A no-knead bread that has a nice crumb, soft and open enough to be a good sandwich bread. This is so easy, you can't go wrong. As with most any bread, it's not the ingredients, but the method that matters. A huge thanks to Diane Smith whose "homemade ciabatta bread" inspired this alteration. 1 teaspoon(s) yeast
2 cup(s) warm water
1 tablespoon(s) honey
1 teaspoon(s) salt
3 cup(s) all purpose flour
3/4 cup(s) bread flour
1/4 cup(s) whole wheat flour
- olive oil as needed
- cornmeal

Steps:

  • Put the yeast in a large bowl, add the water, and whisk until dissolved. Add the honey and stir in. Add the flours, and salt. Mix until it becomes gooey. Then oil hands and pour about a couple of TBSP of olive oil over the dough, and mix with hands only until everything is encorporated. Form into ball.
  • Oil a piece of plastic wrap and cover the bowl. Place a couple of towels over and place in a warm spot for 12 hours. (I start this the night before)
  • An hour before baking, turn on the oven to 500 with a pizza stone inside. Get your dough.
  • Take a piece of parchment paper and place in a shallow pan. (I used a 10 x 6). Brush with olive oil. Sprinkle with a tbsp or so of cornmeal. Take a spatula and oil it. Tip the bowl with dough toward the pan and use the spatula to loosen and guide the dough into the pan. It will slide out pretty easy. Cover it with the oiled saran wrap an return to warm place until the hour is up on the oven heating.
  • Spray the top of the loaf with water. Place the dough in the pan on the pizza stone quickly and close the oven. Reduce temp to 450. Bake for 20-25 minutes, until brown, fairly hard on top. Remove to a wire rack to cool.

Lazy Man's Bread (No-Knead Bread) image

This easy but extra rich No-Knead Sandwich Bread can save you on lazy days! Made with a combination of whole wheat and all-purpose flour, the dough is ready in less than 5 minutes and there's no need to knead. If you're craving something hearty and homemade but have no time to waste, this recipe is for you.

1 1/2 cup warm milk
4 tbsp melted butter
2 eggs
1 1/2 tsp instant yeast
2 tbsp brown sugar
2 cups (250 g) all-purpose flour
2 cups (240g) whole wheat flour
1 tsp salt

Steps:

  • Melt the butter and warm up the milk. Microwaving each for 30 seconds is enough.
  • In a medium bowl, mix butter, milk and eggs.
  • In a large bowl, combine the dry ingredients. Mix the wet mixture until dough is form and no dry spots remain. It's a very wet dough, so use a spoon or spatula. Don't try to mix it using your hands.
  • Let it rest for 1 hour, covered with a damp kitchen towel.
  • Place into baking pan. You can use a large loaf pan, or two medium. Grease the loaf pan first with butter or cooking spray.
  • Let it rest for 30 minutes on the loaf pan while you preheat your oven to 375°F.
  • Bake bread for 40 to 45 minutes, or until the top is nicely golden.
  • Wait 10 minutes to serve. No need to wait for more than 10 minutes for this bread. Have it still warm, with lots of butter or whatever your heart desires!
