Two 16-ounce 8-count packages frozen sweet potato patties, preferably Bright Harvest or PictSweet Farms
1/2 cup light brown sugar
Freshly grated nutmeg, for dusting
Cinnamon sugar, for dusting
Zest of 1 lemon plus lemon wedges, for spritzing
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with nonstick aluminum foil.
  • Break the frozen patties apart and place on the prepared baking sheet. Divide the brown sugar evenly over each patty. Sprinkle with nutmeg, cinnamon sugar, lemon zest, a pinch of salt and a grind or two of black pepper. Bake until golden around the edges, 20 to 25 minutes. Serve with a spritz of lemon juice.

This recipe pairs well with any Pork Chop or Ham. I love the flavor that the sweetness gives to Chops and Ham. Hope you enjoy as well!

1 pkg frozen round sweet potato patties (16 to a package)
cinnamon
brown sugar, light
country crock butter
baking dish

Steps:

  • 1. Preheat Oven to 350° Using a glass or ceramic rectangular baking dish, butter bottom and sides of dish. (You can also use a disposable foil pan for this recipe.)
  • 2. Place Patties in dish. Make sure they are all laying flat, if possible, one might be a little off.
  • 3. Place butter on each patty as if buttering a biscuit. Sprinkle Cinnamon over each patty. Using your clean, washed, dried hand, get a handful of Brown sugar and place about a teaspoon on each patty, kinda sprinkling it on top.
  • 4. Place Patties in the oven and bake for about 45 minutes to an hour. If you want to brown them more you can place them under the broiler for about 10-15 minutes, watching them very closely. You do not want to over cook them, because the butter and brown sugar will crystallize and become very hard.
  • 5. Once done, remove from oven and your Pork Chops and beans should also be done. Ready to eat? Enjoy!

This sweet potato patties recipe is one of my favorites. I use brown rice a lot in my healthy vegan recipes. It is a rich source of lots of nutrients, and makes for a much lighter patty than a bean-based veggie burger. This recipe is simple and delicious. It allows for a lot of variation in seasoning, and can easily be made with potato rather than sweet potato for a more neutral flavor. I've kept things really simple here to focus attention on the sweet potato.

1 cup water
1 pinch sea salt
1/2 cup short grain brown rice
1/2 cup sweet potato, grated
1/2 onion, diced
1/2 cup whole grain flour
1 teaspoon olive oil

Steps:

  • Be sure to have your rice cooked & cooled before you begin. This can happen at dinner the night before, at breakfast, or an hour before dinner. As long as the rice has cooled, it will be sticky enough to make into a patty.
  • Stir together the rice, sweet potato, onion and salt in a large bowl. Allow it to sit for a few minutes, so that the salt can draw the moisture out of the potato & onion. Stir in enough flour to make the batter sticky, adding a spoonful or two of water if necessary. Form the mixture into tight balls, and squish slightly into a patty form.
  • Heat a pan on medium, then add enough oil to coat the underside of each patty. Allow them to cook for 7-10 minutes, then flip. Cook another 5-7 minutes, and serve.
  • These sweet potato brown rice patties can be served on their own, garnished with salsa and lettuce, on a bun as a burger, or many other ways. In the photo, I served them alongside some steamed kale, dressed with tamari and sesame seeds.
