TOASTED TORTILLAS WITH HERBED GOAT CHEESE

Steps:
- Preheat oven to 450° F.
- In a bowl mash together all ingredients except tortillas. On oven rack toast tortillas in middle of oven, turning them once, until just golden and crisp, about 2 minutes on each side, and cool on a rack. Spread tortillas with goat cheese mixture and cut into serving pieces.

Once you get the hang of folding them, they are a breeze to put together and something the kids can make too. Serve with sour cream and salsa.

Steps:
- Lay tortillas flat on a clean work surface. Spread refried beans down the middle third from top to bottom, leaving a 1-inch space halfway down to allow for a fold. Sprinkle cheese on top, lightly pressing into the beans.
- Fold the left side over the beans, then the right side on top, so the two sides are overlapping in the middle. Fold in half vertically so the bottom edge meets the top edge.
- Place the quesadillas into the toaster slots and set the toaster to medium heat. Toast for 1 cycle. Carefully remove quesadillas and reverse the vertical fold, so that the inside is now the outside. Return to the toaster and toast until lightly browned, about half a toasting cycle.
- Carefully remove the hot quesadillas to a plate. Cut in half at the fold to make 4 pieces.

TCT'S GONE WILD " TOASTED CHEESE TORTILLA'S "
This original TCT "toasted cheese tortilla "was something I started to eat when I lived in Las Vegas, back in the 70's. One of the Mexican restaurants near where I worked served them and a couple of us would go in and get them after work. You can use any cheese " if it melts " and any toppings. I've made these in a variety of ways, with different peppers, different salad's, and I've even use a traditional salad dressing " oil & vinegar, Italian or French " etc. and it is equally good. But for me I like the simple squeeze of fresh lemon with this dish.

Steps:
- Get a dry skillet hot, place the tortilla on it and get it slightly browned. Turn it over and sprinkle it with red pepper.
- Top with a handful of spinach.
- And then top with the cheese.
- Cover to melt the cheese, cook for 30 more seconds and turn the heat off keep it covered till the cheese has completely melted.
- Once the cheese has melted remove from the pan.
- Put some salad on the top, and squeeze some fresh lemon over the top.
- Sprinkle the salad with some salt and pepper.
