These Muffins are so yummy. They actually taste like Butter tarts. I got the recipe from the LCBO magazine, I love that magazine! This recipe was from a coffee shop in Huntsville Ontario. I made 10 muffins using the 12 muffin tin pan, but they say to make 6 large. Mine turned out great.

3/4 cup granulated sugar
1/2 cup butter, cut into pieces
2 eggs, slightly beaten
1/2 cup milk
1 teaspoon vanilla
1 1/2 cups raisins
1 1/2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
2 tablespoons maple syrup

Steps:

  • Place sugar, butter, eggs, milk and vanilla in a heavy-bottom saucepan over medium heat and cook, stirring constantly, until slightly thickened and beginning to bubble. Remove from heat, and strain if necessary. Stir in raisins and let cool, uncovered in refrigerator for 10 minutes.
  • Preheat oven to 350°F.
  • Combine flour, baking powder and baking soda. Add reserved raisin mixture and mix well.
  • Fill into lightly greased large muffin tins. Bake for 15 minutes or until golden and cake tester comes out clean. Remove from oven and brush tops with maple syrup.
  • Makes 6 Texas-sized muffins.

COCONUT, SYRUP & LIME TART

225g plain flour
1 tsp icing sugar
1 tbsp caster sugar
140g cold unsalted butter , roughly cubed
1 large egg yolk
100g/4oz creamed coconut (not coconut cream) , roughly chopped
150g packet desiccated coconut
4 large egg
140g fine fresh white breadcrumb
140g golden syrup
100g black treacle
3 limes finely grated and zested, and the juice of 1 lime
2 tbsp dark rum (optional)
284ml carton double cream
icing sugar
crème fraîche or double cream

Steps:

  • Make the pastry (it's easiest in a food processor). Whizz the flour, sugars and a pinch of sea salt for a few seconds. Add the butter. Whizz for another few seconds until the mixture looks like coarse breadcrumbs.
  • Whisk the egg yolk with 2 tbsp ice-cold water in a small bowl, then pour into the flour mixture. Whizz until the pastry has collected in a ball around the spindle, then remove it and press into a fat disc. Wrap the pastry in cling film and leave to rest in the fridge for at least 30 minutes.
  • Bring the pastry back to cool room temperature and roll it out thinly on a well-floured surface. It is very short and crumbly, so work it quickly on a cold surface and patch up any tears using a little flour dabbled with a wet pastry brush. Line a loose-bottomed 25-26cm x 4cm tart tin, so it's slightly proud of the tin. Chill for at least 30 minutes.
  • Preheat the oven to 200C/gas 6/ fan 180C. Line the pastry with foil, then pour in ceramic or dried beans. Bake for 12-14 minutes, remove the foil and beans and cook for a further 5 minutes or until the pastry is no longer raw-looking but remains uncoloured. Remove from the oven and put to one side while you get the filling ready.
  • Put the creamed coconut in a heatproof bowl and add 150ml/¼ pint of boiling water. Whisk until the coconut has dissolved, then leave to cool.
  • Put the remaining ingredients, except the double cream, into a food processor and whizz to combine. (The syrup and treacle can be weighed together and are easier to pour if the cans have been warmed first. Use a plastic spatula to scrape every last jot into the processor.) Add the cooled creamed coconut and double cream and whizz again.
  • Preheat the oven to 170C/gas 3½/fan 150C. Put the tart tin on to a heavy baking sheet. Pour the filling in to reach the top of the pastry - it doesn't rise much so it won't overflow. Bake for 40-50 minutes, or until the tart is golden and set. Leave to cool for at least 15 minutes before serving warm or at room temperature. Serve dusted with icing sugar, with a jug of crème fraîche or double cream alongside.

2 tablespoons warmed golden syrup
2 tablespoons breadcrumbs
1/2 lemon, juice of

Steps:

  • Preheat oven to Gas 6/400F degrees.
  • Line a pie plate with the rolled out pastry.
  • Prick the base with a fork.
  • Mix the syrup, breadcrumbs and lemon juice.
  • Spread it over the pastry base.
  • Bake for 20 minutes.

SPICED AUTUMN WALNUT AND GOLDEN SYRUP TART-PIE



Spiced Autumn Walnut and Golden Syrup Tart-Pie image

This sticky and lightly spiced walnut tart is absolutely perfect for any autumn gathering, especially Thanksgiving, Halloween or Bonfire Night. It combines walnuts together with warm spices and a hint of orange, which are all bound together in a buttery syrup filling.......if you cannot get hold of golden syrup, you can use honey instead. Serve this pie with a dollop of cream, crème fraiche or yoghurt.

150 g plain flour
1 pinch salt
75 g butter
3 medium eggs
1 tablespoon milk
50 g demerara sugar
150 ml golden syrup or 150 ml organic honey
50 g butter, softened
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla essence
1 orange, rind of, finely grated
150 g shelled walnut halves

Steps:

  • PASTRY.
  • Sift the flour and salt into a bowl then rub the butter in until the mixture resembles fine breadcrumbs. Then stir in enough water to give a soft but not sticky dough. Cover and refrigerate for 30 minutes.
  • Roll out the pastry on a lightly floured surface then use to line a 30cm x 10cm / 12in x 4in rectangular fluted flan tin. Trim off any excess pastry then line with baking paper and beans and bake blind in a preheated oven at 200°C/400°F/Gas 6 for 10 minutes. Remove the paper and beans and cook for a further 5 minutes until lightly browned.
  • Meanwhile beat the eggs and milk together. Boil the Demerara sugar and syrup together in a saucepan for about 2-3 minutes. Stir in the butter, cinnamon, vanilla and orange rind and cool slightly. Slowly pour the syrup mixture onto the beaten eggs and milk mixture.
  • Scatter the walnuts over the pastry case and then spoon the syrup mixture over and smooth over the surface with the back of a spoon.
  • Bake in a preheated oven at 220°C/425°F/Gas 7 for 10 minutes then reduce the heat to 170°C/325°F/Gas 3 and cook for a further 40-50 minutes or until the filling is set.
  • Serve either hot or cold with a dollop of cream, creme fraiche or yoghurt.

1/2 cup milk
1/2 cup heavy cream
1 vanilla bean, or vanilla extract, to taste (approximately 1 teaspoon)
1/4 cup sugar
4 egg yolks
4 Granny Smith apples, peeled, cored and chopped
4 bananas, chopped
1/4 cup (1/2 stick) butter
1 teaspoon ground cinnamon
1 lime, juiced
1/2 cup oatmeal
1/4 cup all-purpose flour
1/4 cup sugar
1/2 cup (1 stick) unsalted butter
1 prepared 10-inch pie crust
1/2 cup maple syrup

Steps:

  • In a medium saucepan, heat the milk, heavy cream, vanilla bean or extract, and half the sugar to a simmer (just below a boil). In a small bowl whisk together the egg yolks and the rest of the sugar and temper it by adding a small amount of the heated milk mixture to the bowl while whisking constantly (known as a liaison). Now pour the liaison (egg mixture) into the milk pot, stirring constantly. You are only heating it. Do not boil. Do not cook. The idea is to avoid making scrambled eggs! Continue cooking on medium heat until the mixture begins to thicken so it will coat the back of a spoon, about 5 minutes. Remove from heat and allow to cool.
  • In a large skillet, saute the apples and bananas in the butter and add cinnamon and lime juice and stir to coat. Bring to a simmer over medium heat and allow to cook until apples are tender and caramel colored, about 20 to 25 minutes and let cool.
  • Preheat oven to 350 degrees F
  • For the crumb topping, using a wooden spoon, mix oatmeal, flour, sugar and butter until the mixture resembles bread crumbs.
  • Combine the now cooled apples with the cream, pour into the pie shell and top with oatmeal mixture. Bake until crust is completely baked and golden brown, about 15 minutes.
  • Heat maple syrup as an accompaniment, and serve.
