"I came up with this sandwich when we wanted a light supper and didn't want to turn on the oven one summer evening," recalls Renee Rutherford of Andover, Minnesota. Tip: "Serve it for lunch, as a snack or paired with refried beans for dinner," she says.

Number Of Ingredients 9

1 package (8 ounces) cream cheese, softened
1/2 cup sour cream
1 can (4 ounces) chopped green chilies, drained
1 tablespoon taco seasoning
4 flour tortillas (10 inches), room temperature
2 medium ripe avocados, peeled and sliced
2 plum tomatoes, thinly sliced
5 green onions, sliced
1 can (4 ounces) sliced ripe olives, drained

Steps:

  • In a small bowl, combine the cream cheese, sour cream, chilies and taco seasoning. Spread about 1/2 cup over each tortilla. Top with the avocados, tomatoes, onions and olives; roll up.

These are a few of my favorite things. This is a nice and light snack, lunch, appetizer. However you slice it it's a fiesta in your mouth Ole!

8 oz cream cheese, room temperature
1/2 c sour cream
1 can(s) 4 oz. green chiles, chopped & drained
1 Tbsp taco seasoning mix
4 flour tortillas plain or flavored
2 medium avocados, peeled and pitted
2 plum tomatoes
1 can(s) 4 oz. sliced ripe black olives
1 handful of greens ( lettuce, spinach, escarole, sprouts) any green you prefer

Steps:

  • 1. In a small bowl combine cream cheese, sour cream, chiles, taco seasoning.
  • 2. Spread 1/2 c. over tortilla top with greens, avocados, tomatoes, olives and roll up. Slice on diagonal. Hold in place with tootpicks.
