ROASTED LEMONGRASS CHICKEN WITH SWEET LIME SAUCE



Roasted Lemongrass Chicken With Sweet Lime Sauce image

Thai lemongrass chicken is fragrant and moist and imbued with the flavors of lemon and lime. It is roasted in the oven.

4 quarter chicken pieces, or 1 small whole chicken
2 stalks fresh lemongrass
1/4 cup onion (finely chopped)
4 cloves garlic (minced)
1 thumb-size piece galangal or ginger (grated or thinly sliced)
2 fresh red chilies (minced)
2 tablespoons fish sauce
2 tablespoons soy sauce
1 tablespoon brown sugar
1/2 can thick coconut milk
Lime wedges as garnish
For the Sauce:
1 cup water
Juice of 1/2 a lime
2 tablespoons rice vinegar
1 thumb-size piece galangal or ginger (minced or grated)
2 cloves garlic (minced)
3 tablespoons fish sauce
1/3 cup honey
1 heaping teaspoon cornstarch powder (dissolved in 3 tablespoons water)

Steps:

  • Thinly slice the lemongrass and then chop it up as finely as you can (alternatively you can use a food processor or chopper for the mincing part). Do the same with the onion, garlic, galangal/ginger, and chili.
  • Set chicken pieces in a roaster or flat baking pan, and rub these herbs all over the skin, all sides. Sprinkle lightly with salt and pepper.
  • Cover and leave in the refrigerator at least 1/2 hour or up to six hours to marinate.
  • Preheat oven to 350. While the oven is warming up, combine fish sauce, soy sauce, brown sugar, and coconut milk. Stir together until sugar is dissolved.
  • Drizzle this over chicken, turning to saturate. Try to get as many of the herbs on the skin of chicken as possible.
  • Add 1/4 cup water to the roaster/pan in and around the chicken.
  • Cover and set in the middle of your oven to bake 45 minutes.
  • Remove cover and continue roasting 20 minutes until chicken turns golden-brown (whole chicken will take longer).
  • Top with slices of fresh lime and chili, if desired, or just serve as is.
  • Accompany with plenty of Thai jasmine rice and the sweet lime sauce (below) on the side.
  • While chicken is roasting, make the side sauce. In a saucepan, add all sauce ingredients except cornstarch. Bring to a boil, then lower the heat to a simmer.
  • Taste test for sweetness and saltiness, adding more honey if not sweet enough, or more fish sauce (instead of salt) as desired. If you prefer a spicy sauce, add some fresh chili or chili sauce.
  • Add cornstarch and water mixture. Stir until sauce thickens. Serve with the roasted chicken and enjoy!

This is really flavorful and juicy roast chicken. Even my husband, who is growing tired of chicken, picks the bird clean when I make this one. From Fine Cooking, #22. Marinating time included in the prep time.

1/2 cup finely chopped lemongrass (3 or 4 stalks)
2 tablespoons finely chopped shallots
1 tablespoon finely chopped garlic
4 1/2 teaspoons fish sauce
1 tablespoon soy sauce
1 tablespoon crushed red pepper flakes
1 1/2 teaspoons kosher salt
2 tablespoons granulated sugar
1 (3 -4 lb) whole chickens, rinsed and patted dry
2 tablespoons finely chopped fresh cilantro
1 tablespoon vegetable oil

Steps:

  • In a nonreactive dish large enough to hold the chicken, combine all but 2 Tbs. of the lemongrass with all of the shallots, garlic, fish sauce, soy sauce, red pepper flakes, salt, and sugar. Add the chicken and turn it to coat, tucking some of the marinade underneath its skin. Pour any excess marinade into the bird's cavity. Marinate in the refrigerator for at least 3 hours, preferably overnight. Bring the chicken to room temperature before cooking it.
  • Heat the oven to 350°F Put the chicken, breast side down, on a rack in a roasting pan. Cook for 40 minute Turn the bird over and roast until the chicken is cooked and nicely browned, 20 to 30 minute The sugar in the marinade may cause the pan juices to burn, but this won't affect the chicken's flavor.
  • About 10 minute before the chicken is done, combine the remaining 2 Tbs. lemongrass with the cilantro and vegetable oil. Using a spoon, rub the mixture on the bird, spreading it evenly; continue roasting. The chicken is done when its juices run clear. Let the chicken sit for 10 minute out of the oven before carving.

THAI GREEN CURRY ROAST CHICKEN

Try this twist on a traditional Sunday roast chicken with our Thai green curry version, with all the aromatic umami flavours of Asian cuisine

1 whole chicken (about 1.5kg)
2 lemongrass stalks , bashed
2 limes , 1 halved, 1 cut into wedges
2cm piece ginger , skin on and squashed once with the flat part of a knife
2 tbsp Thai green curry paste
1 tsp sunflower oil
1 tsp brown sugar
400g can coconut milk
2 tsp fish sauce
small pack coriander , chopped (optional)
1 red chilli , sliced, to serve
cooked rice and greens, to serve

Steps:

  • Sit the chicken in a flameproof roasting tin or shallow casserole dish and stuff the lemongrass, lime halves and ginger in the cavity. Mix half the curry paste with the oil and use your hands to smear the curry paste all over the chicken and under the skin. Can be prepared up to a day ahead and left to marinate, covered, in the fridge. Take out an hour before roasting.
  • Heat oven to 200C/180C fan/gas 6. Cover the tin with foil and roast for 40 mins, then remove the foil and roast for another 30 mins until the chicken is cooked through and golden. Lift the chicken, draining the roasting juices back into the tin, and sit on a board or dish that will catch the juices. Use a pair of tongs to remove the lime, lemongrass and ginger from the cavity and place them in the tin with the remaining curry paste and brown sugar.
  • Place the tin back on the heat and sizzle everything together, squashing the lime with the back of a spoon until everything is sticky. Pour in the coconut milk and bring to a simmer, stirring well, then add any resting juices and the fish sauce. Simmer again briefly, then sit the chicken back in the tin and scatter with coriander, if using, and the chilli. Bring the chicken to the table and serve with rice and greens with the curry sauce spooned over, and extra lime wedges on the side for squeezing over.

A simplistic recipe that is mild in nature , but is ready to be spiced up at the table. Easy to roast in the oven, but can also be grilled outdoors. Goes well with my recipe for (recipe #30195), which is fiery, yet very delicious!

2 garlic cloves, peeled
2 teaspoons black peppercorns
2 teaspoons kosher salt
5 cilantro, roots (with some stem attached)
2 stalks lemongrass, white part only, cut into 1-inch pieces
1 lime (juice of)
3 lbs skinless chicken thighs (with bone)
1/2 cup fresh cilantro stem

Steps:

  • In a mortar or spice mill, grind garlic, peppercorns, cilantro roots and salt and set aside in a large dish or resealable plastic bag.
  • Using spice mill or food processor, pulse lemongrass a few times until it is finely shredded and add to ground spices.
  • Mix in lime juice, mixing well.
  • Add chicken to mixture and work mixture into flesh, using your hands, and allow to marinate for 6 hours or overnight.
  • Preheat oven to 400°F.
  • Roast chicken in a pan with a drainage rack for 40-45 minutes or until juices run clear.
  • Serve garnished with fresh cilantro sprigs, if desired.
  • Pass Thai red chile sauce (nam prik dang) (can use recipe# 30195) at the table, and serve with steamed jasmine rice.
