1 lb fresh green beans (or frozen)
2 ounces prosciutto, chopped
2 teaspoons minced garlic
1 tablespoon olive oil
1/4 cup vegetable broth
salt and pepper

Steps:

  • Combine olive oil and garlic in a medium saucepan over medium heat.
  • Add prosciutto and cook for 3 minutes.
  • Add green beans and continue cooking for 2 minutes.
  • Add broth, lower heat and cook for 5-7 minutes, or until beans are cooked to desired tenderness.
  • Add salt and pepper to taste.

2 tablespoons teriyaki sauce
1 tablespoon honey
1 tablespoon butter
1 tablespoon fresh lemon juice
1 1/2 lbs fresh green beans
2 slices bacon
1/2 cup red bell pepper
1/2 cup onion, sliced in thin wedges
1/2 cup cashews (whole)

Steps:

  • In a small bowl, stir together the teriyaki sauce, honey, and butter.
  • Fill a bowl with cold water and ice cubes.
  • Bring a large pot of water to a boil and add the lemon juice. Drop in the beans and cook for 4 to 5 minutes, or until beans are bright green. Drain the beans in a colander and then plunge them into the iced water. Drain again and set aside.
  • In a skillet, cook the bacon until very crispy, crumble and set aside. Saute the bell pepper and onion in the hot bacon fat for 2 minutes. Add the beans, cashews, and bacon to the skillet. Add the teriyaki-honey sauce and toss gently.

I was tired of regular canned green beans so I thought I would dress them up some. Thought I would share my idea with everyone! Easy to prepare and serve.

2 (14 1/2 ounce) cans green beans
1/4 cup water
2 tablespoons green peppers, chopped
2 green onions, chopped
2 teaspoons minced garlic
1 teaspoon bacon bits
2 teaspoons soy sauce
1 teaspoon Accent seasoning

Steps:

  • Open and drain green beans.
  • Place green beans in a pot and add water.
  • Cook on medium heat.
  • Add green pepper, onion, bacon bits,soy sauce and accent.
  • Turn heat down to low,cover and simmer for 15 minutes.
  • Note: You can drain water off beans after cooking (optional).

This is my own creation and I first made this in 1960, when I lived in Grand Rapids,Mi. Everyone loved it and asked for it often. The lemon juice gives this dish just the right amount of tart with the sweet. I have made it with apricots too! These are my own photos.

6 slice bacon,fried crisp and chopped
2 can(s) (14 oz. each) cut green beans, drained and rinsed
15 oz can pears, drain and reserve juice in measuring cup
1/2 c pear liquid,or whatever you drained into measuring cup
1/2 c water or whatever is needed to make pear juice equal 1 cup
2 Tbsp granulated sugar
1 large lemon juice, fresh; plus the zest
1 pinch nutmeg
2 Tbsp cornstarch
1 Tbsp bacon grease,optional
to taste: salt and pepper,optional

Steps:

  • 1. Fry bacon crisp, cool then chop up;set aside. Drain green beans in strainer and rinse;set aside. Drain juice from pears into measuring cup adding the water to make 1 cup liquid,pour into saucepan.
  • 2. Add the sugar,nutmeg, lemon juice and all but 1 teaspoon of the zest. Stir in and blend in the cornstarch. Bring to a boil ,stirring continuously until mixture becomes clear. Stir in all but 1 Tablespoon of the bacon pieces.
  • 3. Cut up pears. and zest from lemon.
  • 4. Add drained beans and fold in the pears. Just heat until warmed. Pour into serving bowl and garnish top with reserved bacon and orange zest. Drizzle 1 Tablespoon of bacon grease over top if desired. Enjoy! Enjoy.

2 tablespoons teriyaki sauce
1 tablespoon honey
1 tablespoon butter (melted)
1 tablespoon fresh lemon juice
1 1/2 lbs fresh green beans, preferably thin ones, trimmed
2 slices bacon
1/4 cup yellow pepper, cut into strips (about 1/4 of a pepper)
1/4 cup red pepper, cut into strips (about 1/4 of a pepper)
1/2 cup thin sliced onion
2 garlic cloves
1/2 cup whole cashews
1 tablespoon fresh lemon juice

Steps:

  • Teriyaki-Honey Sauce:.
  • In a small bowl, stir together the teriyaki suace, honey and melted butter.
  • Bring a large pot of water to a boil.
  • Drop in the beans and cook for 4-5 minutes, or until the beans are bright green.
  • Drain the beans in a colander, then plunge them into ice water.
  • Drain again and set aside.
