"THESE POTATOES are delicious, and they live up to their crunchy name! I make them often since they're easy to prepare and can be made ahead of time. This dish is always 'pretty as a picture' when it comes out of the oven!"

1 cup sour cream
1/2 cup milk
1 tablespoon minced chives
1/2 teaspoon salt
1/4 teaspoon pepper
6 medium potatoes, peeled and sliced 1/4 inch thick
1 cup shredded sharp cheddar cheese
1/2 cup finely crushed cornflakes
Additional minced chives, optional

Steps:

  • In a large bowl, combine sour cream, milk, chives, salt and pepper. Add potatoes and mix thoroughly. Spread in a 15x10x1-in. baking pan. Combine cheese and cornflakes; sprinkle over potatoes. Bake at 350° for 50-60 minutes or until potatoes are tender. Sprinkle with additional chives if desired.

28 -32 ounces hash brown potatoes
10 3/4 cream of chicken soup or 10 3/4 cream of mushroom soup
8 -16 ounces sour cream (I use light)
1/2 cup chopped onion
1/4 teaspoon pepper
1/4 cup butter
8 -10 ounces sharp cheddar cheese (I use 2 percent)
optional ingredients may be added -- broccoli, chicken, ground beef, sausage

Steps:

  • Preheat oven to 350 degrees F.
  • Grease 9x13 pan.
  • Saute onion in butter til tender, don't brown.
  • Mix all ingredients together in bowl including onions and butter.
  • Pour potato mixture in pan and cover,bake aprox. 1 hour. uncover last 10 minute.

8 ounces shredded sharp cheddar cheese
2 cups sour cream (you can use low fat)
1 (8 ounce) can cream of chicken soup
2/3 cup chopped onion
3/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup margarine, melted
2 cups crushed corn flakes

Steps:

  • Mix together potatoes, cheese, sour cream, soup, onion, salt and pepper.
  • Place in casserole dish top with corn flakes/margarine mixture.
  • Bake at 350° for 45 - 50 minutes.

6 strips of bacon
1 cup heavy cream
1/8 tsp nutmeg
1 tsp thyme
1 tsp unsalted butter
1 1/2 cups grated white cheddar
Crushed garlic to taste
Chives
JWM Cheddar and AsiagoCheeseCrisps

Steps:

  • 1. Lightly grease a 9X12 inch baking pan 2. Preheat oven to 400 3. Spread crushed garlic on bottom of pan 4. Peel potatoes, cut into thick chips and boil until tender 5. Cook bacon and save some of the fat 6. Mix bacon fat with cream, nutmeg, chives, and thyme 7. Crush CheeseCrisps 8. Layer potatoes in baking dish and sprinkle grated cheddar on top 9. Crumble bacon and CheeseCrisps on top 10. Pour cream mixture over 11.
