1 medium onion, chopped
1 tablespoon olive oil
3 cups reduced-sodium chicken broth
1 cup water
1 tablespoon brown sugar
1 tablespoon minced fresh gingerroot
1 tablespoon fish sauce or soy sauce
1 tablespoon red curry paste
1 lemongrass stalk
1 pound uncooked large shrimp, peeled and deveined
1-1/2 cups frozen shelled edamame
1 can (13.66 ounces) light coconut milk
1 can (8-3/4 ounces) whole baby corn, drained and cut in half
1/2 cup bamboo shoots
1/4 cup fresh basil leaves, julienned
1/4 cup minced fresh cilantro
2 tablespoons lime juice
1-1/2 teaspoons grated lime zest
1 teaspoon curry powder

Steps:

  • In a Dutch oven, saute onion in oil until tender. Add the broth, water, brown sugar, ginger, fish sauce, curry paste and lemongrass. Bring to a boil. Reduce heat; carefully stir in shrimp and edamame. Cook, uncovered, for 5-6 minutes or until shrimp turn pink., Add the coconut milk, corn, bamboo shoots, basil, cilantro, lime juice, lime zest and curry powder; heat through. Discard lemongrass.

SIMPLE THAI-STYLE LEMONGRASS SHRIMP SOUP



Simple Thai-style Lemongrass Shrimp Soup image

You won't believe how easy and good it is. Try this and you may never be able to eat a shrimp soup in a Thai restaurant again. This is a blend of two recipes from a really good Thai cookbook, adapted to use easier-to-find ingredients (as recommended in the book, ginger instead of galangal, lime juice instead of lime leaves) and simplified a little. You can make it also with thinly sliced chicken breast instead of shrimp if you add the chicken about the time you add mushrooms and tomatoes and cook everything for a bit longer.

1 stalk lemongrass
6 slices gingerroot
1 lime
2 small red chilies
4 cups water
4 tablespoons fish sauce
1 teaspoon chili paste with garlic
6 ounces tomatoes, cut into chunks
4 ounces mushrooms, sliced (I use white or baby bella)
25 small cooked shrimp
2 tablespoons cilantro

Steps:

  • Cut off the dry end and a few top leaves of the lemongrass stem.
  • Bruise the stem with the handle of a knife and cut into 1-inch long pieces.
  • Reserve.
  • Bruise the chilies, cut them in half, scoop out and discard the seeds.
  • Reserve the chilies.
  • Bring the water to boil.
  • Add lemongrass and ginger, and squeeze out half the lime into the water.
  • Boil 2-3 minutes.
  • Add fish sauce and chili-garlic paste.
  • Cook for another minute.
  • Add tomatoes and mushrooms.
  • Cook for 2-3 minutes (or longer, until it boils and the tomatoes start to fall apart).
  • Squeeze the other half of the lime into the soup.
  • Take off the heat.
  • Add the chilies and let stand a few seconds, then add the shrimp.
  • Garnish with cilantro and serve immediately.
  • Leave lemongrass, ginger and chilies in the soup and either try to pour the soup without them, or, better, pour the soup with chunks of lemongrass and ginger in it and warn your guests not to eat these.
  • They do add flavour when left in the soup while you eat it.

  • Add mushrooms and jalapeno peppers.
  • Cook for 5 minutes.
  • Add shrimp and cook till shrimp is done.
  • Add green onions and lime juice.

8-ounces dried rice noodles (flat, fettuccine-shaped)
1 pound medium shrimp
Salt
Few drops sesame oil
2 quarts chicken stock, preferably fresh
6 thin slices fresh galangal or fresh ginger
6 garlic cloves, smashed
2 stalks lemongrass (bottom third only, sliced thinly on the bias)
5 shallots, sliced
4 small serrano chile peppers, coarsely shredded, including seeds
1/4 cup Thai or Vietnamese fish sauce
3 teaspoons sugar
1/4 cup whole fresh cilantro leaves
1/4 cup lightly chopped Asian basil leaves
1/3 cups freshly squeezed lime juice
1 teaspoon freshly ground black pepper

Steps:

  • Soak the noodles in hot water to cover and let stand, about 30 minutes, until soft.
  • Peel the shrimp, reserving the shells. Cut them in half lengthwise, then toss with 1/4 teaspoon salt and the sesame oil, and refrigerate.
  • Bring the stock to a boil with galangal, garlic, and lemongrass. Turn the heat to low and simmer for 35 minutes. Add the shrimp shells and simmer for another 15 to 20 minutes, skimming if necessary. Strain the stock and bring to a boil. Turn heat to low and simmer with the shallots and chiles. Simmer for 15 minutes and add 2 teaspoons of salt, the fish sauce, and the sugar. Continue to simmer.
  • Meanwhile, drain the noodles well and divide among four to eight bowls. Then add the shrimp to the simmering broth. Turn off the heat and stir in the fresh herbs and lime juice.
  • Divide the soup among the soup bowls, sprinkle over the black pepper, and serve.

1/4 cup lime juice
4 teaspoons Thai fish sauce
1/4 cup minced fresh green chilies
2 tablespoons very finely-minced lemongrass, from tender inner part of stalk, plus 2 tablespoons thinly-sliced
2 teaspoons vegetable oil
4 cups chicken stock
2 tablespoons crumbled dried Kefir lime leaves (available in Asian markets or specialty food stores)
2 tablespoons finely-minced fresh coriander roots and stems
2 thick slices galanga root (available in Asian markets or specialty food stores)
2 medium shallots, coarsely chopped
2 teaspoons dried tamarind pulp (available in Asian markets or specialty food stores)
1/2 cup straw mushrooms, rinsed
2 heaping tablespoons fresh coriander leaves
2 teaspoons minced scallion

Steps:

  • In a bowl combine shrimp, 2 tablespoons of the lime juice, 2 teaspoons of the fish sauce, 1 tablespoon of the green chilies, and 1 teaspoon of the finely-minced lemongrass. Mix well and let marinate while you prepare the soup.
  • In a large saucepan heat oil over high heat. Add shrimp shells and cook, stirring occasionally, 5 minutes, or until shells have begun to brown. Add chicken stock, 2 tablespoons of the green chilies, the 2 tablespoons sliced lemongrass, kefir lime leaves, coriander roots and stems, galanga root, shallots and tamarind pulp; bring to a boil. Reduce heat to simmering, cover and cook 30 minutes.
  • Into a clean saucepan strain soup through a fine sieve, pressing on solids to extract as much liquid as possible; discard solids. Heat over medium-high heat and add remaining 2 tablespoons lime juice. remaining 2 teaspoons fish sauce, remaining 1 tablespoon green chilies, remaining teaspoon minced lemongrass, straw mushrooms, coriander leaves, and scallions; stir well. To serve, add shrimp in their marinade and cook 30 seconds or until shrimp turn pink and are cooked through.

4 ounces straw mushrooms
1/2 cup carrot, shredded

  • Saute ginger, onion, chiles and lemon grass until soft. Deglaze pan with fish sauce. Add chicken stock and lime leaves. Simmer and reduce the liquid by 20 per cent. Add vinegar, basil and pepper. Check for seasoning. Strain the soup. Add sauteed shiitakes and fresh enoki mushrooms. Ladle soup in soup plates. Garnish with shrimp toast and scallions.
  • In a food processor, puree first 5 ingredients. Check for seasoning. Fold in scallions, cilantro and jicama. Spread the mixture on bread, cut in half on the diagonal and sprinkle with sesame seeds. Heat a deep fryer to 375 degrees F and fry until golden brown.

THAI SHRIMP AND LEMONGRASS SOUP (TOM YUM SOUP)



Thai Shrimp and Lemongrass Soup (Tom Yum Soup) image

This is the best Tom Yum Soup recipe. To maximize the citrus flavor of the fresh lemongrass, crush the base and stem with the flat side of a chef's knife before slicing or before adding it to a recipe. If using larger pieces of lemongrass, remove them before serving.

4 clove garlic, coarsely chopped
2 green serrano chilies, seeded and chopped
3 Tbsp fresh cilantro, chopped
1 1/2 tsp peppercorns, coarsely ground
8 to 10 fresh shiitake mushrooms
3 lemongrass stalks
4 fresh galangal slices, each 1/4-inch thick
2 Tbsp peanut oil (or canola oil)
4 medium shallots, thinly sliced
8 c low-sodium chicken stock
1 1/2 tsp finely grated lime zest
1/4 c fish sauce
1/4 c fresh lime juice
1 Tbsp chopped palm sugar or brown sugar
1 lb shrimp, peeled and deveined
1/4 c shredded fresh thai basil (for garnish)
1/4 c shredded fresh cilantro (for garnish)

Steps:

  • 1. In a mortar, combine the garlic, chilies, cilantro stems and pepper, and grind together with a pestle until a thick paste forms, adding 1 Tbs. water if needed to facilitate grinding. Alternatively, combine all the ingredients in a mini food processor and process to a paste. Set the chili paste aside.
  • 2. Remove and discard the stems from the mushrooms. Thinly slice the caps. Trim and crush the lemongrass stalks. Smash the galangal slices with the side of a chef's knife.
  • 3. In a stockpot over high heat, warm the oil. Add the mushrooms and sauté until they begin to brown, about 2 minutes. Stir in the lemongrass, galangal slices and shallots, and sauté until fragrant, about 2 minutes more.
  • 4. Pour in the stock, add the lime zest and bring to a boil. Reduce the heat to medium, stir in the chili paste and simmer for 3 to 4 minutes. Add the fish sauce, lime juice and palm sugar and stir to mix well. Simmer for 5 minutes to allow the flavors to develop.
  • 5. Just before serving, stir in the shrimp. As soon as they begin to turn color and are opaque, after about 3 minutes, remove the soup from the heat. Ladle the soup into individual bowls, garnish with the shredded basil and cilantro, and serve immediately.

2 teaspoons sugar
1 lb medium shrimp, raw, without tails, peeled and deveined

1 freshly squeezed lemon, juice of (3 to 4 T.)

Steps:

  • *You can chop the lemongrass (see the how-to in the recipe description) and cilantro as the chicken broth simmers*.
  • Put the chicken broth, sriracha sauce, celery and carrot in a med. saucepan and bring to a simmer.
  • Add the lemongrass, fish sauce, sugar and and simmer another good 5 minutes or so.
  • Stir in the shrimp and rice and simmer just until the shrimp are pink and opaque, about 2-3 minutes more.
  • Pull the saucepan off of the heat and stir in the lemon juice and cilantro.

1 tbsp coconut oil or vegetable oil
3 1/2 cups unsweetened coconut milk
1/4 cup plus 2 tbsp dark brown sugar
1/4 cup Asian fish sauce
1/4 cup tamarind concentrate
6 fresh kafir lime leaves
3 tbsp fresh lime juice
salt and fresh ground pepper
3/4 lb medium shrimp, shelled and deveined

Steps:

  • 1. In a blender, combine the chiles, lemongrass, garlic, ginger, shallot, and 1/4 cup of water and puree until smooth. 2. In a medium saucepan, heat the coconut oil. Add the lemongrass puree and cook over moderately high heat, stirring, until fragrant, about 2 minutes. Whisk in the coconut milk, borwn sugar, fish sauce, tamarind, lime leaves, and 1 1/2 cups of water and bring to a gentle boil. Simmer over low heat, stirring occasionally, until the soup is flavorful and slightly reduced, about 15 mins. 3. Stir the lime juice into the soup and season with salt and pepper. Add the shrimp and simmer until slightly curled and just cooked through, about 1 minute. Ladle the soup into bowls, add the rice noodles and serve.

• 1 tablespoon canola oil
• 3 tablespoons minced fresh ginger
• 1 small onion, thinly sliced
• 5 cups lower-sodium chicken broth
• ¼ teaspoon red pepper flakes
• 1 (11/2-pound) head Napa cabbage, thinly sliced (about 3 cups)
• 2 tablespoons Asian fish sauce
• 2 teaspoons grated lime zest
• ¼ cup fresh lime juice
• ½ cup chopped fresh cilantro (optional)

Steps:

  • Heat oil in a large saucepan over medium heat. Add ginger and onion; cook, stirring often, until fragrant, about 3 minutes. Add broth and red pepper flakes; increase heat and bring soup to a low boil. Add cabbage and cook 2 minutes. Add shrimp, fish sauce, lime zest, and lime juice; cook just until shrimp turn pink, about 1 minutes. Serve hot, sprinkle with cilantro, if using.

8 cups chicken stock
4 cups water
1 tablespoon green curry paste
4 garlic cloves, smashed
2 inches ginger, peeled and sliced
1 teaspoon coriander seed, crushed
2 cups cilantro (to garnish) or 2 cups Thai basil, plus some extra (to garnish)
1 cup jasmine rice
3/4 cup medium shrimp, peeled and deveined
1 (14 ounce) can coconut milk
1/4 lb snow peas, trimmed and cut into strips
2 tablespoons fish sauce
2 tablespoons fresh lime juice
salt
lime wedge (to garnish)

Steps:

  • Combine stock, water, curry paste, garlic, ginger, coriander, cilantro in a stockpot.
  • Simmer until ginger is softened, about 15 minutes.
  • Strain in a sieve lined with paper towels, and discard solids.
  • Return to stockpot.
  • Add rice, simmer uncovered 15 minutes.
  • Add shrimp and cook through until it turns pink, 3-4 minutes.
  • Add coconut milk, fish sauce and snow peas, cook 2-3 minutes more.
  • Remove from heat, stir in lime juice.
  • Garnish with lime wedges and extra basil or cilantro.

8-ounces dried rice noodles (flat, fettuccine-shaped)
1 pound medium shrimp
Salt
Few drops sesame oil
2 quarts chicken stock, preferably fresh
6 thin slices fresh galangal or fresh ginger
6 garlic cloves, smashed
2 stalks lemongrass (bottom third only, sliced thinly on the bias)
5 shallots, sliced
4 small serrano chile peppers, coarsely shredded, including seeds
1/4 cup Thai or Vietnamese fish sauce
3 teaspoons sugar
1/4 cup whole fresh cilantro leaves
1/4 cup lightly chopped Asian basil leaves
1/3 cups freshly squeezed lime juice
1 teaspoon freshly ground black pepper

Steps:

  • Soak the noodles in hot water to cover and let stand, about 30 minutes, until soft. Peel the shrimp, reserving the shells. Cut them in half lengthwise, then toss with 1/4 teaspoon salt and the sesame oil, and refrigerate. Bring the stock to a boil with galangal, garlic, and lemongrass. Turn the heat to low and simmer for 35 minutes. Add the shrimp shells and simmer for another 15 to 20 minutes, skimming if necessary. Strain the stock and bring to a boil. Turn heat to low and simmer with the shallots and chiles. Simmer for 15 minutes and add 2 teaspoons of salt, the fish sauce, and the sugar. Continue to simmer. Meanwhile, drain the noodles well and divide among four to eight bowls. Then add the shrimp to the simmering broth. Turn off the heat and stir in the fresh herbs and lime juice. Divide the soup among the soup bowls, sprinkle over the black pepper, and serve.

I created this recipe by pulling together a couple different soup ideas. This October, I brought this to a soup party, and it was a huge success - everyone loved it! It makes enough to fill a 6-quart slow cooker with a bit extra leftover.

2 cups uncooked jasmine rice
1 tablespoon olive oil
1 tablespoon butter
2 onions, chopped
salt and pepper
1 yellow pepper, chopped
4 garlic cloves, minced
2 ounces maesri prik khang curry paste (one half can)
1 tablespoon lime juice
2 (14 1/2 ounce) cans diced tomatoes
3 (13 1/2 ounce) cans chaokoh coconut milk
1 (14 ounce) can savoy coconut cream
4 cups chicken broth
2 lbs raw deveined tail off shrimp

Steps:

  • Cook rice according to package directions - usually 2 cups jasmine rice to 3 cups water.
  • In a large stock pot, melt butter and olive oil, and saute onions on high heat until slightly softened with hint of brown.
  • Add salt and pepper to taste and continue to saute.
  • Add yellow pepper and garlic and saute for just a minute - make sure garlic doesn't brown or it will be bitter.
  • Add 2 ounces (½ can) of curry paste and stir over high heat for a minute or two.
  • Add tomatoes, lime juice, coconut milk, coconut cream, and chicken broth; mix well.
  • Bring to a gentle boil and add raw shrimp. (I used frozen shrimp and added it frozen to the soup without thawing to keep it as fresh as possible.).
  • Once shrimp turns opaque serve right away or ladle into slow cooker and bring to your next soup party or potluck.
  • Can be garnished with cilantro if you like.

1 1/4 cups Mashed Sweet Potatoes
1 cup Onion and Garlic Mix
1 1/2 cups low-sodium chicken broth
1 teaspoon green curry paste
1/2 teaspoon ground ginger
1 cup Lime Shrimp
1 cup frozen peas
Juice of 2 limes, divided
Slices from 1/2 lime

Steps:

  • Blend Mashed Sweet Potatoes , and broth in a blender until smooth; pour into a medium pot over low heat. Whisk in curry paste and ginger. Cook 10 minutes.
  • Quick tip:
  • While cooking, arrange the enchilada bake and prepare the topping for the shepherd's pie.
  • Turn heat to medium. Add Lime Shrimp and peas; stir frequently until shrimp are cooked through, about 5 minutes. Remove from heat; add lime juice (from 1 1/2 limes). If not eating immediately, pour into an airtight container and freeze. Otherwise, serve, garnished with lime slices.
  • To reheat:
  • Microwave on high 4 to 5 minutes, stirring halfway through. Stir in juice of 1/2 lime.

This is a quick-fix recipe using convenience products you can usually find in your supermarket. When I made it the first time, I bought the coconut milk, but forgot to add it. I have made it now both with and without, and we prefer it without the coconut milk. You might want to taste it before you add the coconut milk yourself and see if you want to stop there. The recipe is from Cooking Light magazine, and is only mildly spicy.

1 cup bottled clam juice
1 tablespoon fish sauce
2 teaspoons instant minced garlic

3/4 teaspoon red curry paste
1 (8 ounce) package presliced mushrooms
1/2 lb large shrimp, peeled and deveined
1/2 lb boneless skinless chicken breast, cut into 1 inch pieces
1 (3 ounce) package trimmed snow peas
1/4 cup fresh lime juice
2 tablespoons sugar
2 tablespoons sliced green onion tops
2 tablespoons chopped fresh cilantro
1 (13 1/2 ounce) can light coconut milk

Steps:

  • Combine chicken broth, clam juice, fish sauce, minced garlic, minced ginger, and red curry paste in a large Dutch oven, stirring with a whisk.
  • Add mushrooms, bring to a boil.
  • Reduce heat and simmer 4 minutes.
  • Add the shrimp, chicken and snow peas; bring to a boil.
  • Cover, reduce heat, and simmer 3 minutes.
  • Stir in lime juice, sugar, green onions, cilantro and coconut milk.
