne pepper, cinnamon, and Cajun seasoning and 1/2 teaspoon paprika and salt.
