1/4 cup each grapefruit, orange and pineapple juice
2 teaspoons cornstarch
1/4 cup white vinegar
2 tablespoons vegetable oil
1 garlic clove, minced
2 to 3 teaspoons sugar
1 teaspoon prepared mustard
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon ground nutmeg
8 cups torn iceberg lettuce
6 cups torn Bibb lettuce
3 cups orange sections
3 cups fresh pineapple chunks
3 cups sliced fresh strawberries

Steps:

  • In a saucepan, stir juices and cornstarch until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes. Cool to room temperature. , Add vinegar, oil, garlic, sugar, mustard, salt, paprika and nutmeg; stir to mix. Cover and chill. , In a salad bowl, toss lettuces, oranges, pineapple and strawberries. Pour dressing over salad and toss; serve immediately.

Perfect Summer Fruit Salad image

The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

This is always a winner if you can find good fresh fruit. The Prosecco gives it a twist.

Number Of Ingredients 13

1 vanilla pod
2 ounces (55 milliliters) water
6 tablespoons sugar
Grapefruit juice, reserved from grapefruit
Small handful blueberries
4 strawberries, halved
2 yellow and red plums, stones removed and cut into 1/8ths
Small handful raspberries
1/2 a pink grapefruit, segmented and juice reserved
1/2 orange, segmented
1/2 melon, cubed
1/4 bottle Prosecco wine, chilled
Creme fraiche, for serving

Steps:

  • Remove the vanilla seeds from the pod and put seeds and pod into a small pan. Add the water, sugar and reserved grapefruit juice. Bring to a boil, reduce heat and simmer to make a syrup. Put in the refrigerator until thoroughly chilled.
  • Toss the prepared fruit in the chilled syrup. Spoon onto plates and pour over the chilled Prosecco. Serve with creme fraiche.

1 cup vanilla low-fat yogurt
1/3 cup orange juice
1 tsp. ground cinnamon
2 medium apples, chopped
2 cups seedless green grapes, halved
1/2 cup PLANTERS Dry Roasted Peanuts

Steps:

  • Beat yogurt, orange juice and cinnamon in medium bowl with wire whisk until well blended.
  • Add remaining ingredients; mix lightly.
  • Serve immediately. Or, cover and refrigerate until ready to serve.

I love fruit... it's my favorite go to snack. Whenever I go to a potluck picnic or brunch I always throw together a huge bowl of this salad and almost never have any left to take home.

3 large apples, cored and diced
1 large can pineapple chunks in natural juices (drained)
1 large can peaches in natural juices, (drained) or 4 large peaches pitted and sliced
1 large bunch seedless grapes... red or green
3 - 4 large bananas sliced
2 lb fresh strawberries hulled and sliced
1 lb fresh blueberries
1 jar(s) maraschino cherries, (drained)
1 pt vanilla yogurt
1 c orangejuice
1 can(s) angel flake cocoanut (optional)
1 pkg miniature marshmallows (optional)

Steps:

  • 1. in a large serving bowl, mix together all the fruits.
  • 2. blend yogurt and orange juice together and pour over the fruit, mix well
  • 3. can add coconut and marshmallows if you choose... it's good with and without it.
  • 4. * can add other fruits as well... Kiwi is a favorite of mine, as are mandarine oranges, pomagranate seeds, and dried cranberries. Best to use whatever is in season.. this is just the way I usually make it. * this salad is just as tasty without the dressing, and if you choose you can substitute sour cream for the yogurt - if you do though I'd omit the orangejuice.
