1 lb ground beef
1 small white onion, diced
1 tablespoon garlic, minced
2 tablespoons taco seasoning, divided
½ lb small macaroni, dry
1 cup water
2 cups beef stock
2 cups shredded white cheddar, yellow cheddar works as well
1 cup tomato, diced
green onion, diced, for garnish

Steps:

  • In a 4-quart chicken fryer, heat approximately 1 tablespoon olive oil over medium-high heat and cook the onions until they begin to soften.
  • Add garlic and stir for 30 seconds.
  • Add the ground beef and 1 tablespoon of taco seasoning. Using your spatula, break up the ground beef and stir until cooked. Drain the excess liquid from the pan.
  • Add water, beef stock, pasta, tomatoes, and 1 tablespoon of taco seasoning back to the pan. Stir to combine.
  • Cook over low heat for 15 minutes, stirring twice to keep the pasta from sticking to the bottom of the pan.
  • Increase heat to medium after 15 minutes, and stir pasta until most of the liquid is gone.
  • Turn off heat and add the shredded cheese. Stir until cheese is completely melted.
  • Top with green onions.
  • Enjoy!

  • Cook beef in a large skillet, stirring frequently, until brown; drain.

1 lb ground beef
1 (1 1/4 ounce) package taco seasoning mix
3/4 cup water
3/4 cup sour cream
1 1/2 cups cheddar cheese, shredded, divided (I like sharp cheddar, but any cheese will do)
1 cup salsa (Any is fine, I only have used green)

Steps:

  • PREHEAT oven to 400°F Prepare Dinner as directed on package. While Macaroni is cooking, brown meat; drain. Add taco seasoning mix and water to meat; simmer 5 minute.
  • STIR sour cream into prepared Dinner. Spoon half of the Dinner mixture into 8-inch square or 9-inch round baking dish; top with layers of the meat mixture, 1 cup of the cheese and remaining Dinner mixture. Cover.
  • BAKE 15 minute Top with salsa and remaining 1/2 cup cheese. Bake, uncovered, an additional 5 minute or until cheese is melted.

2 ounces shredded monterey jack cheese
1 cup crushed tortilla chips
1/2 cup sour cream (optional)

1 large vidalia sweet onion,peeled and sliced
1 medium tomato,seeded and chopped
3 green chiles,divided
1 Tbsp margarine
1/2 c all purpose flour
1 c milk
3/4 c sour cream
3 tsp crushed red pepper flakes
3 c shredded mexican cheese blend,divided
1 c cubed processed american cheese

Steps:

  • 1. Bring a large pot of lightly salted water to a boil.Place macaroni in the pot and cook for 8 to 10 minutes or until al dente;drain.
  • 2. Preheat oven to 350 degrees F.Grease a 2-quart casserole dish.Add 1 cup crushed taco shells.
  • 3. Heat a large,deep skillet over medium-high heat.Cook and stir the beef in hot skillet until browned and crumbly,5 to 7 minutes;drain and discard the grease.

1 (16 ounce) box dreamfield's elbow macaroni (or Elbow Macaroni of Your Choice)
2 lbs hamburger, Browned
1/4 cup red onion, Chopped
2 tablespoons minced garlic
2 (14 ounce) cans diced tomatoes with basil oregano and garlic (Do not Drain)
1 (10 3/4 ounce) can cream of mushroom soup (No Water , other Cream of Soup can be substituted)
0.5 (1 1/2 ounce) envelope mild taco seasoning (or make your own)
1 cup shredded cheese
2 -4 cups shredded cheddar cheese (or enough to cover casserole top)
salt and pepper (we prefer Kosher)

Steps:

  • Preheat oven to 350 degrees.
  • Cook elbow macaroni "Al dente" approx 10 minutes.
  • Brown hamburger with red onion and garlic.
  • Drain fat.

2 box kraft macaroni and cheese
8 Tbsp margarine
1 c milk
4 oz sour cream
1 lb ground beef
1/2 tsp minced garlic
1/2+ chopped onion
taco seasoning
1 c mexican blend shredded cheese

Steps:

  • 1. Brown ground beef with onion, garlic, and taco seasoning to taste. Drain.
  • 2. Meanwhile, prepare macaroni & cheese according to box directions.
  • 3. Stir in sour cream, remaining milk, and shredded cheese until smooth. Add cooked meat mixture and mix well. Add extra milk if you'd like a thinner sauce.

TACO MACARONI SOUP

My husband and I just through this soup together with ingredients we had in our refrigerator and pantry. It ended up being a delicious soup. Note: The next time I make this soup, I'm going to add some diced green bell peppers.

1 Tbsp pure canola oil
1-1/4 lb ground venison, or lean ground beef
3/4 c diced yellow onion
2 tsp jarred minced garlic
1 (1 oz.) pkg 25% less sodium taco seasoning mix
1 can(s) (46 oz.) 100% tomato juice (1 qt 14 fl oz.)
2 can(s) (14.5 oz.) each, sliced stewed tomatoes
1 can(s) (14.75 oz.) cream style sweet corn
1 can(s) (30 oz.) (1 lb 14 oz) black beans, drained and rinsed
1 c elbow macaroni
saltine crackers, to serve with soup

Steps:

  • 1. In a large stockpot over medium to medium-high heat, add the canola oil and diced onion. Sauté for about 10 minutes, or until the onion is cooked through.
  • 2. Add the jarred minced garlic, stir and cook for about 30 seconds more. Then add the ground venison or lean ground beef. Use a fork to break up the meat as it's being cooked.
  • 3. Once the meat and onion mixture looks thoroughly cooked; drain off the excess grease.
  • 4. Place the meat mixture back into the pot, then sprinkle the packet of taco seasoning mix over the cooked meat; stir thoroughly.
  • 5. Turn off stove and set the pot aside till the macaroni has been cooked. (I do add a bit of canola oil or vegetable oil to the water which I cook the macaroni. This helps to prevent the macaroni from sticking together.)
  • 6. When the macaroni is done cooking, drain the macaroni in a colander and rinse with cold water. Set aside to finish draining off the water.
  • 7. Now add the macaroni to the pot, along with the tomato juice, the stewed tomatoes, cream style sweet corn, and the drained black beans.
  • 8. Heat the soup through then pour into bowls and serve.
  • 9. Enjoy soup with saltine crackers. I enjoy mine with already buttered saltine crackers.
