One thing my family loved about living in Korea was all of the sweet potato snacks and foods. So, my family got hooked on sweet potatoes and loves finding recipes that use them. This recipe came from the cookbook "Easy Meals Vegetarian."

2 large sweet potatoes, about 500g total weight
2 garlic cloves, crushed
1 small green chili pepper, chopped
2 sprigs cilantro, chopped
1 tablespoon soy sauce or 1 tablespoon Braggs liquid aminos
all-purpose flour, for shaping
vegetable oil, for frying
sesame seeds, for sprinkling
2 teaspoons vegetable oil
1 garlic clove, chopped finely
3/4 inch gingerroot, chopped finely
3 tomatoes, skinned and chopped
2 tablespoons soy sauce or 2 tablespoons Braggs liquid aminos
1 tablespoon lime juice
2 tablespoons fresh cilantro, chopped

Steps:

  • To make the Soy & Tomato Sauce, heat the oil in a wok and stir-fry the garlic and ginger for about 1 minute.
  • Add the tomatoes and stir-fry for another 2 minutes.
  • Remove from the heat and stir in the soy sauce, lime juice, and cilantro. Set aside and keep warm.
  • Peel the sweet potatoes and grate finely (you can do this quickly with a food processor). Place the garlic, chile, and cilantro in a mortar and crush with a pestle to a smooth paste. Stir in the soy cauce with the garlic, chili, and cilantro and mix in the sweet potatoes.
  • Divide the mixture into 12 equal portions. Dip into flour and pat into a flat, round patty shape.
  • Heat a shallow pool of oil in a wide skillet. Cook the sweet potato patties over a high heat until they are golden, turning them once.
  • Drain the cooked patties on paper towels and sprinkle with sesame seeds. Serve while still hot, with a spoonful of the Soy & Tomato Sauce.

1 (300 g) orange sweet potatoes, peeled, coarsely chopped (kumara)
1 (425 g) can tuna in water, drained
2 eggs, lightly whisked
25 g dried breadcrumbs (packaged)
salt & freshly ground black pepper
1 tablespoon olive oil
4 crusty bread rolls

Steps:

  • Cook the sweet potato in a large saucepan of salted boiling water for 7-8 minutes or until tender. Drain and refresh under cold running water. Transfer to a large bowl.
  • Use a potato masher or fork to mash the sweet potato until coarsely mashed. Add the tuna, egg and breadcrumbs, and stir until well combined. Season with pepper. Divide the tuna mixture into 8 equal portions. Use wet hands to shape portions into 8cm patties.
  • Heat oil in a large non-stick frying pan over medium-high heat. Add the patties and cook for 3-4 minutes each side or until golden brown. Remove from heat. Divide among serving plates and season with salt and pepper. Serve immediately with bread rolls.

3 cloves garlic in honey (Garlic in Honey)
18 ounces sweet potatoes
1 egg, beaten
1 teaspoon soy sauce
1 1/2 teaspoons butter

Steps:

  • Peel and cut up sweet potato. Soak in water for 15 minutes.
  • In a saucepan, place sweet potato and water just to cover. Cook until sweet potato is tender. Mash while hot.
  • Grate 2 cloves of garlic. Slice 1 clove thinly.
  • In a bowl, combine mashed sweet potato, grated garlic, soy sauce and egg. Form into thick rounds and push a slice of garlic into each center.
  • Melt butter in a skillet and saute until both sides are browned.

A light cake you can find in Korea at Tous Les Jours and other bakeries. I haven't tried this recipe because I don't have an oven here, so try at your own discretion!

1 cup butter, softened
2/3 cup white sugar
2/3 cup brown sugar
3 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup cake flour
1 tablespoon baking powder
1 teaspoon kosher salt
1 1/3 cups milk
1 medium sweet potato, peeled, cubed, boiled, and mashed
1/3 cup maple syrup

Steps:

  • Cream the butter and sugars in an electric mixer until light and fully combined. Add vanilla and eggs, one at a time, incorporating completely after each addition. Let egg and butter mixture blend until very light in color, about 4 minutes on medium/high speed.
  • In a separate bowl add the flours, baking powder, and salt and whisk to combine.
  • In a large measuring cup, measure the milk, add the mashed sweet potato and maple syrup and stir to combine.
  • When the butter mixture is light and fluffy, add 1/3 of the flour mixture and mix well. Add 1/2 of the liquid ingredients and stir. Repeat with remaining flour mixture and liquid mixture, making sure to end with the dry ingredients. Make sure to scrape down the sides of the bowl when giving it a final mix.
  • Pour the batter evenly between two 9 inch round cake pans that you've buttered and floured. Tap the pans lightly on the counter to remove any air bubbles and bake in a 350 degree oven for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool cakes in their pans for 15 minutes, then turn out on to wire racks to cool completely.

3 eggs
1 cup milk
1 orange, juice of
1/3 cup vegetable oil
1 cup mashed sweet potato, from can (most so called yams are actually sweet potatoes so you can use canned yams)
3 teaspoons apple pie spice

Steps:

  • Preheat oven to 350°F (or as instructed on cake mix box).
  • Mash the sweet potatoes in a bowl.
  • Add in liquid ingredients: Milk, eggs, oil and orange juice. Mix until blended.
  • Add cake mix and apple pie spice. Mix on medium speed until smooth.
  • Pour into pan of choice. I used a bundt.
