POT-ROASTED CHICKEN WITH SWEET POTATOES AND ONIONS



Pot-Roasted Chicken With Sweet Potatoes and Onions image

I found this recipe in the Winter 2012 issue of Cooking Club. Super easy to make and a crowd pleaser.

1 (3 1/2-4 lb) cut up whole chickens
1/4 cup unsalted butter, softened
3 tablespoons chopped fresh thyme
1 teaspoon dried poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 teaspoons extra-virgin olive oil
2 large onions, cut into 1 inch wedges
4 large garlic cloves, minced
2 lbs sweet potatoes, peeled, sliced crosswise (3 to 4 potatoes)
1 tablespoon lemon juice

Steps:

  • Heat oven to 350°F Cut round of parchment paper to fit diameter of Dutch oven. With kitchen shears, remove back rib bones from breast and thigh portions of chicken, (This will make the pieces smaller and easier to fit into the pot.) Stir butter, thyme, poultry seasoning, salt and pepper in small bowl. Coat chicken with half of the butter mixture.
  • Heat Dutch oven over medium-high heat until hot. Add oil; heat until hot. Cook chicken, in batches, 5 to 7 minutes or until golden brown, turning once and adjusting heat as necessary. Remove chicken.
  • Add onions to Dutch oven; cook and stir over medium heat 1 minute. Add garlic; cook and stir 30 seconds or until fragrant. add sweet potatoes; cook and stir 1 minute. Stir in remaining butter mixture until melted; cook 1 minute. Nestle chicken in one layer in vegetables. Press parchment paper round over chicken; cover with lid.
  • Bake 50 to 60 minutes or until chicken is no longer pink in center and vegetables are tender. Remove and discard parchment paper. Remove chicken and vegetables.
  • Skim off any fat that rises to surface of sauce; bring sauce to a boil over high heat. Stir in lemon juice; boil 3 to 4 minutes or until slightly thickened. Serve chicken alongside vegetables; spoon sauce over chicken.

2 large sweet potatoes, peeled and cut in 1-inch chunks
2 medium Vidalia or other sweet onions, cut in 1-inch chunks
3 tablespoons olive oil
¼ cup amaretto liqueur
1 teaspoon dried thyme
Salt and freshly ground black pepper, to taste
¼ cup sliced almonds, toasted

Steps:

  • Heat oven to 425 degrees F.
  • Toss first 6 ingredients in a shallow medium-sized baking dish.
  • Cover; bake 30 minutes. Uncover; bake 20 minutes more. Sprinkle with almonds

4 lbs sweet potatoes, peeled and thin sliced
2 yellow onions, thinly sliced
1/3 cup butter, melted
1/3 cup maple syrup
1/4 cup brown sugar
4 teaspoons dried thyme
salt and pepper (to taste)

Steps:

  • Coat bottom and sides with 2 tablespoons melted butter.
  • Arrange sliced onions in bottom of 10" Dutch Oven.
  • Sprinkle onion layer with brown sugar, salt and pepper.
  • Layer sweet potatoe slices over onion layer.
  • Combine maple syrup, melted butter and thyme in small bowl. Pour over sweet potatoes and onions layers.
  • Put lid on dutch oven and bake using 12 briquettes bottom heat (LP=med.high) and 14 briquettes top heat for 1 hour. Potatoes and onions should be tender.

4 pounds sweet potatoes, peeled and cut into 1 1/2-inch cubes
2 medium onions, cut into eighths
1/4 cup butter or margarine, melted
1/4 cup firmly packed brown sugar
1/4 cup coarsely chopped pecans
1 teaspoon dried sage leaves

Steps:

  • Heat oven to 450°. Place sweet potatoes and onions in roasting pan or rectangular pan, 13x9x2 inches. Drizzle with butter; toss to coat.
  • Bake uncovered 25 to 30 minutes, stirring once, until almost tender. Stir in brown sugar, pecans and sage. Bake 10 to 15 minutes longer or until coated and tender.

1 1/2 lb dark-orange sweet potatoes (4 to 5 medium), peeled, cut in half lengthwise and sliced

2 (1 ounce) packages dry onion soup mix
2 pounds sweet potatoes, peeled and diced
⅓ cup vegetable oil

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a large bowl, toss the dry onion soup mix, sweet potatoes and vegetable oil until the sweet potatoes are well coated.
  • Arrange the mixture on a large baking sheet. Bake in the preheated oven 40 to 50 minutes, or until the sweet potatoes are tender.
