2 cups Bisquick Heart Smart mix (tm)
1 1/3 cups skim milk
2 tablespoons canola oil
1/4 cup egg substitute

Steps:

  • Combine all ingredients.
  • Pour onto hot nonstick waffle iron or greased regular waffle iron. Close lid.
  • Cook about 5 minutes or until steaming stops.

2 1⁄4 cups whole wheat flour or 2 1⁄4 cups whole wheat pastry flour or 2 1⁄4 cups Robin Hood Nutri Flour Blend
3 1⁄2 tablespoons sugar
4 1⁄2 teaspoons baking powder
3 ⁄8 teaspoon salt
cinnamon
3 eggs (1 separated)
1 1⁄2 cups 1% lowfat milk
1 teaspoon vanilla

Steps:

  • Sift dry ingredients in one bowl. Separate one of the eggs. Add the yolk and the rest of the wet ingredients together and whisk. Beat the egg white in a clean bowl until peaks form. Add the wet into the dry, mixing until just combined. Fold in the egg white. Pour into a preheated greased waffle iron, and I cook mine for 3-4 minutes with my waffle iron. This recipe yields 16 small square waffles for me (using just under 1/3 cup of batter per waffle). These freeze well.

Who doesn't love waffles with a great crunch from cornmeal, sweet tasty vitamins from apples, wholesomeness from whole wheat flour and flax, and a nice offset from spices? Mmm, these sure are nice! The egg substitute is courtesy of Recipe #104832. It adds nutrients and eliminates bad fats. One thing worth noting, though, is be sure to grease your waffle iron well before making and in between waffles! Also, be careful to cut your apples very small or your waffle iron wont like it. These freeze BEAUTIFULLY!

1/4 cup cornmeal
3/4 cup whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon allspice, cloves, and nutmeg (1/2 tsp EACH, adjust spices to your tastes)
1/2 cup nonfat plain yogurt
1 tablespoon brown sugar (more for a sweeter waffle)
1/3 cup water
2 tablespoons applesauce
1 egg white
3/4-1 cup finely diced apple, firm and tart
1 1/2 tablespoons ground flax seeds, prepared as said in step one
4 1/2 tablespoons water, prepared as said in step 1 (can be subbed for 2 eggs)

Steps:

  • Pour ground flaxseed and water together into a sauce pan, stirring to kill the lumps, then leaving to simmer until it is thickened and gelatinous (like an egg). Refrigerate while mixing the other ingredients so it cools slightly before adding it to the wet ingredients (or sub for 1 egg + 1 egg white or yolk).
  • Whip the egg white until soft peaks form.
  • In a large bowl, combine cornmeal, whole wheat flour, baking powder, baking soda, spices, and salt.
  • In a separate bowl, whisk together yogurt, brown sugar, flax+water, water, and applesauce.
  • Add to dry ingredients, Stirring in the apples and whipped egg white.
  • Bake in waffle iron, then enjoy! OR completely cool these on a cooling rack, wrap in foil, and freeze. The mornings you want these just microwave them until not so frozen, then pop them in the toaster! They are lovely and crispy.
