I make this at Christmas. It is one of our family's favorites. Everyone who trys it loves it. It's so easy and soooo good. This is super moist and makes a delicious dessert or serve for hoilday gethetings.

Number Of Ingredients 9

1 yellow cake mix
1/2 c melted butter
3 egg
1 c shredded coconut
1 c chopped pecan
2 c powdered sugar
1 tsp vanilla extract
1/2 tsp almond extract
8 oz cream cheese

Steps:

  • 1. Mix together cake mix, 1/2 cup melted butter, and 1 egg, after mixing place the mixture in a 9x13" baking pan and pat down on all sides to fill the pan.
  • 2. Sprinkle with coconut and pecans over the top of mixture.
  • 3. Next mix the following ingredients and pour over the cake: 2 cups powder sugar, 2 eggs, 1 teaspoon vanilla, 1/2 teaspoon almond extract and 8 oz of cream cheese.
  • 4. bake at 300 degreese for ( one ) hour . Let cool and cut into bars.

Number Of Ingredients 8

1 (15.25-ounce) box lemon cake mix
1 cup (2 sticks) unsalted butter, melted
3 large eggs
4 ounce cream cheese, softened
4 ounce mascarpone cheese, softened
2 teaspoon vanilla extract
1 teaspoon lemon zest
16 ounce confectioners' sugar

Steps:

  • Preheat the oven to 350°F. Lightly coat a 9 x 13-inch baking dish with cooking spray.
  • In a stand mixer fitted with the paddle attachment, combine the lemon cake mix, half the melted butter, and 1 of the eggs. Mix until a consistency of cookie dough is reached.
  • Press into the bottom of the baking dish in an even layer.
  • In a large bowl, beat the cream cheese and mascarpone cheese until smooth. Add the remaining 2 eggs, remaining melted butter, the vanilla, and the lemon zest. Mix well.
  • Slowly add the confectioners' sugar, scraping the bowl down as you go, until light and fluffy.
  • Pour the mixture over the cake base.
  • Bake for 40 to 45 minutes, until the top is lightly golden and the crust is starting to crack.
  • Cool and cut into bars to serve.
