THE CUKE
Steps:
- Thinly slice 3 limes and place in a pitcher. Juice the rest and add juice to pitcher. Add mint leaves. Slice 2 cucumbers and add, then add sugar. Muddle ingredients. Add vodka or gin. Place in refrigerator to steep 30 minutes or longer.
- Peel remaining cucumber and cut lengthwise into 6 spears.
- Fill 6 highball or other large glasses with ice. Strain mixture from pitcher into each. Top with a splash of sparkling water, garnish each glass with a sprig of mint and a cucumber spear, and serve.
THE CUKE COCKTAIL
Steps:
- In a food processor or blender blitz the cucumbers until a smooth puree. Over a bowl strain the liquid using a fine mesh strainer. Discard the pulp. In a pitcher filled with ice add the cucumber juice, vodka, lemon juice, salt and mint. Stir with a wooden spoon and serve in a martini glass. Garnish with peels.
CRISP MARINATED CUKES

- In a bowl, combine the first four ingredients; mix well. Stir in the cucumbers and onions. Cover and refrigerate for several hours or overnight.

CUKES AND ONIONS
This is a very old-fashioned recipe. My mother made this when I was a kid. It is a very refreshing dish and goes with lots of things.

Steps:
- Wash and peel cukes; slice into bowl big enough for all ingredients.
- Peel onion and slice thinly into bowl with cukes.
- Mix vinegar and water with sugar.
- Pour over cucumber and onions.
- Put lid on bowl or cover tightly with plastic wrap and refrigerate for at least 1 hour.
- Serve cold.
REFRIGERATOR DILL PICKLES
These pickles taste so fresh and have just the right amount of dill and garlic. They taste great along-side a hotdog on a bun. They also taste great alone as a healthy snack. The pickles should be good for 6 weeks. Enjoy! You can also cut cucumbers into chips if you prefer a pickle chip instead of a spear.

Steps:
- Stir water, vinegar, sugar, and sea salt together in a saucepan over high heat. Bring to a boil; remove from heat and cool completely.
- Combine cucumber spears, garlic cloves, and fresh dill in a large glass or plastic container. Pour cooled vinegar mixture over cucumber mixture. Seal container with lid and refrigerate for at least 3 days.
