German Salad Dressing With Evaporated Milk Recipe image

This simple and fast Grandma's (Oma) salad dressing recipe is made with evaporated milk and can be used to dress any salad.

1 (5-ounce can) evaporated milk
2 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons white balsamic vinegar
1 to 2 tablespoons minced onion, optional

Steps:

  • Pour the 5-ounce can of evaporated milk into a small bowl. Add 2 tablespoons sugar or sugar substitute of your choice, 1/2 teaspoon salt and 1/4 teaspoon freshly ground pepper, and stir until sugar dissolves.
  • Stir in white-balsamic vinegar or white-wine vinegar and 1 to 2 tablespoons of minced onions, if using. Chill. When ready to serve, toss the dressing with torn mixed lettuce greens.

1 package (16 ounces) elbow macaroni
4 medium carrots, shredded
1 large green pepper, chopped
1 medium red onion, chopped
2 cups mayonnaise
1 can (14 ounces) sweetened condensed milk
1 cup cider vinegar
1/2 cup sugar
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cook macaroni according to package directions. Drain and rinse in cold water; drain well., In a large bowl, combine macaroni and vegetables. Whisk together remaining ingredients until smooth and sugar is dissolved; stir into macaroni mixture. Refrigerate, covered, overnight.

This is, by far, the best macaroni salad I've ever put into my mouth. It has a perfect blend of sweetness and tartness, and it is so pretty with all of the multi-colored veggies. Be ready for this to disappear before you put it on the table! I have six children, and it is all I can do to keep them from nibbling on it while I'm mixing it up!

16 ounces uncooked elbow macaroni
4 carrots, shredded
1 large red onion, chopped
½ green bell pepper, seeded and chopped
½ red bell pepper, seeded and chopped
1 cup chopped celery
2 cups mayonnaise
1 (14 ounce) can sweetened condensed milk
½ cup white sugar
½ cup white vinegar
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Rinse under cold water, and drain.
  • In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. I usually make this a day ahead of time, and stir it occasionally to blend the flavors. The macaroni will absorb some of the liquid.

This is an old favourite in New Zealand, I think most people can remember their mum making a lettuce salad and having this dressing on the side. It is printed in the Edmonds Cookbook, but I have printed my mum's recipe below (as it uses less vinegar & salt).

Number Of Ingredients 4

1 (397 g) can condensed milk
3/4 cup vinegar (we normally use malt vinegar)
1/2 teaspoon salt
1 tablespoon dry mustard (I normally use Coleman's but any similar brand will do)

Steps:

  • Put approximately 3 tablespoons of condensed milk into a small bowl.
  • Add the mustard and mix until the lumps have disappeared.
  • Then, add the rest of the condensed milk and salt (if using), and stir until combined.
  • Slowly add the vinegar. I normally add 1/4 cup, stir this through, then keep adding more vinegar to taste. You don't need to use the full 3/4 cup, it really depends on how sweet/acidic you like the dressing to be.
  • Leave in the fridge until thickened (I find this is normally about 2 hours), then use on your favourite salad.

My mother found the recipe for this salad and made it today. The addition of the sweetened condensed milk gives this salad a nice sweet flavor. It is so delicious!

1/4 - 1/2 c sugar (taste for sweetness)
1/2 c vinegar
1 can(s) sweetened condensed milk
1 carrot, shredded
1 green pepper, chopped

1 tsp salt

I know there is the Edmonds Cookbook version of this dressing but this is the one that I grew up with and its slightly different, it came from the back of the highlander condensed milk tin, I still make it today and it seems to keep indefinately in the fridge, great with everything.

  • Pour into bottles.
  • Makes approx 750ml.
