I find this technique much easier than the stovetop pan method. You'll get beautiful, perfectly frosted nuts that are roasted evenly, with no bitter burned spots.

1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

400g mixed nut , try almonds, Brazil nuts and cashews
2 tbsp honey

Steps:

  • Heat oven to 140C/120C fan/gas 1. Mix the oil with the spices, then stir in the nuts and drizzle over half the honey. Spread over a baking sheet and cook for 10 mins.
  • Remove from the oven and drizzle over the remaining honey, then return to the oven and cook for a further 10 mins. Allow to cool completely.

Steps:

  • In a heavy skillet cook nuts in butter over moderate heat, stirring, 2 minutes. In a small bowl stir together sugars, cayenne, black pepper, and salt and sprinkle mixture over nuts. Continue to cook nuts, stirring constantly, until sugar carmelizes, about 8 minutes. Transfer nuts to a sheet of foil and cool. Break nuts apart. Nuts may be made 3 days ahead and kept in an airtight container.

1 ½ tablespoons white sugar
2 tablespoons brown sugar
1 teaspoon salt

  • Preheat oven to 300 degrees F (150 degrees C).

These are the best of all the recipes I have tried. A couple tips after the first review that I didn't bother to write. Don't pour the nuts onto a cookie sheet. Use a slotted spoon and leave the extra "sauce" in the pan. Use the times suggested, otherwise you will get burnt nuts, not tasty. You may reduce the amount of butter slightly depending on the nuts you use. I use whatever nuts I have on hand. This is a recipe that is sweet to the tongue, then lets out a long slow heat. Steps:

  • Beat egg white until stiff peaks.

  • Pour nuts into pan, spreading evenly & bake in 350 oven for about 20-25 minutes or until golden and fragrant. You will want to stir the nuts a couple of times, about every 7 minutes.

This recipe was sent to me by my #2 son. He says they are so good that it would be a shame not to share them with my Zaar buddies! The recipe only calls for walnuts, pecans and almonds, but if you are feeling a little frisky, add in some cashews and peanuts, too!! Great for serving at a picnic, giving as gifts, or just an anytime - in front of the TV type snack! Hope you enjoy!!

Number Of Ingredients 13

vegetable oil cooking spray
6 tablespoons unsalted butter (3/4 stick)
1/2 cup golden brown sugar (Packed)
1/4 cup water
1 tablespoon chili powder
1 1/2 teaspoons salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
2 cups walnut halves
2 cups pecan halves
2 cups whole almonds

Steps:

  • Preheat oven to 300 degrees F.
  • Spray large baking sheet with nonstick spray.
  • Melt butter in large nonstick skillet over medium heat.
  • Add next 8 ingredients; stir until sugar dissolves, about 1 minute.
  • Add all nuts; stir until butter mixture coats nuts thickly, about 2 minutes.
  • Spread nut mixture in single layer on prepared sheet.
  • Bake until nuts are glazed and deep brown, stirring often, about 25 minutes.
  • Cool nuts completely on sheet, stirring occasionally.
  • (Can be made 1 week ahead. Store airtight at room temperature.).
  • Makes 6 cups.
