TARRAGON SANDWICH SPREAD

Spread this between a bun with cold salmon patties and a red onion (see my recipe #155183) it's better than any hamburger lol! Plan ahead this needs to chill for a minimum of 2 hours, overnight is even better! Double the recipe if desired.

Number Of Ingredients 10

1 cup mayonnaise
1/4 cup plain yogurt
1 pinch garlic powder (or to taste)
3 green onions, chopped
1 tablespoon small caper
1 tablespoon fresh lemon juice
1 teaspoon dried tarragon (or use 1 tablespoon finely chopped fresh tarragon)
2 teaspoons Dijon mustard
2 teaspoons prepared horseradish
salt and pepper

Steps:

  • In a bowl mix all ingredients.
  • cover and chill for a minimum of 2 hours before serving (better if chilled for 24 hours).

Yield 3 cups chicken salad

Number Of Ingredients 8

4 cups cooked and shredded chicken (I roasted 2.5 pounds of bone-in breasts)
1/2 cup good-quality mayonnaise (I prefer Duke's or homemade)
1/4 cup sour cream
1 tablespoon finely chopped fresh tarragon (or more to taste)
1/2 cup chopped red grapes
1/4 cup coarsely chopped pecans
Salt and pepper, to taste
Sliced whole wheat bread, for sandwiches

Steps:

  • In a medium bowl mix chicken, mayonnaise, sour cream, and tarragon until well combined. Season with salt and pepper, to taste. Fold in grapes and pecans. Chill for at least one hour. Check seasoning again and adjust, if desired. The chicken salad can be made at least 24 hours in advance. Scoop chicken salad onto a slice of bread. Top with another slice of bread. Cut off crusts, then cut sandwich into desired shape (rectangles, triangles, or rounds).

LEMON-TARRAGON CHICKEN SALAD SANDWICHES

1 1/4 pounds skinless boneless chicken breast halves (about 3)
3/4 cup finely chopped celery
1/2 cup plus 3 tablespoons mayonnaise
1/4 cup finely chopped red onion
2 tablespoons chopped fresh tarragon
2 tablespoons fresh lemon juice
1 teaspoon grated lemon peel
12 slices rye bread with seeds
2 cups thinly sliced romaine lettuce

Steps:

  • Bring large saucepan of salted water to boil. Add chicken breasts; reduce heat to medium-low, cover and simmer until chicken is just cooked through, about 12 minutes. Transfer chicken to plate; cool.
  • Mix celery, 1/2 cup mayonnaise, onion, tarragon, lemon juice, and lemon peel in large bowl to blend. Cut chicken into 1/2-inch cubes; stir into mayonnaise mixture. Season with salt and pepper. (Can be made 4 hours ahead. Cover; chill.)
  • Arrange 6 bread slices on work surface. Spread with 3 tablespoons mayonnaise. Divide salad among bread slices. Top each with lettuce and second bread slice. Cut sandwiches in half and serve.

1 package (16 ounces) imitation crabmeat, chopped
1/3 cup chopped celery
1/3 cup mayonnaise
1 tablespoon chopped green onion
2 teaspoons minced fresh tarragon
2 to 3 drops hot pepper sauce
1/8 teaspoon salt
1/8 teaspoon pepper
12 ready-to-serve fully cooked bacon strips
12 slices sourdough bread, toasted
6 lettuce leaves
6 slices tomato

Steps:

  • In a large bowl, combine crabmeat and celery. In a small bowl, combine the mayonnaise, onion, tarragon, pepper sauce, salt and pepper. Pour over crabmeat mixture and toss to coat., Cook bacon according to package directions. On six bread slices, layer with lettuce, tomato, bacon and crab mixture. Top with remaining bread.,
