MOM'S CLASSIC SOUTHERN DEVILED EGGS

My mom's classic Southern deviled eggs are simple to make, deliciously creamy and perfect for holidays, family gatherings and special occasions!

Number Of Ingredients 7

1 dozen large eggs
1 tablespoon yellow mustard
1/4 to 1/3 cup mayonnaise (reduced fat is OK)
3-4 tablespoons sweet pickle cubes, drained (optional, see notes)
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
Sprinkle of paprika, hot sauce or sriracha, chopped fresh parsley, snipped fresh chives, capers, pimientos, sprinkle of cayenne, caviar, cooked, crumbled bacon or an olive slice

Steps:

  • Place eggs in the bottom of a large pot and cover with cold water.
  • Bring water to a boil over high heat. Turn off heat, cover the pan and let the eggs sit for 20 minutes.
  • Drain the eggs and rinse them with cold water. (Alternatively you can do baked hard boiled eggs in the oven or make Instant Pot hard boiled eggs if you prefer.)
  • Peel the cooled eggs then cut in half lengthwise. Scoop out the yellow yolks and place them in a small bowl. Plate egg white halves on serving plate.
  • Use a fork to mash the egg yolks. Add the remaining ingredients and mix well. Season the mixture to taste with extra salt and pepper as needed.
  • Fill each egg half with the yolk mixture, mounding it up a little. Sprinkle with any desired toppings and serve.

3 Tbsp peach salsa (i used my peach habanero basil jam)
6 large hard-cooked eggs, peeled, cut in half, and yolks mashed in a bowl
1/4 c mayonnaise
1 tsp dijon mustard
2 tsp peach jam
1/4 tsp habanero powder
salt and black pepper to taste

Steps:

  • 1. Place the salsa in a fine-mesh strainer over a bowl to drain well, pressing gently with the back of a spoon to remove excess liquid. These are the items I used.   • 2. Combine the thoroughly mashed yolks with the mayonnaise and mustard. Stir in the drained salsa, jam, and habanero powder. Taste, then season with salt and pepper. Fill the whites evenly with the mixture.

Our classic deviled eggs get their kick from mustard and hot sauce. We like the simplicity of the flavor - it's the perfect recipe to use your imagination and add your favorite toppings or mix-ins.

12 large eggs (see Cook's Note)
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 to 2 dashes hot sauce, optional
Kosher salt and freshly ground black pepper
Finely chopped chives, for garnish
Smoked paprika, for sprinkling

Steps:

  • Place the eggs in a single layer in a wide saucepan, cover with 1 inch of water and bring to a boil. Lower the heat to medium-low and simmer for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely, then carefully peel them.
  • Dip a clean kitchen towel in a small bowl of warm water. Wipe the blade of your knife with the towel to warm it up and to wet the blade. Slice the eggs in half lengthwise, one at a time, wiping the blade clean between each egg. (The warm, wet blade will give you clean cuts.) Remove the yolks to a medium bowl. Mash the yolks with a whisk. Add the mayonnaise, mustard, hot sauce if using and salt and pepper to taste. Whisk until very smooth. Transfer to a large resealable plastic bag or disposable pastry bag and snip off one corner with scissors.
  • Place the egg whites on a platter. Pipe the filling evenly into the egg whites. Top with chives and a sprinkle of paprika. Refrigerate for 20 to 25 minutes prior to serving.

12 eggs
1 jalapeno pepper, minced
1 habanero peppers, seeded and minced
¼ cup mayonnaise
1 teaspoon yellow mustard
⅛ teaspoon paprika

Steps:

  • Place the eggs into a saucepan in a single layer, and fill with water to cover the eggs by at least 1 inch. Bring the water to a boil over high heat. Cover, and remove from the heat; let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink. Peel.
  • Cut the cooled eggs in half lengthwise. Remove the yolks, and place them into a mixing bowl along with the jalapeno, habanero, mayonnaise, and mustard; mash together until smooth. Transfer the yolk mixture to a pastry bag, and decoratively squeeze into the white halves. Sprinkle with paprika to garnish.

I just got tired of the same old egg recipe. My b/f said his mom added mustard to hers, so I combined hers and mine and this is what I came up with. When I take this anywhere, I come home with an empty plate. It does not include time to boil eggs. Makes 12 egg halves.

6 hard-boiled eggs (peeled and rinsed)
2 tablespoons sweet pickle relish (optional)
1/3 cup shredded cheddar cheese
1 teaspoon prepared mustard
1 tablespoon white sugar
1/4-1/3 cup mayonnaise
4 slices bacon (cooked crisp and crumbled)
salt and pepper
paprika

Steps:

  • Split eggs lengthwise.
  • Remove yolks.
  • Put yolks into medium bowl.
  • With fork mash well.
  • Add mustard and mayonnaise.
  • Mix well.
  • Add bacon, cheese, and relish.
  • Mix well--you may need to add a little more mayonnaise.
  • Add sugar, salt, and pepper.
  • Mix well.
  • Divide egg yolk mixture between egg whites.
  • Arrange on egg platter or a nice plate.
  • Sprinkle with paprika.
  • Chill for 2 hours.
