ONE-SKILLET TEX MEX MAC AND CHEESE



One-Skillet Tex Mex Mac and Cheese image

An EASY recipe that's made in ONE skillet so you don't have to cook the pasta separately!! Loaded with ground beef, peppers, tomatoes, cheese, and cilantro! A family FAVORITE that feeds a crowd!!

2 tablespoons olive oil
1 large/extra-large sweet vidalia onion, diced small
1 pound lean ground beef (I used 90% lean)
1 large/extra large red bell pepper, diced small
1 cup corn (I used frozen straight from the freezer)
1 cup elbow macaroni (dry, uncooked)
1 cup water
one 14.5-ounce can diced tomatoes (do not drain)
one 8-ounce can tomato sauce
1 tablespoon cumin, plus more if desired
1 tablespoon chili powder
2 teaspoons Mexican oregano (regular oregano may be substituted)
1 teaspoon kosher salt, plus more if desired
1 teaspoon freshly ground black pepper, or to taste
pinch cayenne pepper, optional and to taste
1 to 2 cups shredded cheese (I used a Mexican shredded cheese blend)
fresh cilantro, finely minced for garnishing

Steps:

  • To a large skillet, add the olive oil, onion, beef, and cook over medium-high heat until beef is cooked through and onion is soft and translucent, about 7 minutes; crumble beef and stir frequently to ensure even cooking.
  • Add the bell pepper, corn, macaroni, water, tomatoes, tomato sauce, cumin, chili powder, oregano, salt, pepper, stir to combine.
  • Lower heat to medium low, cover, and allow mixture to simmer for about 20 minutes, or until pasta is tender and cooked through. Stir a couple times while simmering to ensure even cooking.
  • Uncover, turn off the heat, add the cheese, and stir to combine and until melted. Taste and check for seasoning balance. If necessary add more salt or seasonings (I added an additional 1 teaspoon salt and 1 teaspoon of cumin).
  • Evenly sprinkle the cilantro and serve immediately.

Kosher salt
8 ounces medium pasta shells
3 tablespoons unsalted butter
1 small onion, chopped
1 tablespoon tomato paste
1 tablespoon chili powder
8 ounces ground beef
2 tablespoons all-purpose flour
1 cup low-fat (1 percent) milk
2 1/2 cups shredded Mexican cheese blend (about 8 ounces)
2 tablespoons breadcrumbs (preferably panko)
2 scallions, thinly sliced

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 3/4 cup of the cooking water, then drain the pasta. Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add the onion and cook, stirring, until soft, about 5 minutes. Add the tomato paste and chili powder and stir until brick red, about 2 minutes. Add the beef and cook, stirring, until browned, 4 minutes. Stir in 1/2 teaspoon salt. Spread the mixture in a 3-quart flameproof baking dish. Preheat the broiler. Melt the remaining 2 tablespoons butter in a pot over medium heat. Add the flour and cook, stirring, 1 minute. Add the milk and reserved cooking water, bring to a simmer and cook, whisking, until thick, 2 minutes. Add 2 cups cheese, the cooked pasta and 3/4 teaspoon salt and stir until the cheese melts. Spread over the beef mixture. Mix the remaining 1/2 cup cheese and the breadcrumbs; sprinkle over the pasta mixture and broil until golden. Top with the scallions.

Classic macaroni and cheese gets reinvented as a hearty casserole with a layer of ground beef seasoned with peppers, onions and taco seasoning.

3 1/2 cups uncooked penne pasta (12 oz)
1 lb extra lean (at least 90%) ground beef
1 cup chopped red bell pepper
1 cup chopped poblano chiles
1 cup chopped red onion
1 package (1 oz) Old El Paso™ original taco seasoning mix
2/3 cup water
1 3/4 cups milk
3/4 cup heavy whipping cream
5 tablespoons butter
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt
1 1/2 cups shredded pepper Jack cheese (6 oz)
1 1/2 cups shredded Cheddar cheese (6 oz)
1/2 cup Progresso™ plain panko crispy bread crumbs
2 tablespoons chopped fresh cilantro

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package.
  • Meanwhile in 5-quart Dutch oven, cook beef over medium-high heat 6 to 8 minutes, stirring frequently, until brown; drain, and set aside. Add bell pepper, poblano chiles and onion to Dutch oven; cook 6 to 7 minutes, stirring frequently, until onions start to soften. Stir in beef, taco seasoning mix and water; heat to simmering. Simmer 3 to 4 minutes, stirring frequently, until slightly thickened. Transfer to medium bowl; reserve.
  • In 4-cup glass measuring cup, mix milk and cream. Return Dutch oven to low heat; melt 3 tablespoons of the butter in Dutch oven. With whisk, stir in flour and salt until smooth. Increase heat to medium-high; cook, stirring constantly, until mixture is smooth and bubbly. Gradually stir in milk mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute; reduce heat to medium. Stir in cheeses. Cook until melted, stirring occasionally. Stir pasta into cheese sauce. Remove from heat. Pour half of pasta mixture into baking dish. Top with meat mixture, then remaining pasta mixture.
  • Bake 20 to 25 minutes or until edges are bubbly.
  • Meanwhile, in 8-inch nonstick skillet, melt remaining 2 tablespoons butter over medium heat. Stir in bread crumbs; toast 4 to 5 minutes, stirring constantly, until crumbs are golden brown. Sprinkle over pasta mixture; top with cilantro.

1 (7 1/4 ounce) box kraft macaroni and cheese mix
1/4 cup milk, for the mac & cheese
4 tablespoons butter, for mac & cheese
8 ounces Hunts tomato sauce (or whichever brand you prefer)
1 lb ground beef (I prefer personally sirloin bc I don't drain after cooking)
2 cups shredded mozzarella cheese
1 pinch salt, to season beef
1 pinch pepper, to season beef

Steps:

  • Preheat Oven to 375 degrees.
  • While waiting for water to boil for mac & cheese --.
  • Cook ground beef until browned, do not drain (if Sirloin).
  • Stir in Tomato sauce w cooked beef, set aside.
  • Cook Kraft Mac & Cheese according to directions.
  • Spray a 1.5 qt dish with Pam.
  • Mix cooked Kraft Mac & Cheese and Ground Beef w Tomato mixture in dish.
  • Stir in 1 cup Mozzarella cheese & cover top w remaining cheese.
  • Put uncovered dish in preheated 375 degree oven for 25-30 minute.
  • After removing from oven, let rest for 5 min & Serve your delicious Casserole! :).

1 pound extra-lean ground beef (95% lean)
1 large onion, chopped
1-1/4 teaspoons chili powder
1 teaspoon dried oregano
1/4 teaspoon salt
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 cup fresh or frozen corn
1/2 cup water
2/3 cup uncooked elbow macaroni
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large nonstick skillet, cook and crumble beef with onion over medium-high heat until no longer pink, 5-7 minutes., Stir in seasonings, tomatoes, tomato sauce, corn and water; bring to a boil. Stir in macaroni. Reduce heat; simmer, covered, until macaroni is tender, 15-20 minutes, stirring occasionally. Sprinkle with cheese.
