SWEET POTATO LYONNAISE



Sweet Potato Lyonnaise image

Lyonnaise potatoes are traditionally made with regular potatoes, but work just as well with sweet potatoes. If you have some on hand, try adding toasted chopped pecans or a dollop of Greek yogurt.

2 tablespoons olive oil
1 medium onion, halved and thinly sliced (but not too thin)
Kosher salt and freshly ground black pepper
2 medium sweet potatoes, 2 to 3 inches in diameter (about 1 1/2 pounds)
2 tablespoons unsalted butter
1/4 cup chicken broth or water

Steps:

  • Heat the oil in a large skillet or cast-iron pan over medium-high heat. Once the oil is hot, add the onions. Season with salt and pepper and cook the onions, stirring often, until softened and browned around the edges, about 5 minutes. Transfer the onions to a bowl.
  • While the onions are cooking, peel and cut the sweet potatoes into 1/4-inch slices.
  • Reduce the heat to medium and add the butter to the skillet, swirling to prevent burning. When the butter has melted, cover the bottom of the skillet with as many potato slices that will fit in one layer (this should be about half of the potatoes). Cook until the potatoes are deeply browned on one side, about 4 minutes. Remove to the bowl with the onions. Add the remaining potato slices, and then spread the cooked onions/potatoes over top. Season with salt and pepper, pour in the chicken broth and cover the skillet.
  • When the potatoes are partly tender with some resistance, about 3 minutes, use a metal spatula to flip the bottom layer to the top and continue cooking. (Don't worry; it will take 3 to 4 flips to transfer all the browned potatoes to the top.) Cook until the potatoes are tender, about 2 more minutes. Remove the lid, raising the heat to medium-high and allow the remaining liquid to evaporate, about 3 minutes.

2 medium Vidalia or other sweet onions, cut in 1-inch chunks

¼ cup amaretto liqueur
1 teaspoon dried thyme

¼ cup sliced almonds, toasted

  • Heat oven to 425 degrees F.
  • Toss first 6 ingredients in a shallow medium-sized baking dish.

My father used to make this with leftover sweet and white potatoes. He would add sliced onions to the mix. And he would fry it all up with bacon grease. But use margarine or vegetable oil for a healthier version. He would season with salt and pepper to taste. But I also like to add crushed red pepper to spice things up some. Just a good use of leftovers. Plus the sweet potatoes would actually sweeten up more when they are fried. But remember not to use high heat. Or else they will burn. Slow and easy makes it delicious!

Maple Sweet Potato Puree with Caramelized Onions image

4 large sweet potatoes, peeled and chopped into rough chunks
1/4 cup grade B maple syrup, plus 2 tablespoons
1/4 cup extra-virgin olive oil, divided in 1/2
2 teaspoons kosher salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
2 tablespoons butter
1 large Vidalia or other sweet onion, thinly sliced
Hot water

Steps:

  • Preheat oven to 375 degrees F.
  • Place sweet potatoes, 1/4 cup of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper in a large mixing bowl. Toss to evenly coat and place on sheet tray. Roast in the preheated oven for 35 to 40 minutes or until sweet potatoes are soft. Be sure to check on them after 15 minutes and stir, if needed.
  • Meanwhile, in a medium saucepan over medium-high heat, melt butter and add remaining 2 tablespoons of olive oil. Add the sliced onion, 2 tablespoons of maple syrup and season with salt and pepper, to taste. Saute until deep golden brown, about 2 minutes. Remove from the heat and set aside. Add water, 1 tablespoon at a time, if the pan becomes dry.
  • Transfer sweet potato mixture to a food processor, (may need to be done in batches) and add about a tablespoon of hot water. Pulse until just blended and then add half the caramelized onions. Pulse just a few times until desired consistency, adding more hot water for a smoother puree. Fold in remaining caramelized onions, reserving some for garnish.
  • Serve in a warm dish and garnish with the reserved caramelized onions. YUMMY!!!

2 sweet potatoes
1 tablespoon olive oil
2 red bell peppers, thinly sliced
1 sweet onion, thinly sliced
¼ cup fat-free sour cream
salt and pepper to taste

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Scrub and dry the sweet potatoes, then prick several times with a fork and place onto a baking sheet. Bake in the preheated oven until the sweet potatoes are easily pierced with a fork, 50 minutes to 1 hour.
  • Heat the oil in a large skillet over medium heat. Stir in the onion and bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. 2 onions, chopped
2 tablespoons extra virgin olive oil
2 garlic cloves, crushed
3 tomatoes, peeled and chopped
1/2 teaspoon ground ginger
2 pounds sweet potatoes, peeled
2 to 3 tablespoons chopped cilantro
Salt and black pepper

Steps:

  • In a large pan, fry the onions in the oil until soft. Add the garlic, and when the aroma rises, add the tomatoes and ginger.
  • Cut the sweet potatoes into 1-inch cubes, and put them in the pan with the cilantro. Add about 1 1/2 cups water, or enough to half-cover the potatoes, and season with salt and pepper. Cook, uncovered, for 15 minutes, until the potatoes are tender and the liquid has almost evaporated, turning the potatoes over once.
  • Serve hot or cold.
