1 cup Japanese shoyu (soy sauce)
1/2 cup dark brown sugar
1 cup Mirin
1/2 cup Sake

Steps:

  • Mix soy sauce, sugar, mirin, and sake together in a small saucepan. Bring mixture to a boil over medium-high heat, reduce to a simmer, and cook until thickened enough to coat a spoon, about 20 minutes. ⅔ cup mirin (Japanese sweet rice wine)
1 cup soy sauce
4 ½ teaspoons rice vinegar
1 teaspoon sesame oil
⅓ cup white sugar
7 cloves garlic, minced
1 tablespoon minced fresh ginger
1 dash red pepper flakes
black pepper to taste

Steps:

  • Bring mirin to a boil in a saucepan over high heat. Reduce heat to medium-low, and simmer for 10 minutes. Pour in soy sauce, rice vinegar, sesame oil, and sugar. Season with garlic, ginger, pepper flakes, and black pepper; simmer an additional 5 minutes. Store in a tightly sealed container in the refrigerator.

½ cup soy sauce
2 tablespoons honey
2 tablespoons rice vinegar
2 tablespoons sesame oil
2 tablespoons brown sugar
2 tablespoons sesame seeds
2 cloves minced garlic
1 (1 inch) piece fresh ginger, grated
¼ cup cold water
1 tablespoon cornstarch

Steps:

  • Stir soy sauce, honey, rice vinegar, sesame oil, brown sugar, sesame seeds, garlic, and ginger together in a small saucepan over medium-high heat.
  • Whisk cornstarch into water in a bowl; add to soy sauce mixture. Cook sauce, stirring regularly, at a simmer until thickened, 5 to 7 minutes.

1/4 cup water
1 tablespoon packed brown sugar
3 tablespoons soy sauce
1 tablespoon lemon juice
1 tablespoon vegetable oil
1/8 teaspoon coarsely ground pepper
1 clove garlic, finely chopped

Steps:

  • In shallow glass or plastic dish or resealable plastic food-storage bag, mix all ingredients.
  • Add about 1 pound boneless or 2 to 3 pounds bone-in beef, pork or chicken, turning to coat with marinade. Cover dish or seal bag and refrigerate, turning meat occasionally, at least 1 hour but no longer than 24 hours.
  • Remove meat from marinade; reserve marinade. Cook meat as desired, brushing occasionally with marinade.
  • Remaining marinade must be boiled to be served as a sauce. In 1-quart saucepan, heat marinade to boiling, stirring constantly; boil and stir 1 minute.
