3 (15 ounce) cans chili beans, drained
1 (15 ounce) can chili beans, in spicy sauce
2 (28 ounce) cans diced tomatoes with juice
1 (6 ounce) can tomato paste
1 large yellow onion, chopped
3 stalks celery, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 green chili peppers, seeded and chopped
1 tablespoon bacon bits
4 beef bouillon cubes
1/2 cup beer
1/4 cup chili powder
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons hot pepper sauce (e.g. Tabasco(TM)
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon white sugar
1 (10 1/2 ounce) bag corn chips such as Fritos corn chips (R)
1 (8 ounce) package shredded cheddar cheese

Steps:

  • Heat a large stock pot over medium-high heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
  • Pour in the chili beans, spicy chili beans, diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon, and beer. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
  • After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate, and serve the next day.
  • To serve, ladle into bowls, and top with corn chips and shredded Cheddar cheese.

1 pound dried black beans or three 15-ounce cans black beans, drained
Coarse kosher salt and freshly ground black pepper
3/4 pound hot Italian sausage, casings removed
1 pound ground beef
2 onions, chopped
5 cloves garlic, chopped
1 jalapeno pepper, cored, seeded and chopped
3 tablespoons chili powder
1 tablespoon ground cumin
Two 28-ounce cans whole tomatoes, undrained and coarsely chopped
1 1/4 cups homemade chicken stock or reduced-fat low-sodium chicken broth
2 tablespoons finely ground cornmeal
Sour cream, for serving
Chopped green onions, for serving
Hot sauce, for serving

Steps:

  • If using dried beans, sort through them to remove any small stones or debris. Place the beans in a large bowl and add water to cover. Soak overnight. Or place the beans in a large pot of water and bring to a boil over high heat. Once the beans come to a boil, remove from the heat and set aside for 1 hour. Before cooking, discard any floating beans and drain. Combine the soaked beans and fresh water to cover in a large, heavy-bottomed Dutch oven. Season with salt and pepper. Bring to a boil over medium-high heat, then decrease the heat to low. Simmer, covered, until the beans are tender, about 1 hour. Taste and adjust the seasoning with salt and black pepper. Set aside.
  • Heat a large heavy pot over medium heat. Add the sausage, beef and onions. Cook, stirring often, breaking up the meat, until no longer pink, 5 to 7 minutes. Add the garlic and jalapeno and cook until fragrant, 45 to 60 seconds. Add the chili powder, cumin, tomatoes and stock. Season with salt and black pepper. Bring to a boil over high heat then reduce the heat to simmer. Cook, stirring occasionally, until slightly thickened, about 30 minutes. Add the cornmeal and reserved cooked or canned and drained black beans and stir to combine. Cook, stirring occasionally, until thickened and the flavors have married, about 15 minutes. Taste and adjust the seasoning with salt and black pepper. Serve the chili with sour cream, green onions and hot sauce on the side.

Steps:

  • Cook ground beef and pork in a large skillet over medium-high heat until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
  • Meanwhile, heat the olive oil in a large pot over medium heat. Stir in 3/4 of the onion and all of the green pepper, habanero pepper, jalapeno pepper, and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir the drained meat into the onion mixture along with the green onion, chili beans, diced tomatoes, tomato paste, tomato sauce, beer, and water. Sprinkle with the cornmeal, then season with chili powder, cumin, garlic powder, cayenne pepper, salt, and black pepper.
  • Bring to a simmer over medium heat, then reduce heat to medium-low. Simmer at least 2 hours, stirring occasionally. Refrigerate overnight.

No more long, detailed and complicated chili recipes for me. This one is simply delicious! Yesterday we had surprise guests for a pre-season game. I couldn't find a recipe online that fit the bill so I whipped up this chili to feed a crowd and it was a hit. Super easy with canned ingredients I had in my pantry. You can adjust accordingly to feed less people or use paprika instead of chili powder for less heat. Perfect with cornbread or on hot dogs! 1 teaspoon garlic salt
4 tablespoons chili powder

2 links Italian sausage
1 large onion, chopped
1 bell pepper, chopped
3 garlic cloves, minced
8 ounces mushrooms, sliced
2 tablespoons chili powder
1 teaspoon oregano
2 tablespoons parsley, chopped
1 tablespoon hot sauce
1 (16 ounce) can whole tomatoes, undrained
1 (16 ounce) can red kidney beans, undrained
1 (6 ounce) can tomato paste
1 dark beer
2 cups shredded cheddar cheese, for garnish
1 (8 ounce) jar sliced jalapenos, for garnish

Steps:

  • The Night Before:.
  • Start out by removing the skin from the Italian sausage.
  • In a large skillet, begin to brown the sausage and ground beef.
  • Drain the meats once browned. Remove from skillet and place in a large pot.
  • In the skillet, brown the onion, pepper and mushrooms. Add garlic for the last two minutes.
  • Transfer the mixture to the large pot.
  • Add whole tomatoes and bring to a simmer over medium heat. Be sure to break the tomatoes up well.
  • Stir in chili powder, oregano, parsley, and the hot sauce. Remove from the heat and refrigerate overnight after cooling.
  • Gameday:.
  • Light the burner and sit the pot of goodness over the heat.
  • Add the kidney beans in and bring to a boil. Reduce heat to medium and begin to simmer the chili.
  • Now add the tomato paste and the dark beer. I use Newcastle, but Guinness, and Becks dark are both great in this recipe as well.
  • Simmer uncovered until the mixture reduces to desired thickness. If it stays uncovered for an extended period of time and thickens too much just add a little more beer to loosen things back up a bit.
  • Scoop into bowls and top with a few of the jalapeno slices and a sprinkle or two of cheddar.

1 tsp hot pepper sauce
1/2 tsp dried basil
1/2 tsp salt
1/2 tsp pepper
1/2 tsp cayenne pepper
1/2 tsp paprika
1 tsp white sugar
1 c tomato juice

Steps:

  • 1. Heat a large stock pot over medium heat . crumble the hamburger and sausage into the hot pan and cook until evenly browned, drain of excess grease
  • 2. add rest of ingredients and stir until well blended
  • 3. cover and simmer over low heat stirring occasionally for 2 hours. The longer it simmers the better
  • 4. remove from heat and serve in bowls with shredded cheddar cheese on top or refrigerate and serve the next day
  • 5. after cooking. may be put in a crock pot and left on low heat
  • 6. You can use 1/8 cup of apple juice instead of the beer if you wish, and you can add more Tabasco if you like it really hot

This simple chili is full of flavor and plenty spicy. It's best when made the day before, refrigerated overnight, then reheated right before the big game.

2 ½ pounds ground beef
2 tablespoons olive oil
1 large onion, chopped, divided
1 green bell pepper, chopped
1 poblano pepper, chopped
½ red bell pepper, chopped
2 jalapeno peppers, seeded and minced
1 habanero pepper, seeded and minced
3 cloves garlic, minced
2 (15 ounce) cans chili beans
1 (14.5 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
1 (8 ounce) can tomato sauce
1 cup water
3 tablespoons chopped scallions
¼ cup chili powder
1 tablespoon ground cumin
1 tablespoon salt
1 ½ teaspoons ground black pepper
1 teaspoon garlic powder
½ teaspoon ground cayenne
1 cup shredded iceberg lettuce

Steps:

  • Heat a large skillet over medium-high heat. Add ground beef; cook and stir until browned and crumbly, about 5 minutes. Drain off excess fat.
  • Heat olive oil in a large pot over medium heat. Stir in 3/4 of the onion. Add green bell pepper, poblano pepper, red bell pepper, jalapeno peppers, habanero pepper, and garlic; cook and stir until onion is soft and translucent, about 5 minutes. Stir in cooked beef, chili beans, diced tomatoes, tomato paste, tomato sauce, water, and scallions.
  • Stir chili powder, cumin, salt, black pepper, garlic powder, and cayenne into the pot. Bring chili to a simmer over medium heat. Reduce heat to medium-low; simmer, stirring occasionally, until flavors combine, about 2 hours.
  • Remove chili from heat and cool briefly, about 30 minutes. Cover and refrigerate, 8 hours to overnight.
  • Reheat chili by bringing it to a simmer over medium heat. Reduce heat to low and let chili cook slowly, stirring occasionally, for flavors to develop, 4 to 6 hours.
  • Top servings of chili with shredded lettuce and remaining 1/4 cup chopped onion.

3 cups onions, diced
6 cloves garlic, chopped
2½ lbs ground beef
4 tablespoons ground chili powder, preferably dark
1 tablespoon coarsely ground black pepper
2 tablespoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 (15-ounce) cans dark kidney beans
1 can original Rotel tomatoes
3 cups beef broth, or more as needed
salt, as needed
cornmeal, optional

Steps:

  • Heat oil in a heavy dutch oven until shimmering; add onions and cook, stirring often, until onions begin to soften. Add garlic and cook until fragrant. Add ground beef and cook, chopping into fine mince, until beef is brown and crumbly. Meanwhile, combine chili powder, black pepper, cumin, smoked paprika, and cayenne; toast in a small pan over low heat until fragrant. Add to ground beef, stir thoroughly and allow to cook for a few minutes. Stir in kidney beans, tomatoes, and beef broth; bring to a simmer. Taste and add salt as desired; will vary depending on how salty canned goods are. Cover and simmer for 2 hours, stirring from time to time, tasting and adjusting seasoning. At the end, stir in a handful of finely ground cornmeal or masa to thicken, if desired. Simmer for five minutes; serve at once. Have guests garnish as desired.

1/2 cup bulghur
1 cup water
3 cups chopped onions
3 cloves garlic, minced or pressed
2 green bell peppers, chopped
3 cups diced tomatoes or 1 (28 ounce) can no salt added diced tomatoes
1 1/2 cups cooked black beans or 1 (15 ounce) can black beans, no salt added or low sodium, rinsed and drained
3 cups cooked red kidney beans, or 2 (15 ounce) cans red kidney beans, no salt added or low sodium, rinsed and drained
2 cups fresh or frozen corn kernels
2 tablespoons chili powder
2 teaspoons ground cumin
1/4 cup chopped fresh cilantro

Steps:

  • Combine bulghur and water in a saucepan. Bring to a boil, reduce heat and simmer for 12 to 15 minutes or until tender. While bulghur cooks, heat 1/8 cup water in a large saucepan and water saute onions and garlic until almost soft, about 5 minutes. Stir in green peppers and saute an additional 3 minutes, adding more water as needed. Stir in diced tomatoes, beans, corn, chili powder and cumin. Bring to a boil, reduce heat, cover and simmer for 20 minutes. Add bulghur and simmer for an additional 5 minutes. Stir in cilantro.

1/4 tsp. cayene (more to taste)
1/4 tsp. paprika
1 can red kidney beans

  • Brown meat in large pot-drain add onion and bell pepper-saute 5 min Add all ingredients,except beans-heat to boil,reduce heat and simmer 45 min. stir in beans (add cooked pasta if you choose) Top with shredded cheddar

Everyone has their favorite chili recipes and this one is my favorite. I have never had compliments for a chili as I have with this recipe. I even got 2nd place in a chili cook-off at work with this recipe!!

2 lb ground chuck
1 lb bulk italian sausage, casings removed
1 large yellow onion, chopped
3 celery ribs, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 can(s) spicy chili beans (15 oz. cans)
2 can(s) diced tomatoes (28 oz. cans)
1 can(s) tomato paste (6 oz. can)
2 chile peppers, seeded and chopped
1 Tbsp bacon bits
4 beef bouillon, cubes
1/2 c beer
1/4 c chili powder
1 Tbsp worcestershire sauce
1 Tbsp minced garlic
1 Tbsp oregano, dried
2 tsp ground cumin
2 tsp tabasco sauce
1 tsp basil, dried
1 tsp salt
1 tsp black pepper
1 tsp ground cayenne pepper
1 tsp paprika
1 tsp granulated sugar

Steps:

  • 1. Heat a large stock pot over medium-high heat. Crumble ground chuck and sausage into hot pan; add onion, celery and bell pepper and cook until beef is evenly browned and aromatics are softened. Drain any excess grease. Pour in remaining ingredients stirring to blend well. Cover and simmer over low heat for at least 2 hours, stirring occasionally. After 2 hours, taste and adjust salt, pepper and chili powder if necessary. The longer this simmers, the better it will taste. Remove from heat and serve or refrigerate and serve the next day.
  • 2. If you wish, crush corn chips and shredded cheddar cheese over each serving! The ingredient list is long but it takes no time to pull this together and you end up with a fabulous (and huge) pot of delicious chili!! ENJOY!
