1 cup all-purpose flour
1 tablespoon seasoned salt
1 teaspoon salt
1 teaspoon pepper
3/4 cup 2% milk
8 bone-in chicken thighs (about 3 pounds), skin removed
3 tablespoons olive oil
1 medium onion, chopped
2 jalapeno peppers, seeded and chopped
2 cans (8 ounces each) tomato sauce
1 cup water
1 tablespoon chili powder
2 teaspoons garlic powder
2 teaspoons ground cumin

Steps:

  • In a shallow bowl, combine the flour, seasoned salt, salt and pepper. Place milk in a separate shallow bowl. Coat chicken with flour mixture, then dip in milk and coat again with flour mixture., In a large skillet, brown chicken in oil in batches. Transfer to a greased 13x9-in. baking dish. , In the same skillet, saute onion and jalapenos until tender. Add the tomato sauce, water and spices. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until thickened, stirring occasionally. Pour over chicken., Cover and bake at 350° for 30-35 minutes or until a thermometer reads 170°-175°. Freeze option: Place cooled chicken with sauce in freezer containers and freeze. To use, partially thaw in refrigerator overnight. Heat through in a covered skillet, gently stirring; add a little broth or water if necessary.

I LOVE boneless skinless chicken thighs, so I'm always looking for new and different ways to utilize them. This was born of my love of Mexican food.

Number Of Ingredients 14

4-8 boneless skinless chicken thighs (depending on size)
1 can(s) 15 oz. diced tomatoes, no salt added
1/2 c water or chicken stock
2 tomitallos
1 pablano pepper
1 small sweet onion
1 jalapeno
1 tsp granulated garlic
2 tsp cumin
2 Tbsp chili powder
1 tsp paprika
1 Tbsp worchestshire sauce
1/2 tsp lemon juice
rice, opt

Steps:

  • 1. Cut pablano and jalapeno peppers, tomatillos and onion in half. Place on a baking sheet and place under a low broiler for about 7-10 just to char slightly.
  • 2. Place charred veggies in a food processor and pulse just a few times. You want chopped veggies, not pureed.
  • 3. Season chicken on both sides with your favorite seasonings, I like to use granulated garlic and onion powder and black pepper. Lightly brown on both sides in about 1 tablespoon of olive oil.
  • 4. Pour charred veggies over chicken.
  • 5. To you skillet add canned tomatoes, 1/2 c. of water or chicken stock, chili powder, cumin, paprika, granulated garlic, Worcestershire and lemon juice and mix well.
  • 6. Simmer uncovered for about 30 min.
  • 7. Serve over spanish rice, top with a Mexican crumbling cheese.
  • 8. NOTE: This can also be cooked in a slow cooker and the chicken shredded, add uncooked instant rice, or pre-cooked long grain rice to pot once chicken is done.

2 pounds chicken thighs, boneless and skinless
Kosher salt and freshly ground black pepper

1 teaspoon canola oil
1 1/4 cups Chipotle Vinegar BBQ Sauce, recipe follows
4 slices Texas toast, brushed with butter and toasted until golden
Southern White Sauce, recipe follows
Pickled Red Onions, recipe follows:
2 cups ketchup
1/3 cup molasses
1/3 cup cider vinegar
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
2 tablespoons Worcestershire sauce
1 teaspoon hot pepper sauce
1/4 teaspoon ground black pepper
1 medium clove garlic, grated
1 medium Vidalia onion, peeled, quartered and pureed in a food processer, solids strained and juice reserved (about 1/4 cup onion juice)

1 chipotle pepper in adobo
1 to 2 tablespoons adobo sauce, depending on spice desired
1 cup mayonnaise
1/4 cup apple cider vinegar
1 tablespoon lemon juice
Kosher salt and freshly cracked black pepper
3/4 cup red wine vinegar
2 tablespoons sugar
1/2 teaspoon kosher salt
Red pepper flakes
1 bay leaf
1 large red onion, peeled, halved and sliced into half-moons, 1/4-inch thick
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat a 12-inch skillet over medium heat. Sprinkle both sides of the chicken thighs with salt and pepper. Add the oil to the skillet, and then the chicken thighs. Sear both sides of the chicken until golden in color, about 3 minutes per side.
  • Lower the heat and add in the Chipotle Vinegar BBQ Sauce. Bring to a simmer, and then place in the oven to finish cooking the chicken, 10 to 15 minutes. Let the chicken cool a bit in the sauce. Then, using two forks, shred the chicken into medium pieces and hold in the sauce until ready to serve.
  • Lay down the Texas toast and put a nice amount of the saucy, shredded chicken on top. Artfully drizzle Southern White Sauce on top of the chicken and then pile on the Pickled Red Onions. Pick it up or fork and knife it, either way it's delicious.
  • Add the ketchup, molasses, vinegar, 1/4 cup water, mustard, oil, Worcestershire sauce, hot pepper sauce, black pepper, garlic, onion juice, chipotle pepper and adobo sauce together in a saucepot and bring to a boil over medium-high heat. Once at a boil, reduce to a simmer and cook for 20 minutes to combine the flavors. Remove from the heat and cool to room temperature.
  • Combine the mayonnaise, cider vinegar, lemon juice and some salt and pepper in a bowl. Use immediately or store in airtight container in fridge for up to 4 days. Great as a salad dressing too!
  • To a saucepot, add the vinegar, 1/2 cup water, sugar, salt, red pepper flakes to taste and bay leaf and bring to a boil. Add the onions to a heatproof container and pour the boiling pickling liquid over them. Let the onions sit for at least 30 minutes. Right before serving, add in the parsley.

4 chicken breasts
1/2 cup all-purpose flour
1/8 teaspoon cayenne pepper
1/2 teaspoon paprika
Salt and pepper, to taste
1/4 cup vegetable oil
1 onion
2 small garlic cloves
1 cup sour cream
1/2 cup chicken stock
1/4 chopped green onions, including green part

Steps:

  • Clean chicken breasts and dry well. In a shallow baking dish, combine the flour, cayenne pepper, paprika, salt, and pepper. Dredge chicken breasts in flour mixture to coat. Shake off excess. In a large skillet heat 1/4-inch vegetable oil over medium heat. Add chicken and brown well, about 2 minutes on each side. Remove from pan and set aside. Pour excess oil from pan, leaving a thin layer. Add onions and garlic, saute, stirring occasionally, until translucent, about 3 to 5 minutes. In a bowl combine sour cream, chicken stock and green onions and mix well. Transfer chicken back to skillet, pour sour cream mixture over it. Bring to a simmer and cook, covered, until done, about 10 minutes.;
