1/2 cup all-purpose flour
1/2 teaspoon pepper
1/2 teaspoon ground allspice
1 carton (32 ounces) chicken broth
1/2 cup sherry or additional chicken broth
1/2 cup heavy whipping cream
1/2 pound sliced fresh mushrooms
4 garlic cloves, minced
2 cups shredded smoked Gouda cheese
Chives and smoked paprika

Steps:

  • In a large saucepan, melt butter. Stir in the flour, pepper and allspice until smooth; gradually add the broth, sherry and cream. Bring to a boil. Add mushrooms and garlic. Reduce heat; cover and simmer for 5-6 minutes or until mushrooms are tender., Add cheese; cook and stir until melted. Garnish servings with chives and paprika.

4-1/2 teaspoons butter
1/2 cup sliced fresh mushrooms
1/2 cup sliced baby portobello mushrooms
1/4 cup chopped fresh shiitake mushrooms
1 shallot, minced
2 teaspoons minced fresh thyme
1/4 teaspoon salt
1/8 teaspoon pepper
1 sheet frozen puff pastry, thawed
1/2 cup shredded smoked Gouda cheese
1 large egg
2 tablespoons water

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium-high heat. Add mushrooms and shallot; cook and stir until tender, about 5 minutes. Stir in thyme, salt and pepper., Unfold puff pastry. Spread mushroom mixture to within 1 in. of edges. Sprinkle with cheese. Roll up jelly-roll style; pinch seam and ends to seal. Place on a parchment-lined baking sheet, seam side down. In a small bowl, whisk egg and water; brush over pastry. Cut slits in top., Bake until golden brown, about 30 minutes. Let stand 10 minutes before cutting.

1/2 c butter
1/2 clove flour
32 oz chicken stock
1/2 c sherry
1 c heavy cream
1 c sliced fresh mushrooms
6 clove garlic minced
2 c smoked gouda cheese shredded
salt and pepper to taste
smoked paprika for garnish

Steps:

  • 1. Melt the butter in a large saucepan. Add the flour and whisk until smooth. Add the chicken broth, sherry, and heavy cream. Bring to a boil. Reduce to a simmer. Add the mushrooms and garlic. Cook 5 minutes.
  • 2. Add the shredded cheese and stir until cheese is melted. Taste and season with salt and pepper. Serve sprinkled with smoked paprika

10 ounces fish base, dried bird nests
1 tablespoon oil
12 cups chicken stock
1 tablespoon fresh gingerroot, chopped
1/2 cup chicken meat, small diced
1/2 cup straw mushroom, diced
roux, cornstarch

Steps:

  • Soak bird's nest overnight. Then remove water and clean.
  • In a stockpot add cooking oil and boil the chicken stock then add in birds nest. Let it heat for 10 minutes. Add the rest of the ingredients and let it heat for another 10 minutes. Add in cornstarch roux to lightly thicken the soup and stir in the chicken meat, mushrooms and turn off the heat and let stand for 5 minutes before serving.

4 tablespoons flour
1 teaspoon Worcestershire sauce
1 dash cayenne
4 cups hot milk
1 cup potato, diced
3/4 cup carrot, diced
2/3 cup green beans, broken into 1-inch pieces
1 1/4 cups gouda cheese, shredded
salt
pepper
1/2 cup parsley, finely chopped

Steps:

  • Melt butter in a heavy-bottomed saucepan.
  • Add the onion and celery and cook until they are softened but not browned, 4-5 minutes.
  • Sprinkle in flour and stir well.
  • Add Worcestershire sauce and cayenne.
  • Stir in 1/2 cup hot milk and blend well.
  • Repeat.

1/2 onion, diced
4 large garlic cloves, diced
3 tablespoons flour
24 ounces broccoli, chopped
1 lb russet potato, peeled and chopped

2 cups smoked gouda cheese, shredded

Steps:

  • Heat olive oil in a large pot on medium heat. Saute onions until they start to turn translucent, about 5 minutes. Add garlic and heat for another minute will stirring constantly. Stir in flour and cook for another minute while stirring constantly.

1/4 cup olive oil
