Fried Catfish image

I like my catfish spicy, so I use a Tbsp. of cayenne. You can adjust yours to fit your tastes.

Number Of Ingredients 6

6 catfish filets
1/2 c flour
1/2 c corn meal
cayenne pepper, to taste
2 eggs, beaten
oil

Steps:

  • 1. In a shallow pan, mix flour, corn meal and cayenne pepper very well.
  • 2. Dip filets in the egg.
  • 3. Then dredge in the flour mixture to coat.
  • 4. Heat oil in a skillet or deep fryer. Use enough oil to cover the fish.
  • 5. Cook until fish is done and flakes easily, Be sure not to crowd the filets when frying.
