Yield 2 cups

Number Of Ingredients 12

1/2 cup soy sauce
1/2 cup sugar
1/4 cup rice wine vinegar (white vinegar is fine)
1 Tbsp fresh grated ginger
4-6 cloves minced garlic
2 tsp of sesame oil (if heating the sauce add this at the end as heat will make this flavor weaker)
This is my basic teriyaki sauce for any marinating of meats to be stir fried later. Marinate for at least 2 hours but overnight is best.
Now to spice it up......
1/2 cup mirin (japanese sweetened sake)
zest and juice from 2 limes
3/4 cup of sweetened coconut flakes
4 oz. green curry paste

Steps:

  • I like to use a hand blender at the start of this sauce to get everything blended well. Put all ingredients but the coconut in a food processor or use a hand blender until the sugar is completely dissolved. Add coconut at the end stirring in to keep flakes intact. If you are going to cook with this sauce add the sesame oil just before serving to get the best flavor from it.

3 tbs sugar
3 tbs curry (fine)
1 chicken stock cube or vegitable stock cube
1 tbs brown sugar
1 teaspoonful fine black pepper
1 teaspoonful salt
1 tbs honey
1 small pinch oregano
about 1 - 3 tbs flour
The recipe is for 2 bowls, but you can adjust it at your needs.

Steps:

  • At first, boil 2 glasses of water in the pot and add the cube of your choice. I suggest the vegitable one for better non - meat aroma and taste. Lower heat when it's ready and add all the ingredients except for the flour. Mix them up well and after a couple of minutes add the flour quantity of your choice, while you stir fast so your flour won't clot. Let it mix up at low heat for about 10 minutes while you mix periodically. For example, personally I use 2 full tablespoons to make it a creamy dip for friesor even spaghetti. Just 1 tbs flour needed to make a sauce to accompany rice or chicken. The choice is yours and I hope you like it as much as I did the first time. Good luck and bon appétit!
