3/4 cup dry bread crumbs
1/2 cup grated Parmesan cheese
4-1/2 teaspoons minced fresh parsley
3/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup butter, melted
3 tablespoons lemon juice
2 garlic cloves, minced
6 boneless skinless chicken breast halves
Dash paprika

Steps:

  • In a shallow bowl, combine the bread crumbs, Parmesan cheese, parsley, salt and pepper. In another bowl, combine the butter, lemon juice and garlic. Dip chicken in butter mixture, then roll in crumbs., Roll-up chicken jelly-roll style; place seam side down in a greased 11x7-in. baking dish. Drizzle with any remaining butter mixture; sprinkle with paprika. , Bake, uncovered, at 350° for 35 minutes or until juices run clear.

I found this recipe about 4 years ago and I have been making it ever since. It has a wonderful taste and it is so crunchy. It is definitely one of my husbands favorite chicken recopies as well as all my guests. This recipe does not get boring so it can be made again and again and trust me it will be! I hope you enjoy it!

1 chicken (cut into 1/8 can be made with skin or without I usually take off the skin)
1/2 cup mayonnaise
3/4 teaspoon salt
3/4 teaspoon paprika
3/4 teaspoon garlic
1/4 teaspoon ground pepper
1 -2 cup corn flake crumbs (however much the chicken needs)

Steps:

  • Preheat oven to 400. Wash, (skin) and dry chicken.
  • MIx the mayonnaise and the spice ingredients together is a medium size bowl.
  • Put cornflake crumbs in a separate bowl or plate.
  • Take a spoonful or mayonnaise and rub it all around each piece of chicken
  • Place each piece of chicken in the bread crumbs and roll it around making sure each piece is fully covered.
  • Place in a pan big enough to fit all the pieces of chicken.
  • Cover the pan with tinfoil and place in the oven for 40 minute.
  • Uncover chicken and put it back in the over for 20-30 ,min until it is brown on top and appears crunchy.
  • Enjoy!

3 large eggs
Coarse salt
1/3 cup all-purpose flour
3 1/2 cups fresh breadcrumbs
1 cup vegetable oil
8 thin chicken cutlets (about 1 1/2 pounds total)
Lemon wedges, for serving (optional)

Steps:

  • In a shallow dish, whisk eggs with teaspoon salt; let stand 5 minutes. In another shallow dish, season flour with 1/4 teaspoon salt. In a third shallow dish, season breadcrumbs with 1 teaspoon salt.
  • In a large cast-iron skillet or other heavy deep skillet, heat oil over medium. Meanwhile, pat chicken dry with paper towels. Coat in flour, shaking off excess, then dip in egg (letting excess drip off). Dredge in breadcrumbs, turning twice and patting to adhere.
  • Increase heat to medium-high. Working in batches, add chicken to skillet; cook, gently shaking skillet occasionally, until chicken is browned, about 4 minutes. Turn with tongs; cook until browned and opaque throughout, 2 to 3 minutes more (if browning too quickly, lower heat). Between batches, skim off brown crumbs from oil with a slotted spoon. Drain chicken on paper towels; season with salt.
