1/2 lb. spaghetti, uncooked
1 Tbsp. olive oil
3 cloves garlic, minced
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 cup KRAFT Shredded Parmesan Cheese, divided

Steps:

  • Cook spaghetti in large saucepan as directed on package, omitting salt. Drain, reserving 1 cup of the cooking water. Set spaghetti aside.
  • Heat oil in same saucepan on medium-low heat. Add garlic; cook 1 to 2 min. or until lightly browned, stirring frequently. Add cream cheese, 3/4 cup Parmesan and 1/2 cup of the reserved pasta cooking water; cook 1 to 2 min. or until cream cheese is completely melted and sauce is well blended.
  • Return spaghetti to pan; toss until evenly coated. If thinner consistency is desired, add enough of the remaining reserved pasta cooking water until sauce is of desired consistency. Top with remaining Parmesan.

Very bold. If you are not a garlic lover, don't try this recipe. This is an adaptation of Spaghetti a la Carbanora. The garlic and egg are both raw, but don't worry, the butter melts, the egg cooks ever so slightly, the cheese melts and an indescribably heavenly amalgamation takes place. 8 ounces spaghetti
1 raw egg
5 -8 cloves garlic, peeled and press (not less)
4 tablespoons butter
1/4-1/3 cup grated parmesan cheese
1 teaspoon dried sweet basil leaves
1/4 cup finely chopped parsley
fresh fresh coarse ground black pepper (a lot)
red pepper flakes
vegetarian bacon bits or regular bacon bits
parmesan cheese
black pepper

Steps:

  • Boil spaghetti in a pot of boiling water; (don't over cook).
  • While spaghetti cooks, prepare sauce (this is a thick paste that you toss over the cooked spaghetti).
  • Place the egg garlic, butter, grated Parmesan cheese and dried sweet basil in a blender or food processor and blend together until smooth and well blended.
  • (You can do this by hand if the garlic is pressed).
  • When spaghetti is cooked and drained, (and hot) place it in a large bowl and add the garlic-cheese paste and chopped parsley and ground black pepper.
  • Toss well.
  • Place on servining plater (I warm my plates) and pass the red pepper flakes, bacon bits and more Parmesan and black pepper around for each to add.
  • You can vary this recipe by adding sauteed onions and mushrooms, stir-fried green peppers or added cream or sauteed shrimp.
  • Enjoy, and you will know you added enough garlic if you wake up the next morning tasting it on your breath.

10 garlic cloves, minced

Kosher salt
1 pound spaghetti
3 cloves garlic, minced
1/2 cup extra-virgin olive oil
Pinch red pepper flakes
2 tablespoons chopped flat-leaf parsley
1/2 lemon, zested, optional
Freshly grated Parmigiano-Reggiano, optional

Steps:

  • Bring a large pot of cold water to a boil over high heat, then salt it generously. Add the pasta and cook, stirring occasionally until al dente, tender but not mushy, about 8 minutes.
  • While the pasta cooks, combine the garlic, olive oil, 1 teaspoon salt and the red pepper flakes in a large skillet and warm over low heat, stirring occasionally, until the garlic softens and turns golden, about 8 minutes.
  • Drain the pasta in a colander set in the sink, reserving about a 1/4 cup of the cooking water. Add the pasta and the reserved water to the garlic mixture. Mix well. Add the parsley and lemon zest (if using). Adjust seasoning, to taste. Transfer to a large serving bowl or divide amongst 4 to 6 dishes. Serve topped with grated cheese, if desired.

fresh coarsely ground black pepper to taste - a lot!

Steps:

  • Cook spaghetti according to directions. While spaghetti is cooking, whirl everything but parsley and pepper together, until smooth and well blended. One can do this by hand, if the garlic is put through a press. When the spaghetti is cooked and drained, place it in a large bowl or pan and spoon over it the garlic - cheese paste. Add parsley, grind pepper over, toss well and serve at once.
