Xifias Souvlaki: Grilled Swordfish Kebabs With Vegetables image

Found on-line at About.com. Posted for Zaar World Tour 4. If using bamboo skewers remember to soak them for at least 30 minutes prior to grilling. Prep time includes marinating time. This would be good served with a simple orzo or rice.

1 1/2 lbs swordfish, cut in 1 1/2 inch cubes (about 12)
12 cherry tomatoes (equal to number of swordfish pieces)
12 fresh bay leaves (large, break in half, small use whole, equal in number to swordfish pieces)
1 yellow bell pepper, seeded, cut in 12 square pieces
1 onion, cut in 12 square pieces
1/2 cup olive oil
1/3 cup fresh lemon juice
1 dried bay leaf, crushed
1 teaspoon sea salt
1/4 teaspoon fresh ground pepper
2 tablespoons garlic, minced

Steps:

  • Whisk together olive oil and lemon juice until thick and creamy. Whisk in remaining marinade ingredients.
  • Place swordfish cubes in a plastic bag and pour in marinade.Mix it around to make sure all the pieces get good and covered.
  • Marinate for 2-3 hours, turning the bag occasionally.
  • To make skewers, thread on a piece of swordfish, a bay leaf (or half a large leaf), a cherry tomato, a piece of pepper and a piece of onion. Repeat order.
  • Grill over hot coals for 8-9 minutes, turning to cook evenly. Swordfish is done when juices bubble up.

1 pound skinless swordfish steak (about 1 inch thick), cut into 1-inch cubes
1 tablespoon fresh lemon juice
1/2 teaspoon dried oregano, crumbled
4 loaves 6- to 7-inch pita bread (preferably pocketless)
1 large cucumber
an 8-ounce container plain low-fat yogurt
1 1/2 teaspoons chopped fresh mint leaves
1/2 teaspoon chopped garlic, mashed to a paste with 1/2 teaspoon salt
2 medium plum tomatoes, chopped coarse
1/2 small red onion, cut into slivers
1/4 cup fresh flat-leafed parsley leaves, washed well, spun dry, and torn
four 12-inch bamboo skewers, soaked in water 1 hour

Steps:

  • Preheat oven to 200°F. Prepare grill.
  • In a bowl toss swordfish with lemon juice, oregano, and salt and pepper to taste and marinate, covered and chilled, 15 minutes.
  • Wrap pitas in foil and keep warm in oven. Peel and seed cucumber and grate coarse. Wrap cucumber in a kitchen towel and squeeze to extract liquid. In a small bowl stir together cucumber, yogurt, mint, garlic paste, and salt and pepper to taste. In another bowl combine tomatoes, onion, parsley, and salt and pepper to taste.
  • Thread fish onto skewers and grill on an oiled rack set 5 to 6 inches over glowing coals, turning once, until just cooked through, about 8 minutes. Remove fish from skewers. (Alternatively, cook fish in a heated well-seasoned ridged grill pan in same manner.)
  • Divide cucumber mixture among pitas, spreading to cover, and top with fish. Sprinkle tomato mixture over fish and roll pitas into cones, wrapping with parchment paper or foil to secure.

FOR THE FISH AND MARINADE:
1 1/2 pounds swordfish or tuna steaks (about 1 1/2-inches thick)
3 tablespoons olive oil
3 tablespoons lemon juice, fresh
3 tablespoons white wine, dry
2 cloves garlic, minced
1 tablespoon oregano, chopped, or 1 1/2 teaspoons dried
1 teaspoon lemon zest, grated
1 teaspoon salt, or more to taste
1/2 teaspoon black pepper, freshly ground
FOR THE KEBABS:
24 bay leaves
1 onion, medium, quartered
lemon wedges, for serving

Steps:

  • 1. Trim the skin, if any, off the fish steaks. Rinse the fish under cold running water, then drain and blot dry with paper towels. Cut into 1 1/2-inch cubes and set aside while you prepare the marinade.2. Combine the oil, lemon juice, wine, garlic, oregano, lemon zest, 1 teaspoon salt, and the pepper in a large nonreactive bowl and whisk until blended and the salt is dissolved. Taste for seasoning, adding salt as necessary the mixture should be highly seasoned. Add the fish and turn to coat. Let marinate, at room temperature, for 30 minutes, turning occasionally. Soak the bay leaves in a bowl of cold water for 20 minutes.3. Preheat the grill to high.4. When ready to cook, break the onion quarters into individual layers. Drain the bay leaves. Remove the fish cubes from the bowl, reserving whatever marinade is left, and thread onto the skewers, placing a piece of onion and a bay leaf between each and dividing evenly. Oil the grill grate, then arrange the kebabs on the hot grate and grill, turning with tongs, until the fish cubes are nicely browned on the outside and opaque in the center, 2 to 3 minutes per side, (8 to 12 minutes in all). As the kebabs cook, baste with any remaining marinade, but not during the last 2 minutes.5. Transfer the kebabs to serving plates or a platter and serve immediately, accompanied by lemon wedges.Serves 4

1-2lbs. Swordfish
1 cup button mushrooms
2 med. red bell peppers
10-12 sm. stewing onions
1 cup extra virgin olive oil
1/2 c. fresh lemon juice
1 tsp greek oregano, fresh or dried
1 tsp thyme, fresh or dried
1 tbsp dried parsley
1 tsp fresh rosemary, finely chopped (optional)
2-3 large cloves garlic, finely
chopped
1 tsp salt & pepper
1/4 c dry white wine (optional)

Steps:

  • cut swordfish & red bell peppers into 1 1/2" pieces. Place in glass bowl with whole button mushrooms & onions. Add remaining ingredients and mix well to coat fish & vegetables. Regridgerate overnight stirring occationaly. Soak wood skewers in cold water for about 10 mins. 1/2 hr prior to grilling. Place red pepper then mushroom, fish, onion, fish, onion, fish, mushroom & finally red pepper onto skewers. Grill on BBQ at med high heat turning every 5 mins untill swordfish is thoroughly cooked. Brush frequently with marinade while grilling.

This Greek dish was created for Culinary Quest 2016, the "Pita-Stuff It" challenge. Swordfish holds up well to marinading, skewering and grilling, and has a nice meaty texture. I served it with home made pitas and tzatziki sauce. We really enjoyed it.

12 ounces swordfish steaks, 1 inch thick, cut in 1 inch cubes
4 teaspoons all purpose Greek seasoning (I used home made salt free seasoning)
1/4 cup olive oil
1 lemon, juice of
1/2 teaspoon salt
1/4 teaspoon ground pepper
1/2 red onion, cut in 8 wedges
1 roasted red pepper, cut in 8 sections
1 garlic clove, minced

Steps:

  • Place swordfish cubes, Greek seasoning, olive oil, lemon juice and minced garlic in a zip bag and marinate for 20 minutes.
  • Divide swordfish cubes, onion wedges, and roasted red pepper sections among 8 skewers.
  • Grill swordfish skewers over direct high heat for 3 minutes per side.
  • Serve with pita bread and tzatziki sauce.
