- In a jar with a tight-fitting lid, combine the sugar, vinegar, oil, salt, paprika and garlic; shake well. Place cabbage and parsley in a large bowl. Add dressing and toss to coat. Cover and refrigerate for at least 2 hours before serving.

- In a large mixing bowl, combine the cabbage and carrots.
- In a small mixing bowl, whisk together the apple cider vinegar, olive oil, honey, salt, tarragon and black pepper.
- Pour the vinaigrette mixture over the cabbage mixture and stir well. Cover and chill for at least an hour before serving.

Tarragon vinegar gives this coleslaw a splash of anise flavor. A little fresh minced tarragon can also be added if desired.

- Finely shred the cabbage and place in a bowl. In another bowl, stir together the mayonnaise, sugar, oil, vinegar, and onion. Mix well then pour over the cabbage. Toss the cabbage to coat it thoroughly in the mayonnaise mixture. The coleslaw can be eaten immediately but it is best if it is covered and chilled for 1-3 hours before serving.
TARRAGON COLESLAW
This is my favorite cole slaw recipe. It's not as saucy as many others, and I personally like the cabbage flavor that comes through. But if you like your cole slaw wetter, then just add more mayonnaise and the other dressing ingredients in relative amounts. This recipe does need time for the flavors to blend. It can be eaten immeditely, but it's just not as good.

- Place the cabbage and carrots in a large bowl.
- In a small bowl, whisk together the mayonnaise, vinegar, tarragon, the sugar, the parsley, the celery seed, and salt and pepper to taste.
- Pour the mayonnaise mixture over the cabbage and carrots and blend well.
- Cover the bowl tightly (you can use plastic wrap) and let sit at least 6 to 8 hours or overnight in the refrigerator for the slaw to soften and the flavors to blend.

Cabbage can take lots of seasoning and lots of vinegar, so don't be bashful. - Whisk together the vinegar, salt, sugar, celery salt, pepper and garlic in a large bowl until combined. Reserve 1/4 cup of the dressing for serving. Toss the green cabbage, red cabbage and carrots in the remaining dressing until the vegetables are completely coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour and up to 3.

- Wash tarragon and pat dry. Place in a sterilized jar. Using a wooden spoon, gently bruise the tarragon. Add the vinegar. Cover and store in a cool dark place for 2-3 weeks to let flavors develop., Strain and discard tarragon. Pour into a sterilized decorative bottle. Add additional tarragon if desired. Store in a cool dark place for up to 6 months.

COPYCAT KFC COLESLAW: THE REAL THING
I am an avid collector of recipes. A young lady, a former KFC employee, was looking at my recipes one evening when she discovered this one. She told me that the recipe was close, but that I should remove the vinegar and lemon juice and replace them with tarragon vinegar. Tarragon vinegar is the secret. Note: This is one of the recipes I adopted in the Great 'Zaar Orphan Adoption of 2005. I hope you enjoy it.
