Who says tacos have to be served in a taco shell? These tacos are like open-face sandwiches you eat with a fork. And you probably have all the ingredients you need on hand!

1 pound lean ground beef
1 package (1 ounce) Old El Paso™ taco seasoning mix
1 cup Original Bisquick™ mix
1/3 cup cold water
3/4 cup shredded Cheddar cheese (3 ounces)
Sour cream, if desired
Shredded lettuce, if desired
Chopped tomato, if desired

Steps:

  • Heat oven to 450°F. Grease square pan, 8x8x2 inches. Cook beef and taco seasoning mix as directed on envelope of seasoning mix.
  • Mix Bisquick mix and cold water until soft dough forms; spread in pan. Spread beef mixture over dough.
  • Bake uncovered 25 to 30 minutes or until edges are golden brown and toothpick inserted in center comes out clean. Immediately sprinkle with cheese. Let stand 1 to 2 minutes or until cheese is melted. Serve with remaining ingredients.

1/2 cup chunky salsa
1 (1 1/4 ounce) package taco seasoning mix
1 (16 ounce) cylinder large refrigerated biscuits (8 biscuits)
1/2 cup shredded Mexican blend cheese or 1/2 cup shredded jalapeno jack cheese
salsa
sour cream

Steps:

  • Brown beef and drain off any fat.
  • Add salsa,taco seasoning and 1/2 cup water; simmer until thickened.
  • With a rolling pin, roll out each biscuit into a 6-inch wide circle.
  • Divide the beef mixture evenly among the biscuits; place filling on half the biscuit, leaving a 1/2-inch margin at the edge.
  • Sprinkle 1 Tbs cheese over filling on each biscuit.
  • Fold other half of biscuit over the filling; press the edges together and crimp with a fork to seal.
  • Bake at 375F 10-12 minutes until golden brown.
  • Serve hot. If desired serve with sour cream and additional salsa.

Steps:

  • To make the taco sauce: Place all of the sauce ingredients in a saucepan, stir well, and simmer at a very low temperature for 15 to 20 minutes. Remove from the heat and cool to room temperature. The sauce may be kept in the refrigerator for several days.
  • To make the seasoned beef: Combine all the ingredients except the meat and the water. Stir well to ensure that all the spices are thoroughly and evenly blended.
  • Crumble the ground beef into a large skillet (preferably nonstick) and stir until the meat is browned.
  • Remove the browned beef from the heat, and drain.
  • Return the beef to the pan, and add the spice mix and 3/4 to 1 cup water. Simmer on medium-low heat for 20 minutes, until most of the moisture has cooked away. Remove the pan from heat before the meat is completely dry.
  • To assemble the sandwich: Toast the buns under a broiler until they just begin to brown. This will help the bread hold together better. Scoop 1/4 of the meat onto each bottom bun. Drizzle a tablespoon of sauce over the seasoned beef and top with cheese, onion, and lettuce. Cover the sandwich with the top of the bun and serve.

  • 1. Turn oven on to 350°.2. Place chips in a plastic bag. Squeeze air out of bag before sealing closed. With your fingers, crush chips until they are in small pieces. You will need 1/2 cup crumbs. To make one sandwich, spread one slice bread with a thin layer of taco sauce. Add a slice of meat loaf. Top with a leaf of lettuce, then cover with a second slice of bread.6. Place sandwich in a plastic sandwich bag or wrap in plastic wrap and place in lunch box.Note: Make two taco loaves and eat one for dinner and use one for sandwiches later. Taco loaf can be wrapped and frozen after it is baked and cooled if you wish. It can be frozen up to 4 months.
