1 teaspoon vegetable oil
2 cups sweet potatoes, unpeeled and shredded, about 1 large
1 1/2 cups yellow squash, unpeeled and shredded, about 1 large
1/4 cup onion, shredded, about half a small onion
2 egg whites
2 tablespoons fresh chives, chopped
2 tablespoons all-purpose flour
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon cilantro

Steps:

  • Heat oven to only 200°F.
  • Spray griddle or 10 inch skillet with nonstick cooking spray; add oil.
  • Heat griddle over medium heat or to 375°F.
  • Mix remaining ingredients.
  • For each pancake, spoon a scant 1/3 cup batter onto hot griddle; flatten slightly.
  • Cook about 5 minutes on each side or until golden brown.
  • Place cooked pancakes on ungreased cookie sheet, and keep warm in oven while cooking remaining pancakes.

Maple-Glazed Butternut Squash and Sweet Potatoes image

You can dress up this side as a whole meal by piling these sweet, warmly spiced vegetables into a grain bowl, putting them over quinoa, couscous or white rice, and adding a lean protein - or even another wintry vegetable like brussels sprouts. You could also throw an egg on top, finishing it with cracked black pepper. Just don't be tempted to put everything on one sheet pan. Using two allows for more air flow, which creates those crispy edges, a contrast to the soft middles.

1 small butternut squash, peeled, seeded and cut into 1-inch cubes, or 4 cups precut butternut squash (about 1 ½ to 2 pounds)
2 pounds sweet potatoes, peeled and cut into 1-inch cubes (5 cups)
2 tablespoons extra-virgin olive oil
1/4 cup maple syrup
1 teaspoon coarse kosher salt
1 teaspoon ground cinnamon
1/4 teaspoon black pepper
Zest of 1 orange

Steps:

  • Set 2 oven racks in the middle and bottom of the oven, and heat oven to 425 degrees. Line 2 rimmed half-sheet pans with parchment paper or silicone mats.
  • In a large mixing bowl, drizzle the vegetables with olive oil and maple syrup, making sure they're all evenly coated. Sprinkle with the salt, cinnamon, pepper and orange zest, and, using your hands, toss the vegetables to coat them evenly in the oil and spices.
  • Transfer to the baking sheets. Roast, switching the baking sheets on their racks and stirring the vegetables halfway through cooking, until the largest piece of squash is tender all the way through, about 30 minutes. Remove the baking sheets from the oven and turn on the broiler.
  • Take turns placing each baking sheet under the broiler for 1 to 2 minutes to caramelize the vegetables. Serve hot, warm or cold tossed in salad.

A very quick and easy side dish made from yesterday's left-over mashed potatoes. These also can be made from grating potatoes if you do not have any left-over.

2 cups shredded potatoes
1 cup shredded yellow squash
½ cup chopped onion
1 egg
4 tablespoons self-rising flour
¼ teaspoon garlic salt
salt and pepper to taste
¼ cup cooking oil

Steps:

  • In a large bowl, combine potatoes, squash, onion, egg, flour, garlic salt, salt, and pepper. If the batter is too thin, add more flour; if too thick, add milk. Form batter into 3-inch patties.
  • Cover the bottom of a large skillet with just enough oil to cover the bottom of the pan, and heat over medium-high heat. Place patties in hot oil, and cook until golden brown on each side; drain on paper towels.

1 cup grated yellow squash (or zucchini would be good too)
1 green onion, finely diced
1/2 teaspoon salt
1/2 teaspoon sugar
3 tablespoons flour
1 tablespoon melted margarine or 1 tablespoon butter
1 beaten egg
1 dash pepper

  • combine all ingredients and mix well. pour by spoonfuls onto a hot pan. fry until golden brown.

200g self-raising flour
1 tsp baking powder
1 rosemary sprig, finely chopped
1 egg
300ml milk
25g butter , melted and cooled, plus a knob extra
2 tbsp olive oil
250g butternut squash , peeled, deseeded and cut into small cubes
100g vegetarian goat's cheese , crumbled into small pieces
handful pumpkin seeds , rocket salad and onion chutney, to serve

Steps:

  • Mix the flour, baking powder, rosemary and a good pinch of salt in a large bowl. Beat the egg with the milk. Make a well in the centre of the dry ingredients and whisk in the milk mixture and melted butter to make a thick, smooth batter. Place in the fridge while you prepare the rest of the ingredients.
  • Over a medium heat, add a knob of butter and 1 tsp oil to a large pan, then add the butternut squash and cook for 10 mins until tender, turning the heat up for the final few mins to brown a little. Remove batter from the fridge, add the goat's cheese and squash, then carefully fold everything together.
  • Heat a little oil in a non-stick frying pan, then, in batches, add a ladleful of batter per pancake. Allow to cook for 3 mins until bubbles cover the surface, then flip over and cook the other side until golden. Serve with dressed rocket salad, a sprinkling of pumpkin seeds and onion chutney on the side.
