SWEET POTATO CRANBERRY BAKE image

1 (40-ounces) cen sweet potatoes, drained
1 (8-ounce) can crushed pineapple, drained
2 Tbsp butter, melted
1/4 tsp salt
1/8 tsp nutmeg
Dash of black pepper
1 large egg
1 (16-ounce) can whole berry cranberry sauce

Steps:

  • Wash hands. Heat oven to 350 degrees. Combine sweet potatoes and pineapple in a large bowl; mash with potato masher. Stir in butter, salt, nutmeg, pepper, and egg until well mixed. Measure out 1 cup of cranberry sauce; swirl it into the sweet potato mixture. Coat 1-quart casserole with non-stick cooking spray. Spoon sweet potato mixture into bowl. Top with remaining cranberry sauce. Bake for 40 minutes.
