Potato Cheese Chowder image

Number Of Ingredients 9

1 pint half and half
1 cup sour cream
3 cups colby cheese, shredded
4 cups chicken stock
2 cups potato, peeled and diced small
1/2 cup green bell pepper, diced small
1/2 cup onion, diced small
1/4 cup fresh parsley, chopped
1 tablespoon butter

Steps:

  • Mix the half and half, sour cream and cheese with a fork and set aside.
  • Combine the stock, potatoes, bell pepper, onion, parsley and butter in a large soup pot and bring to a simmer for 25 minutes.
  • Slowly add the cream and cheese mixture and stir constantly until reheated. Serve topped with bacon bits.
