MICROWAVE TEXAS BROWNIES
Chocolate Texas Brownies yummy!I used to make these with my daughter when she was younger because we used the microwave to bake them. They are really tasty. It was a lot of fun when she would help me bake. Miss those days.

- 1. In a large bowl combine flour and sugar.In a microwave dish combine butter,shortening,coffee,(or water) and cocoa.
- 2. microwave on high for 2 minutes or until boiling. Pour the mixture over the flour mixture.stir and blend together.
- 3. add butter,milk,eggs,baking soda,and vanilla. Mix well
- 4. pour in to microwavable 9x11 dish
- 5. microwave at medium power for 18-20 minutes.Turn dish every 4-5 minutes until brownies test done.They may seem soft on the surface. It does not mean they are not cooked.
- 6. make frosting in microwavable dish. combine butter,cocoa and milk. microwave on high for 2 minutes and stir once while cooking.Take out. add sugar and vanilla blend well. pour warm frosting over warm brownies.cool and cut in to bars.

- 1. In a large mixing bowl, combine flour and sugar.
- 2. In a microsafe dish, combine butter, shortening, coffee or water and cocoa.
- 3. Microwave at HIGH power for 2 minutes or until just boiling.
- 4. Pour boiling mixture over flour mixture. Stir to blend. Add buttermilk, eggs, baking soda and vanilla.
- 5. Pour mixture into a microsafe 9-by-11-inch baking dish.
- 6. Microwave at MEDIUM HIGH power for 18 minutes, turning dish every 4 to 5 minutes until brownies test done. They may still appear soft on the surface.
- 7. Prepare frosting: In a microsafe dish, combine the butter, cocoa and milk.
- 8. Microwave at HIGH power for 2 minutes, stirring once. Add powdered sugar and vanilla. Stir to blend.
- 9. Pour warm frosting over hot brownies.
- 10. Let cool. Cut into bars.

- In a bowl, beat sugar, eggs, vanilla and salt on medium speed for 1 minute. Add butter; beat until blended. Combine flour and cocoa. Gradually add to sugar mixture; mix well. Stir in walnuts. Transfer to a greased microwave-safe 8-in. square dish. Microwave, uncovered, on high for 3-4 minutes, rotating every 1 minute or until a moist area about 1-1/4 in. in diameter remains in the center (when touched, brownie will cling to your finger while area underneath will be almost dry). Make these easy, fudgy brownies in under 15 minutes in the microwave. They're ideal when you need a quick and indulgent dessert.

- Cut the butter into small pieces. Put in a 20 x 20cm microwavable glass or ceramic dish and cook in 20-second bursts in the microwave until melted. Remove, swirl it around the dish to coat the sides, then tip it into a mixing bowl.
- Add the sugar to the bowl and, using a hand or electric whisk, whisk vigorously until the mixture is creamy and fully incorporated into the melted butter.
- In a jug, stir the vanilla extract into the milk along with the beaten eggs. Whisk this, a little at a time, into the sugar and butter mixture, ensuring it's thoroughly incorporated before adding more.
- Sift the flour and cocoa powder together, then fold gently into the cake batter. Finally, stir in the milk chocolate chips.
- Tip the whole mix into the buttered dish and smooth using a spatula to fill the dish. Cook for 5 mins or until the brownies are well-risen and slightly firm to touch. Don't worry if they're still a bit soft in the centre; they will continue to cook for several minutes once out of the microwave.
- Put the hot dish onto a cooling rack and leave for at least 20 mins to firm up. Cut into 8 squares. Will keep in an airtight container for three days.

This chocoholic's favorite brownie. The recipe was shared with me by an ex-MIL over 25 years ago. Good recipes, unlike marriages, never die.

- Brownie: Preheat oven to 400°; grease an 11" x 17" jelly roll pan.
- Mix sugar and flour in a bowl; in a saucepan bring to boil the butter, shortening, water, cocoa and salt; pour cocoa mixture over flour mixture and stir until combined.
- Beat in buttermilk, baking soda, eggs and vanilla; pour into baking pan and bake for 15 minutes, until center is barely set; DO NOT OVERBAKE; the center of the brownie will be slightly puffed but, if not overbaked, will fall when cool.
- Frosting: Prepare the frosting while the brownie bakes; in same saucepan, bring to boil the butter, milk and cocoa; remove from heat and stir in confectioners' sugar and vanilla; stir until smooth.
- Pour and spread over the brownie immediately after removing it from the oven; cool and refrigerate.

- In a large mixing bowl, combine the flour and the sugar.
- In heavy saucepan, combine butter, shortening, coffee or water and cocoa.
- Stir and heat to boiling.
- Pour boiling mixture over the flour and sugar in te bowl.
- Add the buttermilk, eggs baking soda and vanilla.
- Mix well, using a wooden spoon or high speed on an electric mixer.
- Pour into a well buttered 17 1/2 by 11 inch jelly roll pan.
- Bake at 400F for 20 minutes or until brownies are done in the center.
- While brownies bake, prepare the frosting.
- In a saucepan, combine the butter, cocoa and milk.
- Heat to boiling, stirring constantly.
- Remove from heat and mix in the powdered sugar and vanilla, beat until frosting is smooth.
- Pour warm frosting over brownies as soon as you take them out of the oven.
- Cool.
- Cut into 48 bars.
