SWEET YEAST COOKIES
I was looking for a "traditional" Jewish cookie and this is what I found. I'm posting it to convert the measurements.

Steps:
- Put the yeast in a glass with 1/2 cup warm water and 2 tablespoons of sugar for 5 to 10 minutes. Put the flour in a big bowl, add the dry ingredients and mix.
- Add the yeast, half of the oil and mix for 2 minutes. Add the eggs one at a time and mix for 2 minutes. Add the rest off the water and mix for 2 minutes.
- Add rest off the oil and mix for 2 minutes. (At this stage you should get a smooth dough.).
- Cover the dough with plastic bag and over it a towel. Put aside for 1 to 1.5 hours until dough is doubled.
- Make a long sausage out of the dough and cut 3.5 cm. balls out of it.
- Roll the balls into 1.5 cm. wide - 15 cm. long strips. Connect the strips ends to form loops. If you want to get bright brown cookies glaze loops with egg yolk.
- Bake in medium heat for 40 minutes till golden brown (yolks deep brown).

- In a bowl, combine 2 cups flour, sugar, yeast and salt. In a saucepan, heat milk, butter and water to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg and remaining flour; beat until smooth. Shape into a ball. Do not knead. Cover and let rest for 10 minutes. Use for Braided Coffee Cake or Coffee Cake Ring.

This cookie recipe is so good! It is a mixture of walnuts rolled in a sweet yeast dough.

- In a large bowl, stir together flour and salt. Add shortening, 4 beaten eggs, evaporated milk, yeast and 1/4 cup sugar. Mix as much as you can in the bowl, then turn out onto a floured surface and knead until smooth, about 5 minutes. Place into an oiled bowl, cover and chill overnight.
- To make the filling: Melt margarine and stir in sugar. Mix in the cinnamon and walnuts; remove from heat and set aside to cool. When the nuts are cooled, stir in the egg and just enough of the milk to moisten the filling.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Roll out dough to 1/4 inch in thickness. Sprinkle some of the remaining sugar over the dough. Cut into small triangles about 3 inches long and 2 inches at the base. Put a teaspoon of filling at the base of the triangle and roll towards the point. Roll in sugar and place 2 inches apart onto the prepared cookie sheets.
- Bake for 10 to 15 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.
