Creamy Oatmeal Smoothie with peanut butter and banana. With fiber, protein, and healthy fats, this vegan breakfast smoothie is filling and delicious!

1/4 cup old-fashioned oats or quick oats
1 banana (chopped into chunks and frozen)
1/2 cup unsweetened almond milk
1 tablespoon creamy peanut butter
1/2 tablespoon pure maple syrup (plus additional to taste)
1/2 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon kosher salt (don't skip this, as it makes the oatmeal pop!)
Ice (optional, add at the end if you want a thicker smoothie)

Steps:

  • Place the oats in the bottom of a blender and pulse a few times until finely ground. Add the banana, milk, peanut butter, maple syrup, vanilla, cinnamon, and salt.
  • Blend until smooth and creamy, stopping to scrape down the blender as needed. Taste and add additional sweetener if you'd like a sweeter smoothie. Enjoy immediately.

What a treat! I have these for breakfast of a quick lunch on the go. The oatmeal makes it thick and the banana makes it sweet, but not too sweet. Sometimes I add a protein powder for that extra boost in the morning or when I do not have nuts. This makes one generous serving.

1 - banana
2 1/2 cup(s) ice cubes
2 tablespoon(s) heaping tbsp plain yogurt
4 tablespoon(s) rounded tbsp cooked plain quick oatmeal
2 tablespoon(s) almonds
1 teaspoon(s) (optional) honey

Steps:

  • Crush 1/2 cup ice in blender. crush another 1/2 cup ice with yogurt. Add banana and 1/2 cup ice. Add remaining ice a little at a time. Add oatmeal and blend and add almonds.
  • Note: You can serve like this or on top of 4 cubes of ice or so if you would like.
