TATER TOTS(R) CASSEROLE

1 pound ground beef
1 pinch salt and ground black pepper to taste
1 (10.75 ounce) can condensed cream of mushroom soup
2 cups shredded Cheddar cheese
1 (16 ounce) package frozen tater tots

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium heat until no longer pink and completely browned, 7 to 10 minutes; season with salt and black pepper. Stir cream of mushroom soup into the cooked ground beef; pour the mixture into a 9x13-inch baking dish. Layer tater tots evenly over the ground beef mixture; top with Cheddar cheese.
  • Bake until tater tots are golden brown and hot, 30 to 45 minutes.

Never have to buy frozen store bought Tater Tots® anymore. This will be a good, more healthy recipe for kids and adults to remember their childhood favorite. Frozen-friendly! Serve immediately, garnished with parsley. Dip the tots in our famous Divine Kuizine Remoulade sauce.

2 russet potatoes, peeled
2 tablespoons chopped fresh parsley
1 tablespoon all-purpose flour
1 tablespoon salt
1 teaspoon seasoned pepper
½ teaspoon onion powder
2 cups peanut oil

Steps:

  • Place potatoes in a pot; add cold water until potatoes are covered by 1 inch. Bring to a boil; reduce heat. Simmer until potatoes are softened, about 10 minutes; drain. Cool until easily handled, 10 to 15 minutes.
  • Shred potatoes into thin strips with a box grater; drain excess water. Place shredded potato into a large mixing bowl. Stir parsley, flour, salt, seasoned pepper, and onion powder into the potatoes until combined. Shape potato mixture into potato nuggets.
  • Heat peanut oil in a deep-fryer or large stockpot to 350 degrees F (175 degrees C).
  • Place potato nuggets in the fryer, 5 to 10 at a time. Cook until golden brown and crispy, 3 to 4 minutes. Transfer to a paper towel lined plate.

I enjoyed this appetizer at Houlihan's restaurant, and had them every time I went. When the restaurant closed in my area, I was determined to recreate it at home. These might even be better than theirs! Besides baking them, I have also cooked via a grill or toaster oven set on Broil. 1 pound small fresh portobello mushrooms
4 tablespoons butter, divided
1/3 cup finely chopped onion
1 package (8 ounces) cream cheese, cubed
1/2 teaspoon seasoned salt
1/3 cup finely shredded cheddar cheese
TOPPING:
1/4 cup crushed Ritz crackers
1 tablespoon butter, melted

Steps:

  • Preheat oven to 375°. Remove stems from mushrooms and finely chop stems; set caps aside. In a large skillet, melt 2 tablespoons butter over medium heat. Add chopped stems and onion; cook and stir until tender, 4-6 minutes., Add cream cheese and seasoned salt; cook and stir until cream cheese is melted. Fill mushroom caps. Melt remaining 2 tablespoons butter. Dip bottoms of mushrooms in melted butter; place on a baking sheet. Top with cheddar cheese. For topping, combine crackers and butter; sprinkle over tops., Bake until mushrooms are tender and heated through, 12-15 minutes. Serve hot.

This is actually a recipe I have had for many years at camp when I would cook over a fire. Just recently I tried it in the oven and it worked really well, so here it is! ENJOY!

4 medium potatoes, cut into cubes
1/2 cup olive oil

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • Put potatoes, oil and soup mix in a plastic bag; close and shake until potatoes are coated.
  • Put coated potatoes in a 13x9 inch pan; bake uncovered for 40 minutes until potatoes are golden brown.
